Steps:
- Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
- If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
- Bake until the bacon is sizzling and done, 1 hour 15 minutes. Serve immediately, or they're also great at room temperature.

Jalapenos are stuffed with Cheddar cheese and cream cheese, with bread crumbs for a crunch. Baked to keep them healthier than the fried ones!

- Fill each jalapeno pepper half with cream cheese, Cheddar cheese, and bread crumbs, respectively, and arrange peppers on the prepared baking sheet.
- Bake in the preheated oven until jalapenos are tender and cheese melts, about 20 minutes.

SPICY JALAPENO POPPERS
Jalapeno poppers that aren't too sweet with a little spicy kick of chorizo.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with a wire rack.
- Heat a large skillet over medium-high heat. Add olive oil and chorizo; cook and stir until browned and crumbly, 5 to 7 minutes.
- Mix chorizo, cream cheese, and Cheddar together using a blender or hand mixer until thoroughly combined. Push mixture into one corner of a resealable zip-top bag and cut the tip to create a pastry bag.
- Pipe mixture into the jalapenos. Wrap each jalapeno with a slice of bacon, overlapping it over the filling. Place jalapenos on the prepared baking sheet.
- Bake in the preheated oven until bacon is crispy and jalapenos are tender, about 35 minutes.

- Cut jalapeno peppers in half, spooning out the white flesh and seeds. Do not remove stems. Soak in water for 30 minutes to 1 hour for a mildly hot taste.
- Meanwhile prepare some turkey stuffing. Add some caramelized onions and mushrooms to it for more flavor. Mix all together.
- Stuff jalapeno halves with a smidgen of cream cheese, about 1 tsp per one pepper half, followed by turkey stuffing and cheddar sticks. Wrap one bacon slice around each. You may want to secure the bacon with a tooth pick.

- Wash and dry jalapeños, cut in half, and scoop out the seeds and vein from the inside with a spoon or butter knife. Take small slices of the Brie cheese and mold into the pepper halves, then wrap one bacon piece around each pepper. Place the prepared poppers in an aluminum foil pan and set aside.
- Prepare the smoker using a fruit wood (apple, cherry, etc). Once the smoker's temperature reaches 225F/107C degrees, place the popper's foil pan on the grill rack. Smoke for 2 hours.

- Toss the stew meat with the bbq rub, and smoke at 225 degrees for 2 hours. The stew meat should be about 165 degrees internal temp.
