Super simple and delicious side dish recipe using cherry or pear tomatoes!

1 tablespoon extra virgin olive oil
4 cups cherry or pear tomatoes ((whole or halved))
2 teaspoons granulated white sugar
1 medium garlic clove, (minced)
2 tablespoons chopped fresh basil
salt and freshly ground black pepper

Steps:

  • Heat the oil in 12-inch skillet over medium-high heat until shimmering. Add the tomatoes and sugar and cook, tossing frequently, until the tomatoes are hot, about 1 minute. Stir in the garlic and cook until fragrant, about 30 seconds.
  • Off heat, stir in the basil and season with salt and pepper to taste. Serve.

2 tablespoons olive oil, divided
2 pints cherry or grape tomatoes
Salt and pepper
2 garlic cloves, minced
1 tablespoon minced fresh basil

Steps:

  • Heat 1 Tb. olive oil in a 12-inch skillet over medium-high flame until it just starts to smoke. Add tomatoes, and season with salt and pepper. Saute, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant. Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve.

3 tablespoons olive oil
1 large garlic clove, minced
1 (12 ounce) basket cherry tomatoes, stemmed
1/4 cup toasted pine nuts
2 tablespoons fresh basil, chopped or 2 teaspoons dried crumbled basil
3/4 tablespoon red wine vinegar
3/4 tablespoon balsamic vinegar
1 pinch salt
1 dash pepper
fresh basil sprig (optional)

Steps:

  • Heat oil in large skillet over medium heat.
  • Add garlic and tomatoes and saute until tomatoes are just heated through, stirring occasionally about 5 minutes.
  • Add toasted pine nuts, basil and vinegars, stir 1 minute.
  • Season with salt and pepper.
  • Transfer tomato mixture to shallow platter.
  • Garnish with fresh basil sprig and serve.

2 tablespoons unsalted butter
1 pint cherry tomatoes, stems removed,washed and dried
1/4 teaspoon salt
1 pinch ground pepper
2 tablespoons chopped fresh basil
2 tablespoons chopped parsley
2 tablespoons thinly sliced green onions
1 1/2 teaspoons finely chopped garlic

Steps:

  • Melt 1 tablespoon of the butter in large skillet over medium heat.
  • Add cherry tomatoes, salt and pepper; saute, tossing occasionally, until some of the tomato skins just begin to split, for about 3 minutes.
  • Stir in basil, parsley, green onion and garlic.
  • Cook, stirring occasionally, 2 minutes longer.
  • Reduce heat to low.
  • Add remaining 1 tablespoon butter.
  • Cook, swirling pan, until butter is just creamy and the cherry tomatoes are coated.
  • Serve immediately.
