This rotisserie pork loin recipe has a great Southwestern kick. This dish is best complemented by a side of grilled vegetables.

2 whole pork tenderloins , about 1 1/2 pounds (700 grams)
2 garlic cloves, crushed
1 tablespoon (15 milliliters) vegetable oil
5 teaspoons (25 milliliters) chili powder
1 1/2 teaspoons (7.5 milliliters) ground cumin
1/2 teaspoon (2.5 milliliters) onion powder
1/2 teaspoon (2.5 milliliters) salt
1/2 teaspoon (2.5 milliliters) black pepper

Steps:

  • Gather the ingredients.
  • Place tenderloins in a resealable plastic bag.
  • Combine remaining ingredients-crushed garlic cloves, oil, chili powder, cumin, onion powder, salt, and pepper-and pour into bag.
  • Coat tenderloins entirely with the mixture. Seal bag and refrigerate for 2 to 12 hours.
  • Follow grill instructions to place tenderloins securely on the spit.
  • Turn on rotisserie and grill roasts over indirect heat for 30 minutes or until internal temperature is 145 F/62 C.
  • Let the meat rest 8 to 10 minutes before slicing.

2 garlic cloves, finely chopped (about 1 tablespoon)
1 tablespoon finely chopped fresh sage
1 1/4 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1 tablespoon olive oil
1 pork tenderloin (about 1 1/4 pounds), tied with kitchen twine
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 400 degrees. Stir together garlic, sage, salt, pepper, and olive oil in a small bowl. Rub mixture all over pork.
  • Heat a large, heavy saute pan over medium-high heat. Add vegetable oil. Add pork, and brown all over, about 4 minutes.
  • Transfer pan to oven. Roast pork, turning occasionally, until an instant-read thermometer inserted into thickest part registers 145 degrees to 150 degrees, about 20 minutes. Transfer pork to a cutting board; tent with foil, and let rest 10 minutes before slicing.

1 pork tenderloin (3/4 to 1 pound)
1/2 cup chopped onion
2 tablespoons butter
1 cup soft bread crumbs
1/4 cup minced fresh parsley
1/4 teaspoon rubbed sage
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/8 teaspoon pepper
1 egg, lightly beaten
1 bacon strip

Steps:

  • Make a lengthwise slit about three-fourths of the way through tenderloin; open tenderloin so it lies flat. Flatten to 1/4-in. thickness; set aside. , In a small skillet, saute onion in butter until tender. Add bread crumbs; saute until crumbs are golden brown. Remove from the heat. Stir in the parsley, sage, rosemary, salt, pepper and enough egg to moisten the ingredients. , Spread stuffing on one long side of tenderloin to within 1/4 in. of edges. Close meat and place bacon on top; tie with kitchen string. Place on a rack in a shallow roasting pan. , Bake, uncovered, at 350° for 50-60 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

Here's a surprising and flavorful way to prepare tenderloin, one of the leanest and most economical cuts of pork. Brown the whole tenderloin. Let it rest for a few minutes, so the meat firms up a bit. Then slice the tenderloin into medallions, about an inch thick. Brown the slices on both sides and top with a quick French-style sauce made of heavy cream and Dijon mustard, lemon juice or Calvados.

1 boneless pork tenderloin, about 1 pound
Salt and freshly ground black pepper
4 tablespoons butter, extra virgin olive oil, or a combination
1/4 cup cream
1 tablespoon Dijon mustard, lemon juice or Calvados, optional
Chopped fresh parsley leaves for garnish, optional

Steps:

  • Sprinkle meat with salt and pepper. Put a large skillet over medium-high heat; a minute later add 2 tablespoons butter and/or oil. When butter foam subsides or oil dimples, add meat (curve it into skillet if necessary). Brown it well on all sides, for a total of 4 to 6 minutes. Turn off heat, remove meat from pan, and let it sit on a board. When skillet has cooled a bit, proceed.
  • Cut meat into inch-thick slices. Once again turn heat to medium-high, add remaining butter and/or oil and, when it's hot, add pork slices to pan. Brown on each side, about 2 or 3 minutes each. Turn heat to low and remove meat to a warm platter.
  • Add 1/2 cup water to pan, turn heat to high, and cook, stirring and scraping, for a minute. Lower heat slightly, add cream and cook until slightly thickened. Stir in mustard, lemon juice or Calvados, if you're using them, then taste and adjust seasoning. Serve meat with sauce spooned on top, garnished, if you like, with parsley.

1 lb pork fillet, thinly sliced
flour
4 ounces butter
1 small onion, finely shopped
60 g button mushrooms, sliced
1 1/4 cups cider
1 apple, peeled, cored and thinly sliced
1 tablespoon finely chopped parsley
pepper
salt

Steps:

  • Beat the pork slices with a meat mallet and dredge them in flour.
  • Melt the butter in a frying pan and saute the onion for a few minutes.
  • Add the pork and fry quickly on each side, then add the mushrooms, pepper and salt and cook a further minute or two.
  • Pour in the cider and cook for about 30 minutes or until the pork has cooked and the sauce has reduced to a creamy consistency.
  • Place the pork and its sauce on a heat-proof serving dish and lay the apple slices on top. Put the dish under a preheated hot grill for 1 minute to heat and slightly brown the apples.
  • Sprinkle the dish with chopped parsley and serve.
