CHICKEN WITH SHALLOTS

Chicken with Shallots image

Provided by Ina Garten

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 8

4 boneless chicken breasts, skin on (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
3 tablespoons vegetable or canola oil
1/2 cup dry white wine
1/3 cup freshly squeezed lemon juice (3 lemons)
1/4 cup minced shallots (1 large)
3 tablespoons heavy cream
4 tablespoons (1/2 stick) unsalted butter, diced, at room temperature

Steps:

  • Preheat the oven to 425 degrees.
  • Pat the chicken breasts dry with paper towels and sprinkle them generously on both sides with salt and pepper. In a 12-inch cast-iron skillet, heat the oil over medium-high heat for 2 minutes, until it begins to smoke. Place the chicken breasts, skin side down, in the skillet and cook for 4 to 5 minutes without moving, until golden brown.
  • Using tongs, turn the chicken breasts skin side up, place the skillet in the oven, and roast for 12 to 15 minutes, until the chicken is cooked through.
  • Meanwhile, in a medium saute pan, combine the white wine, lemon juice, and shallots and cook over medium-high heat for about 5 minutes, until only 2 tablespoons of liquid remain in the pan. If it reduces too much, add an extra splash of white wine or water. Add the cream, 1 teaspoon salt, and 1/4 teaspoon pepper and bring to a full boil. Remove from the heat, add the diced butter, and swirl the pan until the butter is incorporated. Don't reheat or the sauce will "break"! Sprinkle with salt and serve the chicken hot with the sauce spooned over it.

SAUTéED CHICKEN BREASTS WITH SHALLOTS AND GARLIC

Sautéed Chicken Breasts With Shallots and Garlic image

I took the recipe from: http://www.reluctantgourmet.com/. This was the first time that I had ever made a reduction sauce. I liked the flavor of the sauce and the next time I would make extra. In terms of cooking the chicken, it was not fully cooked when it left the skillet and it finished cooking in the oven on low while I was making the sauce. I also made this dish with rice. Yummy with the sauce.

Categories     Very Low Carbs

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

4 boneless skinless chicken breasts
1 1/2 tablespoons unsalted butter
1 1/2 tablespoons olive oil (or vegetable oil)
salt and pepper
3 shallots, finely chopped
2 garlic cloves, finely chopped
1/2 cup dry white wine
1 cup homemade chicken stock
3/4 cup heavy cream

Steps:

  • Season the chicken breasts with salt and pepper on both sides.
  • Pre-heat your saute pan (frying pan) until drops of water quickly evaporate. This means the pan is at least 212°F.
  • Heat butter and oil in a heavy bottomed pan over high heat until butter stops foaming and just starts to turn a light brown.
  • Sauté the breasts until they are lightly browned on one side, approximately 3 minutes.
  • Turn breasts over and sauté for another 3 minutes, again until lightly browned. (At this point the meat should be firm to the touch.).
  • Transfer the chicken breasts to a plate, cover with aluminum foil, and keep warm in the oven or toaster oven set at low.
  • Remove the pan from the head source, and add half of the wine to deglaze the pan, stirring to dissolve the flavorful brown particles stuck to the pan.
  • Return pan to the stove and add the shallots and cook until translucent, about 2 minutes.
  • Add the garlic and cook for 1 minute, making sure the garlic doesn't burn. (It makes the dish bitter if it does).
  • Add the remaining wine and reduce (boil) until only a trace of wine is left in the pan.
  • Add the chicken stock and reduce to half the original amount, approximately 6-7 minutes.
  • Add the cream, and again reduce until the sauce is thick enough to coat a spoon.
  • Spoon sauce over cutlets and serve.

Chicken Breasts Tarragon image

Here is a dish fit for your most elegant dinner party. The chicken breasts are boned, sauteed, then poached until tender in white wine flavored with tarragon and chervil. The luscious sauce is made from the cooking liquid thickened with cream and egg yolks.

Provided by Olha7397

Categories     Chicken Breast

Time 1h

Yield 8 serving(s)

Number Of Ingredients 17

4 whole boneless chicken breasts (about 1 lb. each)
2 tablespoons salad oil or 2 tablespoons olive oil
2 tablespoons butter or 2 tablespoons margarine
6 shallots, chopped
2 pared carrots, sliced into 1/4-inch rounds
1/4 cup cognac or 1/4 cup brandy
1 cup dry white wine
1/4 cup chopped fresh tarragon
1 1/2 tablespoons chopped fresh chervil
1 teaspoon salt
1/8 teaspoon pepper
1 cup light cream
1 egg yolk
1 tablespoon flour
1/4 lb mushroom, washed, thinly sliced
2 tablespoons butter or 2 tablespoons margarine
fresh tarragon sprig

Steps:

  • Bone chicken breasts and remove skin; cut breast in half. In 6-quart Dutch oven, heat oil and 2 Tablespoons butter. Add chicken breasts (half at a time, enough to cover bottom of pan); sauté, turning on all sides, until brown. Remove chicken as it browns. Brown rest of chicken.
  • To drippings in Dutch oven, add shallot and carrot; sauté, stirring, 5 minutes, or until golden. Return chicken to Dutch oven; heat. When hot, slightly heat Cognac in ladle, and ignite. Add white wine, the chopped tarragon (or 2 teaspoons dried tarragon if you don't have fresh) and chervil (1/2 teaspoon dried chervil), salt and pepper.
  • Bring to boiling; reduce heat, and simmer gently, covered, 30 minutes. Remove chicken to heated serving platter; keep warm. Strain the drippings that is in the Dutch oven; return drippings to Dutch oven. In small bowl, combine cream, egg yolk and flour; mix well with wire whisk.
  • Stir into drippings in Dutch oven; bring just to boiling, stirring. Add more wine if sauce seems too thick. Meanwhile, sauté mushrooms in hot butter 5 minutes, until tender. Spoon sauce over chicken. Garnish with tarragon and mushrooms. Serves 8.
