You can't go wrong with these incredible breakfast tacos! Made with eggs, bacon, cheese, and all the fixings, start your morning right with this recipe.

8 slices bacon
1 tablespoon butter
6 eggs, whisked
4 tortillas, warmed
1 cup shredded cheddar cheese
3/4 cup salsa
1 avocado, thinly sliced
1/3 cup cherry tomatoes, sliced
Green onions and cilantro, for serving

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  • Bake the bacon for 15 minutes or until crispy. Drain it on paper towels and set it aside to cool. Crumble it into pieces.
  • Melt the butter in a skillet over medium heat. Pour the whisked eggs in and let them sit for a few seconds. Reduce the heat to low. Stir the eggs from the outer edge in a circular motion until cooked and fluffy.
  • Assemble the tacos starting with the warmed tortillas, followed by eggs, cheddar cheese, salsa, avocado, cherry tomatoes, green onions, and cilantro. Serve immediately and enjoy!

2 large free range eggs
6 tbsp single cream or full cream milk
a knob of butter

Steps:

  • Lightly whisk 2 large eggs, 6 tbsp single cream or full cream milk and a pinch of salt together until the mixture has just one consistency.
  • Heat a small non-stick frying pan for a minute or so, then add a knob of butter and let it melt. Don't allow the butter to brown or it will discolour the eggs.
  • Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan.
  • Let it sit for another 10 seconds then stir and fold again.
  • Repeat until the eggs are softly set and slightly runny in places. Remove from the heat and leave for a moment to finish cooking.
  • Give a final stir and serve the velvety scramble without delay.

  • Pour into a warm pan and gently stir- with a heat proof rubber or silicone spatula. As soon as soft lump of eggs begin to form, lower the heat to low and shift from stirring to folding the eggs over on themselves while gently shaking the pan with the other hand. Cook until desired done-ness. Turn heat off.
  • At the same time as cooking the eggs, place tortillas in a toaster oven until warmed through. You could also grill over a gas flame on the stove top using tongs.
