CHICKEN SOUP WITH A KICK
This is an easy chicken soup recipe that I came up with from the ingredients I had on hand. You can certainly do this on the stove top but I chose to put it in a slow cooker. I added a poblano pepper and a whole serrano pepper to give it a little kick. You could also use whatever chicken you have on hand, whole chicken, chicken breasts, thighs, etc..

Steps:
- Chop up the vegetables and put them in the crockpot.
- Add the tomatoes, with juice.
- Add the ranch dressing mix.
- Remove some of the skin of the chicken.
- Place the chicken on top of the vegetables.
- Add the serrano pepper whole and remove before serving.
- Add the water to cover.
- Cook for 6-8 hours on high.

Steps:
- Rinse chicken pieces and pat dry.
- In a large plastic bag, combine flour,salt,pepper,sage,onion powder,thyme, and garlic powder.
- In a shallow bowl, beat eggs and water together.
- Place the chicken in the bag and shake to coat evenly.
- Dip in the egg mixture and shake again in the bag.
- Fill a skillet with oil and fry the chicken for 10 minutes, turn, and fry for 8 to 10 minutes.
SAVORY CREAM OF CHICKEN SOUP
Rich and creamy homemade cream of chicken soup. I created the recipe for my husband who loves the goopy yellow stuff from a can. He said he will never be able to eat the canned stuff again! Great on a chilly night with good bread or crumpets with plenty of butter.

Steps:
- Heat oil in a large pot over medium heat. Add chicken, onion, garlic, and bacon. Cook and stir until chicken is browned on all sides, 5 to 7 minutes.
- Add stock and white wine. Lower heat and simmer for 15 minutes. Remove chicken to a plate. Strain liquid into a bowl and separate onion and bacon.
- Return onion and bacon to the pot. Add butter and melt over medium heat. When butter bubbles, whisk in flour. Cook and stir until flour takes on a little color, 3 to 4 minutes. Whisk in reserved chicken stock. Simmer for 5 minutes.
- While the soup is simmering, shred chicken with your hands.
- Remove soup from the heat and puree with an immersion blender until smooth. Whisk in cream. Stir in chicken.

- In a large resealable plastic bag, combine the buttermilk, mustard, garlic and pepper sauce. Add the chicken; seal bag and turn to coat. Refrigerate for 8 hours or overnight. Drain and discard marinade., In a large resealable plastic bag, combine the flour, paprika, baking powder, thyme, salt and pepper. Add chicken, one at a time, and shake to coat., Place chicken bone side down on a rack in a shallow baking pan. Spritz chicken with cooking spray. Bake, uncovered, at 425° for 50-60 minutes or until a thermometer reads 170°.
