SCRAMBLED EGG AND SAUSAGE BREAKFAST BOWL
I made this dish with random items I had in my apartment. It ended up tasting delicious so I decided I would share it with you. It is like a bowl full of deliciousness. You can customize it to your taste buds by using different cheese flavors such as tomato basil, garlic, and many more! It's super easy and super yummy. Comment if you like it!

Steps:
- Melt 1 tablespoon butter in a skillet over medium heat. Whisk eggs and cheese together in a small bowl. Pour into the skillet; cook and stir until scrambled and set, 5 to 8 minutes. Remove from heat.
- Melt remaining 2 tablespoons butter in a separate pan. Add sausage, Worcestershire sauce, soy sauce, brown sugar, and seasoned salt. Cook and stir until sugar is dissolved and sausage is browned, 5 to 8 minutes.
- Divide scrambled eggs between 2 bowls. Place sausage mixture over the eggs. Drizzle pan drippings on top. Sprinkle bread crumbs over the bowls to create a crust.

- In a small bowl, whisk together egg and 1 teaspoon cold water; season with salt and pepper. Using the rim of a small glass, cut a hole in bread; discard cutout.
- In a large nonstick skillet, heat butter over medium until foaming. Place bread in skillet; carefully pour egg mixture into hole (if egg leaks out of the bread, use a spatula to push it back). Sprinkle egg with cheese.
- Cook until egg begins to set, 3 to 4 minutes; gently flip bread and egg. Continue cooking until egg is set, 1 to 2 minutes.

SCRAMBLED EGGS IN A BOWL
My son asks for this almost every morning for breakfast. I like it because I don't really have to mess up the kitchen & it is quick. Different wattage microwaves may cause a slight change in the times that you cook. Using less eggs will change the time as well. If you forget the cooking spray, clean up is not as easy.

Steps:
- Spray a serving bowl with cooking spray.
- Crack the eggs into the bowl, and stir up with a fork, making sure the yolks are broken.
- Sprinkle with salt and pepper.
- Cover the bowl with a paper towel and microwave for 1 minute.
- Remove from the microwave and cut the cooked parts of the eggs with a knife and fork.
- Return to the microwave, cover, and cook for 1 more minute.
- Remove from the microwave, cut the eggs up and top with a pat of butter if you wish.
- As an option, put chunked ham or bacon in the eggs while cooking. Great as well with a small spoon of cheez whiz mixed in after it is done cooking.

EXTRA-CREAMY SCRAMBLED EGGS
Adding a small amount of a starchy slurry to scrambled eggs - a technique learned from Mandy Lee of the food blog Lady & Pups - prevents them from setting up too firmly, resulting in eggs that stay tender and moist, whether you like them soft-, medium- or hard-scrambled. Potato or tapioca starch is active at slightly lower temperatures than cornstarch and will produce a slightly more tender scramble, but cornstarch works just fine if it's what you've got on hand. Make sure your skillet is at just the right temperature by heating a tablespoon of water in the skillet and waiting for it to evaporate. For creamier eggs, you can replace the water with milk or half-and-half.

- In a medium bowl, whisk together starch with 1 1/2 tablespoons water until no lumps remain. Add half the butter cubes to starch mixture. Add eggs and salt, and whisk, breaking up any cubes of butter that have stuck together, until the eggs are frothy and homogenous. (There will still be solid chunks of butter in the eggs.)
- Set your serving plate near the stovetop. Heat 1 tablespoon water in a 10-inch nonstick skillet over medium-high, swirling gently until the water evaporates, leaving behind only a few small droplets. Immediately add the remaining 2 tablespoons butter and swirl vigorously until the butter is mostly melted and foamy but not brown, about 10 seconds.
- Immediately add the egg mixture and cook, pushing and folding the eggs with a spatula, until they are slightly less cooked than you'd like them, about 1 to 2 minutes, depending on doneness. More vigorous stirring will result in finer, softer curds, while more leisurely stirring will result in larger, fluffier curds. Immediately transfer to the serving plate, and serve.

My grandmother passed down this recipe after I had my son. This was one of his very first foods. Its easy to make, easy to clean up and easy to feed. Even the pickiest of toddlers will devour this simple easily digestible meal. After 10 years my son still asks for his eggs to be made this way and can even make them himself. It is still his favorite way to eat his eggs :) Also makes a quick on the go breakfast you can eat in your car. For adults add salt and pepper with your favorite cheese, spices or ketchup.

It took me many years to perfect the simple art of a few scrambled eggs. Seems the simpler the dish, the harder it becomes! My simple rules are this: Rich, creamy eggs? Use a splash of heavy cream whisked in with the eggs. Lighter, fluffier eggs? Use a splash of water whisked in with the eggs. Decadent and rich eggs? Use a splash of water whisked in with the eggs and stir in some tiny cubes of butter at the VERY last minute of scrambling.

- Prepare the eggs: In a bowl, whisk together the eggs with 2 teaspoons salt and 1/2 teaspoon pepper with a scant tablespoon water. Whisk only enough to mix. You don't want to whip too much air into them or make them frothy.
- Cook the eggs: Place 6-inch non-stick skillet over medium heat and add the butter. Swirl the butter around as it melts so it coats the whole surface of the pan. Lower the heat and pour in the egg mixture. Stir the eggs gently and constantly. Then, allow the eggs to cook 15 to 30 seconds, then stir again, scraping the sides and bottom of the pan to keep the eggs moving.
- Finish: When cooked but still somewhat "soft", 2 to 3 minutes, sprinkle with a touch more salt. Stir and transfer to a serving dish so the eggs don't continue to cook in the hot pan.
