SCOTTISH BROWN SUGAR SHORTBREAD

Scottish Brown Sugar Shortbread image

A melt-in-your mouth, first prize winning recipe from a Scottish Mother, and published in Taste of Home magazine. This shortbread also won a red ribbon at a fair. Easy to make with only three ingredients; butter, brown sugar and flour. I use a plastic quilt ruler, that I keep just for baking, to measure out the dough strips. Instead of the ruler, you could make a pattern from wax paper or a plastic lid to get all your cookies a nice even size. Makes a wonderful gift for any occasion.

TRADITIONAL SCOTTISH SHORTBREAD

Traditional Scottish Shortbread image

Perfectly crumbly, irresistibly buttery and wonderfully delicious, Scottish Shortbread has been a favorite treat for centuries!

Provided by Kimberly Killebrew

Categories     Dessert

Time 40m

Number Of Ingredients 8

2 cups (240 grams) all-purpose flour
2 sticks (230 grams) quality unsalted butter
1/2 cup (120 grams) caster sugar
1/2 teaspoon salt
Optional Add-Ins:
Homemade Candied Ginger ((click link for recipe))
Homemade Candied Citrus Peel ((click link for recipe))
Other options include nuts, fresh herbs, dried cranberries, etc.

Steps:

  • Preheat the oven to 350 degrees F. Butter a 8x8 or 9x9 inch square baking pan. You can also use a round cake can and cut the shortbread into triangles.
  • Place the caster sugar, flour, salt and butter in a food processor and pulse until it's combined and looks like coarse breadcrumbs but is soft and pliable and comes together in a dough when you press it together between your fingers. If it's too dry and crumbly it needs to be pulsed a bit longer. (If using any add-ins, stir them in at this point.)Pour the mixture into the greased baking pan. Use your fingers and hands to firmly press down the mixture. Note: If the mixture is too dry to work with, including pricking with a fork (see below), then it was not pulsed long enough in the food processor. Optional: Prick the shortbread with the tines of a fork, creating rows. Some people also like run a knife between each row of fork tines to make cutting the shortbread easier after it's baked. You can also prick the shortbread with a fork immediately after it is done baking while it is still warm; the holes will be more pronounced this way as they have a tendency to close during baking.
  • Place the shortbread on the middle rack and bake for 30-35 minutes or until light golden and firm. Let cool. Cut and serve.Store the shortbread in an airtight container for up to several weeks. Its flavor and texture improves over time.

BROWN SUGAR SHORTBREAD

Brown Sugar Shortbread image

Chewy, crisp, tender, and EASY brown sugar shortbread!

Provided by Sally

Categories     Cookies

Time 4h45m

Number Of Ingredients 7

2 and 1/4 cups (281g) all-purpose flour (spoon & leveled)
1/4 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, softened to room temperature
1 cup (200g) packed light brown sugar
1/3 cup (67g) packed dark brown sugar
1 and 1/2 teaspoons pure vanilla extract
optional: 2/3 cup (135g) coarse sugar, for rolling

Steps:

  • Whisk the flour and salt together in a medium bowl.
  • In a large bowl using a handheld mixer or a stand mixer fitted with a paddle attachment, beat the butter, light brown sugar, and dark brown sugar together on medium-high speed until completely smooth and creamy. Add the vanilla and beat until combined.
  • On low speed, slowly add the dry ingredients. Turn the mixer up to high speed and beat until the dough comes together.
  • Turn the dough out onto a floured work surface and, with floured hands, divide into two. Shape each half into an 8-inch log, about 2.5 inches in diameter. Tightly wrap the logs in plastic wrap and chill in the refrigerator for at least 4 hours and up to 5 days. Chilling is mandatory for this cookie dough. I always chill mine overnight.
  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Remove logs from the refrigerator and roll into coarse sugar, if desired. It's added only for a little crunch! Slice each log into 12 equally thick cookies and place cookies on baking sheets about 2 inches apart. Bake the cookies for 12-14 minutes or until brown around the edges. Allow to cool for 5 minutes on the cookie sheet, then transfer to cooling rack to cool completely.
  • Cookies will stay fresh covered at room temperature or in the refrigerator for 1 week.

