Scalloped potatoes with caramelized onion and ham is a comforting dish. Thinly sliced potatoes are cooked in a mix of milk and cream with a touch of nutmeg.

1 onion (caramelized)
3 garlic cloves (minced)
1 cup ham (cubed)
4 pounds potatoes (15 potatoes medium size)
300 ml milk
300 ml heavy cream
salt (to taste)
nutmeg (to taste)
1/2 to 1 cup cheese (depending how cheesy you want it)

Steps:

  • Preheat the oven at 350C.
  • In a hot pan, pour some olive oil and cook the sliced onion for 40 minutes on low until caramelized. Set aside.
  • In a hot pan, char the cubed ham for 3-4 minutes. Set aside.
  • In a rectangular baking dish (12 x 16), spread the caramelized onion and ham.
  • Peel the potatoes, rince them and slice them thinly with a sharp nice or a mandoline.
  • Place the potatoes in rows and layers until you all of it are used.
  • In a bowl, pour the milk and cream. Add salt, pepper and nutmeg to taste. Stir.
  • Pour over the potatoes. Sprinkle the cheese.
  • Place the dish in the oven and cook for 40 minutes.
  • Put a knife though the potatoes to make sure it's cooked. It's ready!

6 tablespoons butter, divided
1/4 cup all-purpose flour
1 teaspoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
3 cups 2% milk
6 cups thinly sliced peeled potatoes
1-1/2 cups chopped fully cooked ham
1 small onion, grated

Steps:

  • Preheat oven to 375°. In a large saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, parsley, salt, thyme and pepper until smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes. , Combine potatoes, ham and onion; place half in a greased 2-1/2-qt. baking dish. Top with half of the sauce; repeat layers. , Cover and bake until potatoes are almost tender, 65-75 minutes. Dot with remaining 2 tablespoons butter. Bake, uncovered, until potatoes are tender, 15-20 minutes.

4 cups peeled and sliced potatoes
2 cups diced ham
½ onion, chopped
2 cups milk
1 cup frozen peas
3 tablespoons all-purpose flour
2 tablespoons butter
½ teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
1 teaspoon dried parsley
¼ pound Cheddar cheese, diced
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer half the potatoes, half the ham, and half the onion in an 2-quart baking dish; repeat the layers.
  • Heat milk, peas, flour, butter, salt, black pepper, garlic powder, and onion powder in a saucepan over medium heat, stirring constantly, until thickened, 7 to 10 minutes.
  • Stir Cheddar cheese into sauce until cheese is melted.
  • Pour sauce over potato and ham mixture; sprinkle with paprika.
  • Cover baking dish with aluminum foil.
  • Bake in the preheated oven until potatoes are tender, about 1 hour.
  • Remove foil and continue baking until lightly browned, about 15 minutes more.

2 medium onions, thinly sliced
4 large russet potatoes, peeled and thinly sliced
12 ounces 1/4-inch sliced baked ham
2 cups grated Cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Butter a baking dish.
  • In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.

1 1/2 large shallots, peeled, thinly sliced
4 lbs medium russet potatoes
1 tablespoon fresh thyme leave
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups heavy cream or 2 cups half-and-half
1 cup shredded gruyere cheese

Steps:

  • Melt 3 tbsp of the butter in a large nonstick skillet over medium-low heat; add shallots. Cook, stiffing frequently, 25 to 30 minutes, or until golden and tender.
  • Heat oven to 375°F; grease a 3-quart casserole with remaining 1 tbsp of the butter.
  • Thinly slice peeled potatoes.
  • Place potatoes in a large bowl with shallots, thyme, salt and pepper and toss to coat. Place potatoes in casserole.
  • Heat cream in small saucepan until it just comes to a simmer. Pour hot cream over potato mixture. Bake 30 minutes.
  • Sprinkle cheese over top and bake 20 more minutes or until potatoes are fork tender and top of casserole is brown and crusty.
