Who said bread pudding has to be for dessert? I love to serve this for brunch or dinner when I want something hearty and a little unusual. -Lauren Knoelke, Milwaukee, Wisconsin

Number Of Ingredients 14

1 pound bulk spicy pork sausage
1-1/2 cups chopped sweet onion (about 1 medium)
3 garlic cloves, minced
1/2 cup white wine
1 loaf sourdough bread (about 1 pound), lightly toasted and cubed
4 cups chopped fresh kale
3 cups cubed peeled butternut squash
1 cup shredded Gruyere or Swiss cheese
1 cup chicken broth
4 large eggs
1/2 cup heavy whipping cream
1 tablespoon minced fresh thyme
1 teaspoon salt
1/2 teaspoon coarsely ground pepper

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink, 6-8 minutes. Remove with a slotted spoon; drain on paper towels., In same skillet, cook and stir onion over medium-low heat until just softened, 2-3 minutes. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Cook until liquid is almost evaporated, 2-4 minutes. Transfer to a large bowl. Add sausage, bread, kale, squash, cheese and broth; toss to combine., In another bowl, whisk eggs, cream, thyme, salt and pepper until blended. Pour over bread mixture; toss to coat. Transfer to a greased 6-qt. slow cooker. Cook, covered, on low 3-4 hours or until squash is tender. Serve warm.

These dishes, known also as strata, can be rich, but they are just as satisfying when made with low-fat milk. The formula works well for any number of cooked vegetables tossed with stale bread and mixed with milk, eggs and cheese.

Number Of Ingredients 12

1 bunch kale, any type, stemmed and washed thoroughly in 2 changes of water (more if necessary)
1 tablespoon extra virgin olive oil
1/2 pound mushrooms, sliced
1 teaspoon fresh thyme leaves, coarsely chopped
1 to 2 garlic cloves (optional)
Salt and freshly ground pepper
1/2 pound stale bread, preferably whole-grain, sliced about 1 inch thick
2 ounces Gruyère cheese, grated (1/2 cup)
1 ounce Parmesan cheese, grated (1/4 cup)
Salt and freshly ground pepper
4 eggs
2 cups low-fat milk

Steps:

  • Bring a medium or large pot of water to a boil, salt generously and add the kale. Cook 2 to 3 minutes, until tender but still colorful. Transfer to a bowl of cold water, then drain and squeeze out excess water. Chop coarsely and set aside.
  • If using garlic, cut one of the garlic cloves in half and rub the slices of bread with the cut side. Then mince all of the garlic. Cut the bread into 1-inch squares.
  • Heat the oil over medium-high heat in a heavy, wide skillet and add the mushrooms. Cook, stirring often, until they begin to soften, and add the thyme, garlic and salt and pepper to taste. Continue to cook for another minute or two, until the mushrooms are tender and fragrant. Stir in the kale, toss together and remove from the heat.
  • Preheat the oven to 350 degrees. Oil or butter a 2-quart baking dish, soufflé dish or gratin. In a large bowl, combine the bread cubes, the mushrooms and kale, and the two cheeses and toss together. Transfer to the prepared baking dish.
  • Beat together the eggs and milk. Add salt to taste and a few twists of the pepper mill, and pour over the bread mixture. Let sit for 5 to 10 minutes before baking so that the bread can absorb some of the liquid.
  • Place in the oven and bake 40 to 50 minutes, until puffed and browned. Remove from the oven and serve hot or warm.

This savory, comforting entree from chef Ryan Farr takes inspiration from the dessert menu.

Number Of Ingredients 13

Unsalted butter, for baking dish
8 large eggs
8 cups 1-inch cubes country-style bread, crusts removed
2 cups thickly sliced bacon, cut crosswise into 1/2-inch pieces
1 1/2 pounds cooked Chicken, Apple, and Calvados Sausage, coarsely chopped (about 4 cups)
2 cups peeled, cored, and chopped apple, such as Granny Smith
1 cup chopped yellow onion
1 tablespoon chopped fresh sage
1 teaspoon chopped fresh thyme
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
2 cups grated Gruyere cheese
2 cups warm milk

Steps:

  • Preheat oven to 325 degrees. Butter a large, deep baking dish; set aside.
  • Whisk eggs in a large bowl for about 1 minute. Add bread cubes and toss until fully coated. Set aside.
  • In a large skillet over low heat, cook bacon until fat is rendered and meat is crispy. Add sausage and cook until it just begins to brown. Add apple, onion, sage, and thyme; season with salt and pepper. Cook, stirring, for 1 minute.
  • Transfer sausage mixture to bowl with bread; add 1 cup Gruyere. Slowly add milk, gently folding so that bread maintains its shape. Transfer bread mixture to prepared baking dish; sprinkle with remaining 1 cup Gruyere.
  • Transfer baking dish to oven and bake until golden and bubbly and internal temperature reaches 170 degrees on an instant-read thermometer, about 1 hour and 15 minutes. Remove from oven and let stand 30 to 45 minutes before serving.

1 (18-to-20 inch) baguette, torn into 1 inch pieces (10 cups)
1 pound kale, stemmed and chopped
4 shallots, sliced thin
2 garlic cloves, minced
1 teaspoon extra-virgin olive oil
3 cups heavy cream
2 cups whole milk
8 large egg yolks
1 tablespoon Dijon mustard
1 pound turkey sausage, casings removed
1/4 cup grated Parmesan cheese
2 tablespoons minced fresh chives

Steps:

  • Adjust oven rack to middle position and heat oven to 450 F. Arrange bread in even layer in 13-by-9 inch baking dish. Bake, stirring occasionally, until bread is crisp and browned, about 12 minutes; let cool for 10 minutes. Reduce oven temperature to 400 F. Meanwhile, combine kale, shallots, garlic, and oil in bowl and microwave, stirring occasionally, until kale is wilted, about 5 minutes. Wrap kale mixture in clean dish towel and wring tightly to squeeze out as much liquid as possible. Whisk cream, milk, egg yolks, and mustard together in large bowl. Stir in toasted bread and drained kale mixture until well combined. Spray now-empty baking dish with vegetable oil spray. Pour half of bread mixture into prepared dish. Crumble half of sausage into 1/2 inch pieces over top. Top with remaining bread mixture and remaining sausage. Sprinkle with Parmesan. Cover tightly with greased aluminum foil and bake for 45 minutes. Uncover and continue to bake until custard is just set and top is browned, about 20 minutes. Remove dish from oven and let cool for 10 minutes. Sprinkle with chives before serving
