SAUSAGE AND BEAN CASSEROLE
This is not your basic pork and beans but a quick version of a classic French dish.

Steps:
- In a food processor, pulse bread until large crumbs form (you should have about 6 cups); season with salt and pepper. Set aside.
- Preheat oven to 375 degrees. In a 6-quart heavy-bottom saucepan, cook sausage, onions, and garlic, stirring occasionally, until onions are translucent and sausage is starting to brown, 15 to 20 minutes.
- Add tomato paste, broth, wine, thyme, and 2 cups water; bring to a boil. Reduce to a simmer; add beans. Simmer, stirring occasionally, until slightly thickened but still soupy, about 10 minutes.
- Stir in 2 cups of the breadcrumbs. Divide sausage mixture between two 3-quart shallow baking dishes or eight 10-ounce ramekins. Top with remaining breadcrumbs.
- Bake, on a baking sheet, until topping is golden, 30 minutes.

JK'S SAUSAGE CASSEROLE
This makes a great brunch item on Sunday. We like to use hot sausage but mild works as well.

- Preheat oven to 375 degrees F (190 degrees C).
- In a skillet, brown the sausage, drain and place in a square casserole dish. Cover top of sausage with onion slices. Cover top of onion with cheese. Place 4 slices of bread on top of the cheese. Bread should fit exactly to cover top of the dish.
- Mix eggs and milk in a bowl and slowly pour over top of bread, mixture should fill dish almost to the top.
- Bake in a preheated oven for 45 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
- Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

SAUSAGE AND BEEF CASSEROLE
I received this recipe from my mothers best friend Lucy. This is one of my favorite meals. This is a great dish for pot-lucks. It would also be great on a cold winters night. I also like to make it a day or two before it is to be eaten.

Steps:
- Heat skillet to medium heat.
- Brown sausage well, When finished put the sausage into a large casserole dish.
- Brown the stew beef and add to the sausage.
- Sauté onion and garlic till tender.
- Add green peppers cook additional minute.
- Add into meat.
- Stir-fry potatoes a little and add to meat.
- Add beans, bouillon and seasonings.
- Stir well.
- Cover and bake 350 1 hour and 15 minutes or until potatoes are tender.

A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

Steps:
- Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
- Add 1 finely chopped onion and cook gently for 5 minutes.
- Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
- Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
- Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
- Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
- Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
- Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
- Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

- Cook the rice according to the package and set aside. In a large mixing bowl combine the sausage, salsa, spices, rice, beans, diced tomatoes and the rice and mix well. Add 1 cup of cheese and combine.
- In a 9 x 13 casserole dish spray with non-stick spray. Spread the rice casserole in the dish and even it out. Sprinkle the remaining 1 cup of cheese on the casserole.
- Bake in the oven at 350 degrees F for about 15-20 minutes or until the cheese is melted and the sausage is heated through.

- Heat up olive oil on medium high heat in a casserole dish and carefully add the sausages. Brown the sausages all over until golden brown. Remove from the pan and transfer to a plate.
- Add chopped onions and garlic to the remaining oil in the pan and sauté until soft, fragrant and almost caramelised.
- Return the sausages to the pan, pour the baked beans all over it, add Worcestershire sauce, smoked paprika, salt and pepper and stir to combine. You can add about ½ cup of low sodium vegetable stock or water if you would be leaving the casserole to cook for longer than 15 minutes
- Reduce the heat and simmer for 15 minutes on low heat. Stir in chopped coriander, parsley or cilantro. Note: high heat would burn the casserole so do keep an eye.
