  • Clean livers thoroughly and remove any green streaks. Gut into pieces and sprinkle with salt, pepper, and flour. Heat butter or margarine, add livers, and cook slowly for 12-15 minutes or until livers have changed color and become tender. Serve at once with, drippings from frying/pan as gravy and garnish with chopped parsley

  • If using fresh vine leaves, stir 200ml water with 20gm salt in a saucepan over low heat to dissolve salt. Remove from heat, cool completely then pour over vine leaves in a non-reactive container, cover and refrigerate overnight to brine.
  • Bring wine and bay leaves to the boil in a saucepan large enough to hold the pears. Add pears, weight with a plate to submerge completely, reduce heat to medium and simmer until pears are just tender when pierced with the tip of a small sharp knife (12-15 minutes). Set aside to cool in poaching liquid (2-3 hours), then drain, reserving poaching liquid, and halve.
  • Meanwhile, preheat oven to 180C. Drain vine leaves, squeeze out excess brine, flatten and pat dry with paper towels. Place on a baking tray, spray with olive oil and bake until crisp (7-8 minutes).
  • Clean duck hearts by removing the top of the heart where the fat and sinew are present, and refrigerate until required.

  • Get a small frying pan screaming hot. Add about a tablespoon of grapeseed, safflower or rice bran oil (or other high smoke point oil). Heat this until it smokes, then take the pan off the heat and gently lay down the livers. As soon as they hit the hot oil, shake the pan a little so the livers do not stick. Set the pan back on the heat and sear the livers for 90 seconds. Baste the livers with the hot oil for 30 seconds and remove from the heat.
  • To serve, sprinkle some fine salt on the liver; fleur de sel is a good choice. Drizzle a little high-quality balsamic vinegar over it and serve immediately. If you can’t get the good balsamic, boil some cheaper stuff down by half so it’s syrupy.
