3 tablespoons white sugar, or to taste
2 cups ice cubes

Steps:

  • Place cantaloupe cubes and ice into the container of a blender. Process until the ice is in small pieces. Add sugar, and puree. Pour into tall glasses and serve immediately.

Sauteed Cantaloupe With Fleur De Sel image

2 medium cantaloupes
8 tablespoons sugar
1/4 teaspoon fleur de sel, or coarse sea salt finely ground
Freshly ground black pepper

Steps:

  • Using a serrated knife, remove peel of both cantaloupes. Cut them in half lengthwise. With a spoon, gently remove seeds, being careful not to bruise the fruit.
  • Set aside one cantaloupe half. Place remaining three halves cut side down on a cutting board. Slice each half lengthwise into six spears, for a total of 18 spears. Using a vegetable peeler, shave remaining cantaloupe half into paper-thin slices, and refrigerate.
  • In a large saute pan over low heat, melt 4 tablespoons sugar until it liquefies and turns a light caramel color, about 1 1/2 minutes. Add half the cantaloupe spears, and saute for about 30 seconds on each side. Add 1/4 cup water, and simmer until water is almost gone, about 5 minutes. Transfer cantaloupe to a plate, and repeat with remaining cantaloupe spears, the remaining 4 tablespoons sugar, and an additional 1/4 cup water.
  • To serve, sprinkle spears evenly with fleur de sel. Place three spears on each of six serving plates, and garnish with the chilled paper-thin cantaloupe slices and two turns of freshly ground pepper.

1/2 cantaloupe, sliced into wedges
1 tablespoon honey
1 (1-inch) piece fresh ginger, peeled and finely grated into a small bowl
Small handful fresh mint, leaves torn

Steps:

  • Arrange cantaloupe slices on a serving platter. Drizzle with honey. Press the grated ginger firmly down into the bowl and then tilt bowl to 1 side to release juices, drizzling ginger juice over cantaloupe. Top with freshly torn mint and serve.

Just got some of the season's first cantalopes and I remembered this recipe. Been doing it so long now, not sure where it came from...probably some magazine. Cooking time includes refrigerator time.

2 cantaloupes
1 (11 ounce) can fruit cocktail or 1 (11 ounce) can any combo of cutup fruit, drained
1 (3 ounce) package of flavored gelatin powder (dark colored,like cherry)

Steps:

  • Cut about 1 inch off top of cantalopes. Scoop out seeds, discard. Using a soup sized spoon, remove a good 1/2 inch of flesh and set aside. Try to make as even as you can inside but don't worry yourself over it! The scooped out flesh can now be diced and used with the rest of the fruit.
  • Make jello according to package directions using 13/4 cup hot water.
  • Refrigerate until soft set about 11/2 hours.
  • Add fruit,stirring well.
  • Fill cantalope and place in a bowl so it sits upright. Return to refrigerator and chill until firmly set.
  • TO SERVE:.
  • Slice into 1/2 inch rings and halve the rings.
  • Arrange on platter with other fruit choices to make an attractive platter.
  • Example: if using strawberry gelatin, garnish with various fresh berries; if using lemon,lime,or orange, garnish with sliced oranges.
  • Read box instructions for what fruit NOT to use.
