SAUTEED TROUT WITH LEMON CHIVE BUTTER



Sauteed Trout with Lemon Chive Butter image

5 tablespoons unsalted butter, softened and divided
1 teaspoon finely grated lemon zest
1 tablespoon freshly squeezed lemon juice
1 tablespoon finely chopped shallot
3 tablespoons finely chopped fresh chives, divided
Kosher salt and freshly cracked black pepper
4 pieces trout fillet

Steps:

  • Mix 3 tablespoons butter, the lemon zest, juice, shallots and 2 tablespoons chives until well combined. Place the butter onto a small piece of plastic wrap and, using both ends of the plastic wrap, spin it around to make a cylinder. Chill for at least 30 minutes.
  • Using needle nose tweezers, remove all the bones from the trout. Melt the remaining 2 tablespoons butter over moderate heat in a large nonstick skillet. Sprinkle the trout with salt and pepper. Place the fish skin-side down and cook until golden brown, 3 to 4 minutes. Flip and cook for another 3 minutes. Using a sharp paring knife, slide the knife into the thickest part of the fish. If you don't feel any resistance, your fish is done. Transfer the fish to serving plates, top with butter and garnish with the remaining chives.

4 rainbow trout, about 1/2 pound each, butterflied, with bones, heads and tails removed
1/4 cup milk
1/2 cup all-purpose flour for dredging
Salt and freshly ground pepper to taste
2 tablespoons olive or vegetable oil
24 orange sections with membranes removed
2 tablespoons chopped shallots
4 sprigs fresh lemon thyme, leaves only, or 1/2 teaspoon dried thyme
1 tablespoon lemon juice
3 tablespoons lemon-flavored vodka, like Absolut Citron
2 tablespoons soft butter
4 sprigs fresh basil or parsley for garnishing

Steps:

  • Place the trout in a large pan and pour in the milk. Spread the flour over a flat dish and season with salt and pepper. Remove the trout from the milk and dredge them in the flour, shaking to remove excess flour.
  • Heat the oil in a large nonstick skillet or black steel pan over high heat. Add the trout, flat side down, for about 3 minutes, or until lightly browned. Turn and saute for another 2 minutes or until fully cooked. Remove and set aside. Keep warm.
  • Pour off the excess fat from the pan. Add the orange sections, shallots and lemon thyme, and cook briefly, just to warm through. Do not brown the shallots. Stir in the lemon juice, the vodka and the soft butter. Blend well.
  • To serve, place trout, one each, on warm plates, and spoon the sauce over it. Garnish with the basil.

1 boneless Idaho trout
1/4 teaspoon diced candied orange
Small pinch ground clove
Small pinch ground cinnamon
Small pinch ground WuWei tea; Earl Grey may be substituted
Pinch fresh thyme
Salt and pepper
3 ounces melted cabbage, recipe follows
3 ounces red wine sauce, recipe follows
Chervil pluches, for garnish
1/4 head Napa cabbage (cut into medium sized pieces)
1 tablespoon cooked lardons smoked bacon
1 teaspoon brunoise carrots
1 tablespoon creme fraiche
1-ounce medium diced cooked potatoes
1 teaspoon parsley puree
Salt and pepper
1 tablespoon butter
1-ounce olive oil
1 carrot medium dice
1 medium onion, medium dice
1 celery stalk, medium dice
10 ounces red wine
1 sprig thyme
1 quart reduced veal stock
1 tablespoon WuWei

Steps:

  • In a medium saucepan bring salted water to a roiling boil; add cabbage. Cook until tender, 5 to 7 minutes. Shock in ice water and drain. In a medium size saucepan add cabbage and heat remaining ingredients together. Season and serve.;
  • Melt butter with olive oil. Add vegetables and cook for 8 minutes over high heat. Add wine, thyme and reduce by half. Add veal stock and reduce until sauce-like consistency. Steep tea in sauce for 5 minutes. Strain through chinois and serve.
  • Trout: Lightly season the inside of the trout with all the spices, herbs, tea, and orange.
  • Close the trout and lightly press on the fish. (This will help to keep the fish sealed while cooking.) Heat butter and oil in a saute pan and when smoking hot, place trout in pan.
  • Cook until golden brown on both sides, 3 to 4 minutes. Remove from pan and cut into 3 even pieces. Spoon a little of the warm cabbage salad in the middle of warm dinner plates. Arrange the pieces of trout around cabbage and spoon some of the sauce around the plate and garnish in the center with chervil. Serve.

