Savoy Slaw With Ginger Pineapple Dressing image

Number Of Ingredients 11

FOR THE DRESSING:
1 (20-ounce) can crushed pineapple in juice, undrained
2 tablespoons chopped ginger, jarred or fresh
1 1/2 to 2 teaspoons kosher salt, to taste
6 tablespoons rice wine vinegar
2 teaspoons toasted sesame oil
FOR THE SALAD:
1 (8-ounce) can sliced water chestnut, drained
2 (16-ounce) bags refrigerated coleslaw mix
2 cups shredded carrots (4 ounces)
2 ounces candied ginger (7 to 8 slices), finely diced

Steps:

  • To make the dressing, puree the dressing ingredients in a blender or food processor until smooth. Cut the water chestnut slices into thin strips. To make the salad, toss the coleslaw mix, water chestnuts, carrots, half of the candied ginger, and the dressing in a serving bowl. Allow to rest for 20 minutes before serving. 3/4 cup mayonnaise
2 tablespoons sugar
2 tablespoons cider vinegar
1 to 2 tablespoons 2% milk
4 cups shredded cabbage
3/4 cup pineapple tidbits
Paprika, optional

Steps:

  • For dressing, mix first 4 ingredients. Place cabbage and pineapple in a large bowl. Add dressing; toss to coat., Refrigerate until serving. If desired, sprinkle with paprika.
