Italian Meatloaf blends Italian sausage and ground beef with spices and cheese for a tender one dish meal. The perfect family meal!

1 cup Italian or white bread (crusts removed, cut into 1 inch cubes )
1 tablespoon milk
1/2 cup white onion (minced)
3 cloves garlic (minced)
1 teaspoon fine sea salt
1/2 pound lean ground beef
1 pound Italian sausage (casing removed, crumbled )
1 tablespoon flat leaf parsley (minced, plus more for garnish (optional) )
1 tablespoon fresh oregano (minced)
1 tablespoon Worcestershire sauce
1 egg (lightly beaten )
3/4 cup bread crumbs
1/4 cup Parmesan cheese (finely grated)
1 cup mozzarella cheese (shredded, divided )
3/4 cup marinara (divided, plus more for for serving )

Steps:

  • Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
  • In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
  • In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
  • Add crumbled ground beef and sausage, breaking into small pieces.
  • Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
  • Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
  • Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
  • Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
  • Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

An easy recipe for Italian flavored meatloaf. It has all the flavors of your favorite Italian meatballs. Makes a great entree for an Italian dinner!

2 lbs 85/15 ground beef
2 fresh garlic cloves, minced
.7 oz packet of Italian Dressing Mix (I use Good Seasonings brand)
1 cup panko bread crumbs
1/3 cup milk
2 eggs, lightly beaten
1/2 cup fresh grated parmesan cheese
24 oz jarred marinara
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 400°
  • In a large bowl, with clean hands, lightly mix together the 2 lbs ground beef, 2 minced garlic cloves, .7 oz packet of Italian Dressing Mix, 1 cup panko bread crumbs, 1/3 cup milk, 2 lightly beaten eggs, 1/2 cup parmesan cheese. Do not overmix the meatloaf mixture or it will have a tough texture.
  • In a 9x13 glass casserole pan pour about 1/2 cup marinara sauce onto the bottom of the pan. Dump the Italian meatloaf mixture out into the pan and shape into a meatloaf, about 2 1/2 inch tall, 6 inches wide and about 11 inches long (roughly)
  • Pour the rest of the jarred marinara over the meatloaf. Cover the pan with foil and bake for 1 hour 15 minutes.
  • Remove the foil and sprinkle with mozzarella cheese, bake uncovered for another 10 minutes. The center of the meatloaf should read 165 degrees with an instant thermometer.
  • Let cool for about 5 minutes and then slice and serve!

MOM'S CLASSIC MEATLOAF

So tender and melt in your mouth! This classic meatloaf recipe lends an extra layer of flavor by sautéing the onions and celery with the herbs. My family loves this so much that I ALWAYS make a double batch to use the leftovers for meatloaf sandwiches.

1 tbsp olive oil
1 med brown onion (*diced, about 2 cups)
2-3 celery stalks (*diced, about 2 cups )
1/2 tsp thyme
1 tsp marjoram
1 1/3 lb lean ground beef (* 1 1/2 lbs works well also)
4 cloves garlic (*minced or crushed, about 2 tbsp)
1 1/2 cups old fashioned rolled oats (*use gluten-free to make gluten-free version)
1 large egg
2 tbsp Worcestershire sauce (*use gluten-free to make gluten-free version)
1/4 cup Ketchup
1 tbsp tomato paste
1/4 cup Ketchup (*set aside until just ready to bake)

Steps:

  • Place a medium sized skillet over med/high heat. Add oil and diced onion. Sauté until sweating, about 3-4 mins. Add diced celery and continue sautéing until celery starts to become tender, about 5 mins. Add herbs the last 2 mins of sautéing. This step helps to release the oils in the herbs, making them fragrant and helping to marry the flavors. Once sautéing is completed place onion/celery mixture into large mixing bowl and let cool to a mild warmth. This will take about 5-7 mins.
  • Preheat oven to 350℉. Line a large sided cookie sheet with parchment paper and set aside.
  • Add remaining ingredients to large mixing bowl with the exception of 1/4 cup ketchup for topping.With clean hands mix until evenly combined. Form into a log and place on cookie with parchment paper.Evenly spread remaining ketchup over top of form meatloaf and bake for 45- 50 mins.
  • Tastes wonderful with a garden salad, Baked Potatoes and Best Ever Biscuits.

  • In a large bowl, add the meats, onion and peppers along with all remaining ingredients reserving 3/4 C. mozzarella cheese for topping.
  • Now, dive in there with the best tools God gave you, your hands and combine everything really good. Once it has all come together, place and mold the mixture in a baking dish of your choice. I used my oval Portuguese stoneware for ours.
  • Spoon 1/2 to 3/4 C. of the marinara sauce on top and spread around. Place in a 400 degree oven for 50 minutes. Remove from the oven and top with the remaining cheese and sprinkle a little dry basil over the top.
