When I had drop-in guests, I threw some mini tart appetizers together using mushrooms I had just bought on sale. Everyone gave them rave reviews and thought I'd spent hours cooking.

1 bacon strip, chopped
1-1/2 cups chopped fresh mushrooms
3/4 cup chopped fresh shiitake mushrooms
1 tablespoon olive oil
1-1/2 teaspoons finely chopped sun-dried tomatoes (not packed in oil)
1 teaspoon minced fresh thyme
1/8 teaspoon salt
1/8 teaspoon pepper
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
1/3 cup garlic-herb spreadable cheese

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving drippings., Saute mushrooms in oil and drippings until tender. Stir in the bacon, tomatoes, thyme, salt and pepper. Fill each tart shell with a heaping teaspoonful of filling and 1/2 teaspoon spreadable cheese., Place on ungreased baking sheets. Bake at 350° for 6-8 minutes or until heated through.

If you have made the mushroom ragoût, this tart is quickly assembled. You need about 2 cups of the ragoût for the filling.

Number Of Ingredients 6

1 Whole Wheat Yeasted Olive Oil Crust (1/2 recipe)
2 cups mushroom ragoût
3 eggs
1/2 cup low-fat or whole milk (3/4 cup if using a 10-inch crust)
2 ounces Gruyère, grated (1/2 cup)
1 ounce Parmesan, grated (1/4 cup)

Steps:

  • Line a 9- or 10-inch tart pan with the dough. Using a fork, pierce at regular intervals to allow for even baking. Refrigerate or freeze until ready to prebake and fill.
  • Preheat the oven to 350 degrees. Beat together the eggs in a medium bowl. Set the tart pan on a baking sheet to allow for easy handling. Using a pastry brush, lightly brush the bottom of the crust and place in the oven for 10 minutes. Remove from the oven and set aside.
  • Whisk the milk into the eggs. Add salt and pepper, and stir in the mushrooms and cheeses. Mix together well and turn into the crust, scraping every last bit out of the bowl with a rubber spatula.
  • Place in the oven and bake 30 to 45 minutes, until set and lightly browned.

Flour, for rolling out puff pastry
1 (from a 17.3-ounce package) sheet frozen puff pastry, thawed according to package instructions
1 medium onion, halved and thinly sliced
2 tablespoons olive oil
Coarse salt and ground pepper
2 packages (10 ounces each) white mushrooms, trimmed and thinly sliced
1 package (10 ounces) fresh baby spinach
2 ounces soft goat cheese, crumbled

Steps:

  • Preheat oven to 400 degrees. On a floured surface, roll the puff pastry out to a 16-by-10-inch rectangle. Trim uneven edges. Place the pastry on a baking sheet. With a sharp knife, lightly score dough to form a 1-inch border. Using a fork, prick dough inside the border every 1/2 inch. Bake until golden, rotating pan once, about 15 minutes or until tender.
  • Meanwhile, in a small saucepan with a tight-fitting lid, toss onion with 1 tablespoon oil. Season with salt. Cover and cook over medium heat until onion begins to brown, about 5 minutes. Stir. Continue cooking with cover on for 15 minutes, stirring every 5 minutes. Set aside.
  • In a large saucepan with a tight-fitting lid, heat remaining oil. Add mushrooms; cover and cook until tender and all liquid has evaporated, about 10 minutes. Fold in spinach; season with salt and pepper. Cover and cook until wilted, about 5 minutes more. Drain any liquid.
  • Top dough with mushroom-spinach mixture. Scatter onion and goat cheese on top. Bake until cheese is lightly browned, about 15 minutes.

