Remember those pizza burgers we loved so well in school? Well, here it is guys and gals! It's the closest I could get and the recipe actually came from the elementary Cafeteria.

1/2 lb ground beef
1/2 lb ground sausage
12 ounces Spam
1 teaspoon sage
1 teaspoon oregano
1 teaspoon parsley
2 -3 cups spaghetti sauce
1/2 lb cheddar cheese, grated
1/2 lb American cheese, grated
8 -10 buns

Steps:

  • Grate the spam.
  • Brown the red meats and let cool.
  • mix remaining ingredients except buns.
  • Spread mixture on buns and broil/bake for 20 minutes.
  • Enjoy !

2 pounds ground beef
1 (12 ounce) container fully cooked luncheon meat (e.g. Spam), cubed
12 ounces processed cheese food, cubed
2 small onions, chopped
1 (10.75 ounce) can condensed tomato soup
1 (6 ounce) can tomato paste
½ teaspoon garlic salt
1 ½ teaspoons dried oregano
8 hamburger buns, split

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, cook the ground beef until evenly browned, stirring to crumble. Drain fat, and set aside.
  • Process the luncheon meat, cheese and onion in a food processor or run through a grinder until finely chopped. Transfer to a large bowl. Stir in the browned beef, tomato soup, tomato paste, garlic salt, and oregano until well blended. Spread a couple of spoonfuls of the meat mixture onto each bun half, and place them on a baking sheet.
  • Bake for 10 to 15 minutes in the preheated oven, until the meat is hot and the bun is crisp.

1 lb hamburger
6 ounces luncheon meat, grated (Spam)
2 cups spaghetti sauce (use Ragu)
2 cups grated mozzarella cheese (about 1/2 pound) or 2 cups American cheese (about 1/2 pound)
1 tablespoon dried parsley
1 1/2 teaspoons dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
12 plain hamburger buns
1 cup grated cheese, for topping burgers before baking (I like using a combination of American and Mozzarella cheese)

Steps:

  • Brown hamburger; drain fat. Add grated luncheon meat; saute 1-2 minutes. Stir in rest of ingredients till combined and the cheese has completely melted. Place all hamburger bun halves onto cookie sheets. Add desired amount of sauce onto each bun and sprinkle with the grated American and mozzarella cheeses. Bake in a 425 degree oven for 10 minutes, or till heated through and cheese is melted and bubbly. Serve immediately.

1 can(s) tomato paste
2 tsp italian seasoning
1/2 tsp garlic powder with parsley
1 small onion diced (optional)
16 slice pizza pepperoni slices (my addition not in orginal school recipe)
8 slice american cheese
8 cherry tomatoes (we omit these)
4 hamburger buns toasted. (each half will be anopen faced sandwitch)
1/2 c parmesan cheese

Steps:

  • 1. Mix hamburger. tomato paste, Italian seasoning, garlic powder, Parmesan cheese and diced onions together. shape into 8 burgers. and flatten onto a lipped baking pan. put in oven on 400 turning once until done. Top with 2 pieces of pepperoni, then braking the single in half Cris cross over top of burger. Broil to melt cheese and put each burger on a 1/2 of a bun. making 8 open faced burgers. Top with a cherry tomato cut in half

Who else has fond memories of their school cafeteria rectangular pizza slices? I do and decided to create a version at home - Copycat Lunch Lady Pizza.

2 2/3 cups bread flour (or all-purpose flour)
3/4 cup non-fat dry milk powder
2 tbsp sugar
1 packet quick rise or pizza yeast
1 tsp salt
1 2/3 cup warm water
2 tbsp vegetable oil
1/2 lb Italian sausage
1/2 lb lean ground beef
1 jar (12 oz) pizza sauce
8 oz part-skim mozzarella cheese (shredded)

Steps:

  • Grease a metal (1/2-sized) sheet pan (18"x13") and line it with parchment paper. Preheat oven to 475 degrees F.
  • In a large bowl, whisk together the flour, milk powder, sugar, yeast and salt. Microwave the water for about 1 minute and add the oil. Pour the oil and water mixture into the flour mixture and stir with a spatula until a batter is formed. If there are a few lumps remaining, it's OK.
  • Spread the pizza dough into the prepared sheet pan, being sure the dough is spread evenly and to the edges of the pan. If you are having trouble with the dough spreading to the edges of the pan, allow the dough to rest for at least 5 minutes before spreading it with your fingertips.
  • Meanwhile, brown the Italian sausage and ground beef together until cooked completely. Drain if necessary and set aside.
  • Bake the un-topped crust for 6 - 8 minutes. Remove the crust and top with the pizza sauce, then the cooked sausage and beef mixture and then the shredded cheese.
  • Return the pizza to the oven and bake for an additional 8 - 10 minutes, or until cheese is melted and beginning to brown.
  • Slice into rectangles and serve.

1/4 cup chopped onion
1 can (15 ounces) pizza sauce
1 can (4 ounces) mushroom stems and pieces, drained
1 tablespoon sugar
1/2 teaspoon dried oregano
6 hamburger buns, split and toasted
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until the meat is no longer pink, 3-5 minutes, breaking into crumbles. Drain. Stir in the pizza sauce, mushrooms, sugar and oregano; mix well. Spoon onto buns; sprinkle with mozzarella cheese. , Place on ungreased baking sheets. Broil 4 in. from the heat until cheese is melted, 2 minutes. , To freeze for quick lunches later, place the split and toasted buns on a baking sheet. Spoon the meat mixture onto buns; freeze for 1 hour. Transfer to freezer-safe airtight containers., To use frozen burgers: Thaw completely in the refrigerator. Sprinkle with cheese. 1 pound Fresh onions, chopped ((or 3 ounces dehydrated onions))
2¼ teaspoons Granulated garlic
1 tablespoon Salt, kosher
1 teaspoon Ground black or white pepper
1.75 pounds Canned tomato paste ((1 pound, 12 ounces))
1.875 quarts Water ((1 quart, 3½ cups))
3 tablespoons Dried basil
3 tablespoons Dried oregano
2.5 tablespoons Dried marjoram ((2 tablespoons, 1½ teaspoons))
1½ teaspoons Dried thyme
50 each Enriched hamburger rolls (at least 1.8 ounces each)
1.563 pounds Lite mozzarella cheese, shredded ((1 pound, 9 ounces))

Steps:

  • Brown ground beef. Drain. Continue immediately.
  • Add onions, granulated garlic, salt, pepper, tomato paste, water, and seasonings. Mix.

From the 1950s-60s school cafeteria recipes. My school district called theses "Sweepsteaks" and I loved them. The original recipe I found was for 50 servings, so you may need to adjust seasonings to your taste, as cutting large recipes down, the amounts don't always adjust easily.

  • 2. Brown ground beef. Drain.
