Steps:
- Pre-heat your oven to 190° (or 170°c for a fan assisted oven or Gas Mark 5) and grease a couple of baking sheets. Set aside.
- In a large bowl, sift the flour. Add the butter/margarine and rub together with your fingers until it resembles breadcrumbs.
- Add the sugar and egg to the mixture. Add the milk a spoonful at a time, mixing together to create a thick, sticky dough - you may not need all the milk.
- Roll a small amount of dough in your hands to make a ball, about the size of a ping-pong ball. Place onto your prepared baking sheets and repeat with the rest of the dough, making 12 balls in total.
- Using a floured finger, poke a hole into the top of each bun, gently pressing right down.
- Spoon a small amount of jam into these holes - using a small teaspoon and adding a little water to your jam beforehand will make this step easier.
- Bake in your pre-heated oven for around 15 minutes until they have a nice golden colour.
- Allow to cool a little on the baking sheets before transferring to a wire rack to cool completely.
RASPBERRY BUNS
Raspberry buns are delicious and easy to make. This is a quick and fun old-fashioned Scottish recipe that kids (and big kids too) will love!

Steps:
- Preheat oven to 200C Fan
- Lightly grease a baking tray
- Place the flour, salt and sugar in a large bowl. Add the cubes of butter and rub the butter into the flour with your fingertips to form a breadcrumb like mixture.
- Using a wooden spoon stir in the beaten egg and mix until a soft dough is formed.
- Using your hands make balls of equal size from the dough mixture. Press a hole into the middle of each ball with a finger, put in a little jam (about ½ tsp) and pull the dough over the jam to close up the hole.
- Slightly flatten each ball as you place them onto the baking tray leaving a little space apart for them to rise and brush with the milk.
- Bake in the centre of oven for 10 - 15 minutes until cooked.
- Place the buns on a wire rack and allow to cool completely to room temperature.
- Store your raspberry buns in an airtight container and consume within 3 - 4 days.

- Grease and flour baking sheets.
- Sift the flour into a bowl and rub in the margarine.
- Add the sugar and the beaten egg with enough milk to make a fairly stiff consistency (may not need all the milk).
- Divide the mixture into about walnut-size balls and place on baking sheet, allowing space for them to spread slightly during cooking.
- Make a small hole in the center of each ball and spoon in a little rasberry jam.
- Pinch the edges together again.
- Dust lightly with caster sugar.
- Bake for 10 minutes then reduce heat to 350degrees F and bake for a further 5 minutes.
- The buns should be light golden in color.
- Cool on a wire rack.

SUNNY'S EASY RASPBERRY AND STRAWBERRY DANISHES
Steps:
- Preheat the oven to 375 degrees F.
- For the fruit: Using a mortar and pestle, mini food processor or a sealed plastic bag and a mallet or rolling pin, crush the freeze-dried raspberries and strawberries together to a powder; some little pebbles are ok. Set aside 2 tablespoons for the icing and garnish.
- For the dough: Spray the bottom and sides of an 8-inch square baking dish or 8- or 9-inch round pie pan with cooking spray.
- Unroll the crescent dough out on a sheet of parchment paper. If using dough with perforations, gently pinch the seams to keep them together. Leaving about a 1-inch border on one of the short sides, sprinkle with the remaining fruit mixture, followed by a layer of the granulated sugar and then the brown sugar. Use a box grater or rasp and grate the butter evenly over the top. Starting with the short edge with the filling on it, roll, tucking as you go, towards the short edge with the empty border. Cut into 8 equal rounds and place in the prepared dish. Bake until the tops are golden, 13 to 14 minutes.
- For the icing: While the danishes are baking, in a small bowl, whisk together the confectioners' sugar, 1 tablespoon of the reserved fruit mixture, a pinch of salt and 1 teaspoon of preferred liquid. The icing should be thick like a glaze, but thin enough to pour. If needed, add more liquid.
- Drizzle the icing over the warm danishes. Transfer to plates and sprinkle with the remaining fruit mixture. Serve warm.
SWEDISH ST. LUCIA BUNS
Growing up with a Swedish mom, we had these St. Lucia buns every December 13th.

Steps:
- Heat milk in a small saucepan over medium heat just until bubbles form around the edge of the pan, about 3 minutes. Remove from heat. Add sugar, butter, salt, and saffron, stirring until butter is melted. Let cool to lukewarm temperature, about 2 minutes.
- Sprinkle yeast over warm water in large bowl, stirring until dissolved. Stir in milk mixture and 3 1/2 cups flour until smooth, about 2 minutes. Stir in eggs. Add remaining flour gradually, mixing in the last by hand until dough leaves the sides of the bowl and is very soft.
- Turn dough out onto a lightly floured surface. Cover with a bowl and let rest for 10 minutes.
- Knead dough with additional flour as needed, about 5 minutes. Place dough in a lightly greased large bowl; flip dough to grease both sides. Cover with a towel and let rise in a warm place until doubled in size, 60 to 90 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Punch down dough. Take golf ball-sized bits of dough and roll out into snakes. Roll each end in opposite directions to create 'S' forms. Place buns on the prepared baking sheets.
- Combine egg yolk and water in a bowl with a whisk. Brush over buns.
- Bake in the preheated oven for 6 minutes. Remove from the oven, leaving oven on. Quickly place 1 raisin in the center of each 'S' curve.
- Return to the oven and continue to bake until golden and cooked through, about 6 minutes more. Let cool on a wire rack before serving.

- mix in sugar.
- crack eggs into a bowl and mix together.
- add the egg to the flour mixture, a little at a time, using a table knife until the mixture forms s stiff dough.
- Turn out on to a clean surface. kneed lightly and make into a roll. Use a little flour if it sticks to the board.
- Divide into rounds equal pieces using a sharp knife.
- Shape into rounds, and place into cake case and into a bun tray.
- Make a well in the centre of each round and add a teaspoon of jam to each round.
- put in oven for 15min antill goldenbrown. When cooked put onto a cooling tray.