BROWN SUGAR SHORTBREAD

Brown Sugar Shortbread image

I like to sneak a bit of light brown sugar into almost everything I make. I love the flavor of the molasses in brown sugar. White sugar, a peerless product in many ways, doesn't taste like anything but sweet. Using brown sugar, like toasting nuts before adding them to a recipe, adds another level of flavor. You won't think "Oh, this tastes like brown sugar." You'll simply think "Oh, this is the best shortbread I have ever had." Homemade shortbread with ice cream is one of the coziest desserts you could possibly make for a dinner party of friends. Though it used to be commonplace (under the name short'nin' bread), almost no one bakes it at home any more. It's a snap.

Time 50m

Yield 30 bars

Number Of Ingredients 6

2 1/2 sticks unsalted butter, softened at room temperature
1/2 cup packed light brown sugar
2 1/4 cups all-purpose flour
1/4 cup cornstarch
1/4 teaspoon ground cinnamon
2 tablespoons granulated sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a 10 by 14 1/2-inch sheet pan (with sides) with parchment or waxed paper.
  • In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until soft and smooth. Add the brown sugar and mix until incorporated.
  • In a separate bowl, stir together the flour and cornstarch. Add to the butter mixture and mix at low speed just until the ingredients are incorporated and the dough comes together. Turn the dough out onto a floured work surface and knead it 5 to 10 times, just to smooth the dough.
  • Reflour your work surface. With a rolling pin, roll the dough out to fit the sheet pan. To transfer to the sheet pan, roll the dough up onto the rolling pin, lift it up, and unroll into the pan. Using light strokes of the rolling pin, roll the dough evenly into the corners and edges of the pan, and roll out any bumps. (Or, press the rolled-out dough thoroughly into the pan with your fingers.) Prick the shortbread all over with a fork to prevent any buckling or shrinking.
  • Bake in the center of the oven for 15 minutes. After 15 minutes, rotate the pan and knock it once against the oven rack, to ensure even cooking and a flat surface. Bake 10 to 15 minutes more, until very lightly browned.
  • Immediately sprinkle the granulated sugar evenly over the surface. Let cool 10 minutes, then cut into 1 1/2 by 3-inch bars. Let cool completely in the pan, then store in an airtight container.

  • Preheat the oven to 300°F. Lightly grease two round 9-in cake pans with butter. (If you worry about the shortbread sticking in your particular pans, line them with parchment rounds, and then butter the parchment.)
  • In the bowl of an electric mixer fitted with the paddle attachment or beaters, combine the butter, sugar, vanilla, and almond extract. Beat until smooth, creamy and well combined. Add the flour mixture and beat on low speed until you have an evenly mixed, stiff dough.
  • Divide the dough in half (if you have a scale, each half will weigh about 10.5 oz), and press each half into an even layer in the prepared pans, dusting your fingers with flour as necessary to prevent the dough from sticking. To smooth the surface, place a piece of plastic wrap over the dough and smooth with your fingers. Use a fork to prick the dough all over in 1-in intervals to allow steam to escape while the shortbread bakes.

  • Oat and Walnut Biscuits. If your cheese is looking a little bit lonely, these oatcakes (which are actually crackers) are the perfect accompaniment. They may not be as pretty as other desserts, but these humble biscuits will absolutely knock your socks off.
  • Scottish Oat Cakes. Here’s another oat cake recipe, because when it comes to these biscuits, you don’t want to run out. These triangular treats have a different shape than the ones above, but they’re just as terrific.
  • Parlies. Parlies or Parliament cakes are a type of dark-hued shortbread biscuits. Legend has it that a shop in Potterow, Edinburgh, which was owned by a certain Mrs. Flockhart (Luckie Fyckie, to locals), created the biscuits in the 18th century and supplied them to the gentlemen of the Scottish Parliament.

  • Abernathy Biscuits. Abernathy biscuits are small, round biscuits with a nutty and citrusy flavor from caraways seeds. They’re not too sweet and are a perfect afternoon teatime treat.

Stop the mixer and scrape down the paddle if the dough starts to clump around it. As more flour is added, the cookie dough may seem dry, however, it will eventually become smooth.
