SAVORY TURKEY BURGERS WITH GARLICKY MAYONNAISE

- Heat gas or charcoal grill. In small bowl, mix mayonnaise, lemon juice and garlic. Cover; refrigerate until serving time.
- In large bowl, stir turkey, oats, soy sauce, seasoning blend, onion and egg white until well mixed. Shape mixture into 4 patties, about 3/4 inch thick.
- Place patties on grill. Cook uncovered over medium heat about 15 minutes, turning once, until thermometer inserted in center of patty reads 165°F.
- Spread 1 tablespoon mayonnaise on bottom of each bun. Place burgers over mayonnaise; top with lettuce, tomatoes and top of buns.

Ok, I just tried this last night and I have to say these are the best turkey burgers I have had. Hubby is a huge fan of turkey burgers and I am not so much but these were very juicy and tender and the flavor is very good. I was disappointed with the garlicky mayo since I ran out of real garlic and had to use powder. I can only imagine how good it would have been with real garlic!

TURKEY BURGER

- Preheat the oven to 200 degrees F to keep the first batch of burgers warm.
- For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes. Turn off the heat and let cool.
- In a large mixing bowl, combine the turkey, soy sauce, sambal oelek, ginger, water chestnuts, cilantro and the cooked onions and garlic. (Reserve the onion pan to cook the burgers in later.) Add one-quarter to one-half cup water; this will help the burgers stay nice and moist. Using your hands, squish everything together until they are really well combined.
- Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
- When the burger mix is seasoned appropriately, form the mix into 4 equal size patties.
- Coat the saute pan with new olive oil and bring to a medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side. Place the cheese, if using, on the burger and cook for 1 more minute.
- Toast the buns in a broiler or toaster. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with tomato, onion and lettuce. Close up each burger, give each one a little squish and eat em' up!

TURKEY BURGERS WITH GREEN GARLIC AND PARSLEY
I'm even adding green garlic to my son's turkey burgers. The grated onion and abundance of green garlic add moisture as well as flavor to these burgers. Make sure not to press on them when you cook them, as turkey burgers can be dry - they need all the juice they've got.

- Grate the onion on the medium holes of a grater. You should have about 2 tablespoons grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, ketchup, salt and pepper.
- Trim away the stalk from the garlic and remove the papery outer layers. Chop fine. Heat the olive oil over medium heat in a small skillet and add the garlic and a generous pinch of salt. Cook, stirring, until it is tender and fragrant, about 3 minutes. Stir in the parsley, remove from the heat and add to the turkey mixture. Using a fork, mix ingredients well. Shape into 4 patties without packing too hard.
- Heat the canola, grapeseed or rice bran oil on a nonstick griddle or in a large nonstick frying pan over medium-high heat. When you can feel the heat when you hold your hand above it, cook the patties for 5 to 7 minutes on each side. Serve with the condiments of your choice.
SPICY AND SAVORY BROILED TURKEY BURGERS
These are some of my favorite turkey burgers. They begin with the beautiful trio of onion, garlic, and ginger and are accented with a wide range of spices. Most ground turkey comes in 20-ounce plastic-covered trays, so I usually just peel off the top, dump all the ingredients in, make patties, and throw away the package. No dishes to do, except for the cooking pan and utensil.

- Set an oven rack about 4 to 5 inches from the heat source and preheat the oven's broiler. Lightly spray a broiling pan with cooking spray.

- In a large bowl, combine all ingredients for the burger. Mix until just combined and set aside. If your burger mix is firm enough to hold its shape, then grilling will work. If the mix is very loose, I recommend cooking on the stovetop (unless you want to use a cast iron skillet on the grill to keep the meat from falling through).
- To grill the patties, preheat your grill to medium heat. Measure your patties into about 1/3 c portions, shape into a patty with your hands, and spray both sides with nonstick spray. Place burgers on the grill (or preheated cast iron on the grill). Cook until the internal temperature is 165 degrees F, 7-8 minutes per side. Repeat until all meat is cooked.
- To cook on the stove top, heat your pan to medium heat and pour in 1 tsp of sesame oil per burger. Portion out meat into 1/3 c patties—I recommend portioning and shaping the meat as you lay it into the pan (one at a time), rather than shaping all of them beforehand. When oil is shimmery, lay down your patties into the sesame oil and cook for 7-8 minutes per side, or until the internal temperature is 165 degrees F. Repeat until all the patties are cooked.
- To serve, enjoy with lettuce, fresh mango, avocado, and red onion, or enjoy with melted cheese on a burger!
