OATMEAL SCOTCHIES COOKIES
Don't even think that you can eat only ONE! Boy, are these cookies fabulous! They are so moist and chewy. If you prefer a crisper cookie, just bake for a couple of minutes longer. These are great cookies to send overseas to our troops.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- In a mixing bowl, beat the butter, brown sugar, white sugar, egg, and vanilla extract until well combined. Beat in flour, baking soda, salt, cinnamon, nutmeg, and rolled oats until thoroughly mixed. Stir in the butterscotch chips and coconut. Drop the dough by tablespoonfuls about 2 inches apart onto baking sheets.
- Bake the cookies in the preheated oven just until the bottoms are light brown, 7 to 8 minutes. If you prefer crunchier cookies, bake 9 to 10 minutes.

NESTLE' OATMEAL SCOTCHIES
One of our families favorite cookies. I often bake these to take to different events and am always asked for the recipe since they are such a different cookie from the standard cookie.

Steps:
- Preheat oven to 375 degrees F.
- Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside.
- Beat butter, granulated sugar, brown sugar, eggs, and vanilla extract in a large bowl.
- Gradually beat in flour mixture.
- Stir in oats and morsels.
- Drop by rounded Tablespoonfuls onto an ungreased baking sheet.
- Bake 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crisp cookies.
- Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.
- Pan Cookie Variation: Grease 15x10-inch jelly-roll pan.
- Prepare dough as above.
- Spread in prepared pan.
- Bake for 18 to 22 minutes or until lightly browned.
- Cool completely in pan on wire rack.
SCOTTY'S NEST EGGS
I have been making this recipe for years. It works perfect as part of a brunch or served to family on the weekends. It is fast, easy and delicious!! I got this recipe from the Best of Bridge series

Steps:
- Preheat oven to 350.
- Grease large muffin tins with Pam. Rip/shred the ham to fit around the muffin tin, making sure the bottom and sides are covered. Break egg over top of ham. Add cream and sprinkle with cheese and basil. (can be done ahead of time) Bake 12 - 15 minutes. (place water in any unused muffin cups to prevent damage).
- Serve on half of a toasted english muffin.
- The amount of the basil is only a guideline. Dried basil can be used quite successfully.

- In a large bowl, cream the butter, shortening, cream cheese and sugar until light and fluffy. Beat in the eggs, vanilla and corn syrup. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well., Divide dough in thirds. Shape each into a ball, then flatten into a disk. Wrap in plastic and refrigerate for 2 hours or until easy to handle., On a lightly floured surface, roll one portion of dough to 1/4-in. thickness. Cut with a floured 3-in. dog-shaped cookie cutter. Place 1 in. apart on parchment paper-lined baking sheets. Repeat with remaining dough., Bake at 375° for 7-9 minutes or until edges are lightly browned. Remove to wire racks to cool completely., For frosting, in a large bowl, combine the confectioners' sugar, cream cheese and corn syrup. Add enough milk to make a thin spreading consistency. Divide in half; tint one half with black food coloring and leave remaining half plain., For royal icing, in a large bowl, combine the confectioners' sugar, water and meringue powder; beat on low speed just until combined. Beat on high for 4-5 minutes or until stiff peaks form. Divide in half; tint one portion red and the other green. (Keep unused icing covered at all times with a damp cloth.), Decorate cookies as desired with frosting, icing and sprinkles. Let dry at room temperature for several hours or until firm. Store in an airtight container in the refrigerator.