Steps:

  • Soak the fish briefly in the milk in a flat pan such as a pie pan. In another pie pan, season the flour with salt and pepper. Remove the trout from the milk and dredge the fillets in the flour, shaking to remove excess flour. Saute? the trout in the olive oil on medium high heat in a heavy skillet, 2 to 3 minutes per side until thoroughly cooked. Remove and set aside; keep warm. Pour any excess fat from the skillet. Clean and slice the white parts of the leeks into ¼ inch rings, including only a little of the green section. Place the orange sections, the leeks, and the thyme in the skillet and toss briefly just to warm through. The leeks should not get brown. Stir in the lemon juice, vodka, and the soft butter. Reduce heat and blend well. Place the sautéd trout on warm plates and divide the sauce over the fish portions. Garnish with fresh basil or parsley.

2 whole rainbow trout, dressed,filleted,fins removed
2 green onions, tops trimmed,cut into 1 inch pieces
salt & freshly ground black pepper
1/2 cup orange juice
2 tablespoons dry vermouth or 2 tablespoons dry white wine
1/4 cup chopped fresh dill
2 tablespoons olive oil
1 (10 ounce) bag Baby Spinach
1 clove minced shallot
1 clove minced garlic

Steps:

  • Heat oven broiler.
  • Place trout fillets skin side down in a single layer in an ovenproof skillet or pan.
  • Scatter green onions over trout; season with salt and pepper to taste.
  • Pour in orange juice and vermouth; sprinkle with dill.
  • Heat over high heat to a boil.
  • Transfer skillet to broiler; cook until fish is opaque and firm to the touch, about 5 minutes.
  • Meanwhile, heat oil in a large skillet over medium heat; add shallot and garlic.
  • Cook until softened, about 2 minutes.
  • Add spinach, salt and pepper to taste.
  • Toss spinach with tongs until wilted and heated through, about 3 minutes.
  • Remove fish to two serving plates.
  • Taste sauce; reduce briefly over high heat if sauce is watery; adjust seasoning as desired.
  • Drizzle sauce around trout and spinach.

CARAMELISED ORANGE AND GINGER BUTTER TROUT

A flavouring for fish: Loch Etive Trout, Salmon or Sea Bass. This works best in my opinion with the large Loch Trout, rather than Rainbow Trout, but if using Rainbow - use the whole fish as you would with Sea Bass.

1 navel orange, zest and juice
1 1/2 inches gingerroot (fresh root)
4 tablespoons butter
1/2 teaspoon sugar
1 trout, tail fillet (Loch Etive)
1 pinch sea salt (to taste)
1 pinch black pepper, freshly ground (to taste)

Steps:

  • Grate the zest and squeeze the juice from 1 navel orange.
  • Take about a 1 ½ inch square hunk of fresh root ginger and slice it thinly and then chop it fairly finely.
  • Melt a teaspoon of the butter in a wok or pan.
  • Then put the orange zest, juice, and the chopped ginger into the wok - or pan, with the melted butter.
  • Turn the heat up, but watch and stir it carefully - so that it doesn't burn but the ginger cooks properly. About 3 to 5 minutes.
  • At the last minute, when it all looks nicely cooked add about half a teaspoon of suger, and stir that in,
  • Take off the heat as soon as the sugar has combined properly - i.e. no longer crunchy.
  • Cool the result in a plastic container in the fridge.
  • Then add about 2 to 3 tablespoons of cold butter, mix it well in and put it in the freezer to hurry the solidifying for no more than an hour, or leave overnight in the fridge if you have the time.
  • Cut 2 large slits in a tail fillet of Loch Etive Trout, then stuff the butter into the slits in the fish. Sprinkle the fish with sea salt and freshly ground black or rainbow pepper. Rainbow peppercorns are a mixture of Black Peppercorns, White Peppercorns, Pimento, Green Peppercorns and Pink Peppercorns - and makes for a milder, almost fruity taste compared to Black Peppercorns alone. (A tail fillet of Salmon or a whole small Sea Bass can replace the Trout.).
  • Cook the fish in foil in the oven at 200 degrees C for 25 to 30 minutes depending on your oven.
  • This serves 1 person as a main meal, try it served with baby leeks and baby corn cobs microwaved in lemon flavoured olive oil with wild black onion seeds and cumin seeds and salt and pepper. And maybe some noodles.
  • Or multiply the number of fish for each person and serve at a dinner party.
  • This amount of the caramelised butter will fill 4 fish.