48 thin slices white bread, cut into 3-inch rounds
1/2 cup butter, softened, divided
3 tablespoons finely chopped green onions
1/2 pound fresh mushrooms, finely chopped
2 tablespoons all-purpose flour
1 cup heavy whipping cream
2 tablespoons minced chives
1 tablespoon minced fresh parsley
1/2 teaspoon lemon juice
1/2 teaspoon salt
Dash cayenne pepper
2 tablespoons Parmesan cheese, optional

Steps:

  • Spread one side of bread rounds with 1/4 cup butter; place buttered side up in lightly greased miniature muffin cups. Bake at 400° for 10 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks. , In a saucepan, saute onions in the remaining butter for 3 minutes. Add mushrooms; saute for 10-12 minutes or until mushroom liquid has evaporated. Remove from the heat; stir in flour and cream until blended. Bring to a boil; boil and stir for 2 minutes or until thickened. Add chives, parsley, lemon juice, salt and cayenne; mix well. Cool slightly. , Place bread cups on a baking sheet; fill with mushroom mixture. Sprinkle with Parmesan cheese if desired. Bake at 350° for 10 minutes. Broil 4 in. from the heat for 2 minutes or until lightly browned.

Number Of Ingredients 15

3/4 cup whole-wheat flour
3/4 cup unbleached all-purpose flour, plus more for dusting
1 teaspoon kosher salt
1/4 cup tahini
3 tablespoons extra-virgin olive oil
3 to 4 tablespoons ice water
2 tablespoon extra-virgin olive oil
1/2 cup finely chopped shallot
1 garlic clove, minced
1/4 teaspoon red-pepper flakes, plus more for serving
1 pound wild mushrooms, stems trimmed and caps sliced
1/2 teaspoon kosher salt
3/4 cup coarsely grated Gruyere
2 large eggs, lightly beaten
1/4 cup finely chopped fresh flat-leaf parsley leaves, plus more for serving

Steps:

  • Crust: Preheat oven to 425 degrees. In a large bowl, whisk together both flours and salt. Stir in tahini, oil, and 3 tablespoons water. Knead in bowl until a ball forms; add up to 1 tablespoon more water, if needed. Transfer dough to a lightly floured surface. Roll dough into a 12-inch round and fit it into a 9 1/2-inch tart pan with a removable bottom. Trim flush with rim. Prick bottom of dough all over with a fork. Bake, rotating pan halfway through, until crust is golden brown and crisp, about 35 minutes. Let cool on a wire rack.
  • Filling: Reduce oven temperature to 350 degrees. In a large skillet, heat oil over medium. Add shallot, garlic, and red-pepper flakes; cook, stirring, until shallot is softened, about 4 minutes. Add mushrooms and salt. Cook until mushrooms are tender and golden brown in spots, 6 to 8 minutes. Let cool slightly.
  • In a large bowl, combine cheese, eggs, parsley, and mushroom mixture. Pour filling into crust. Bake tart, rotating pan halfway through, until just set, 30 to 35 minutes. Transfer pan to a wire rack and let tart cool slightly, about 10 minutes. Top with parsley, and serve warm or at room temperature with more red-pepper flakes. (Tart can be refrigerated, covered, overnight; bring to room temperature or reheat before serving.)

1 lb mushroom, sliced
1 teaspoon finely chopped garlic
1/2 teaspoon chopped fresh thyme leave (optional)

3/4 cup alfredo sauce (Bertolli)
1 refrigerated pie crust, for 9-inch pie
1 teaspoon all-purpose flour
1 (12 ounce) jar roasted red peppers, drained and patted dry

Steps:

  • Preheat oven to 425°.
  • In a 12-inch skillet, heat olive oil over medium-high heat and cook mushrooms, garlic, thyme and salt, stirring occasionally, 10 minutes or until mushrooms are golden; drain. Stir in Alfredo sauce; set aside.
  • On baking sheet, unfold pie crust and sprinkle with flour. Evenly top with roasted peppers, leaving 1-inch border. Top with mushroom mixture, then fold crust edges 1-inch over vegetables, pressing lightly to form rim. Bake 30 minutes or until crust is golden and filling is bubbling. On wire rack, cool tart on baking sheet 5 minutes. Cut into wedges and serve warm.
