BACON-WRAPPED ASPARAGUS
Easy-to-prepare appetizer. Laurita has a good idea so the asparagus does not over cook, to pre-cook bacon a little. So try my Recipe #187790 to avoid over cooking asparagus.

AIR FRYER ASPARAGUS
Asparagus is so good in the spring, and sometimes, you can find the really thick spears, like I did. This lovely side dish is ready in just a few minutes to enhance a weeknight dinner, or maybe something more special. Please be aware that different brands and sizes of air fryers may produce different results. If your asparagus is thin, reduce the cooking time.

Steps:
- Preheat the air fryer to 350 degrees F (175 degrees C) if recommended by manufacturer.
- Pat chicken pieces dry with paper towels. Use a sharp knife slice horizontally through the middle, beginning at the thickest part, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book.
- Season both sides with lemon-pepper seasoning. Place 1 slice of cheese on each chicken breast. Cut asparagus spears in half and place 4 halves on top of the cheese. Roll the chicken up and over the cheese and asparagus, keeping the stuffing inside each roll. Wrap each chicken breast with 3 pieces of bacon, using wooden toothpicks to secure the bacon, where it overlaps.
- Place each bacon-wrapped breast in the air fryer basket and air fry for 15 minutes. Turn and cook for 15 minutes more. Test chicken for doneness; an instant-read thermometer inserted into the center should reach 165 degrees F (74 degrees C).

- Wash and trim off the woody part of the asparagus spears. Tip: If you hold an asparagus spear between two fingers and bend it lightly, the asparagus will naturally bend at the part that needs to be removed. You can snap it right off. Dry the asparagus with paper towels.
- Add trimmed asparagus spears to a medium bowl. Add olive oil, garlic powder, paprika, kosher salt, freshly cracked black pepper and a pinch of red pepper flakes. Mix until the asparagus spears are coated.
- Separate the asparagus spears into 6 individual bundles. Take a piece of bacon and wrap it around each bundle.
- Place the asparagus bundles in your air fryer basket. This may need to be done in batches if you have a smaller air fryer basket. Note: Don't overcrowd the air fryer basket or the air will be unable to circulate to properly cook the asparagus.
