Crispy fried fish topped with honeyed apples. This unique dish always get loads of compliments. Plus everyone is always surprised of the pairing of fish and apples. If you can't get sea bass, any firm white fleshed fish will work. Catfish is another fish that goes great with the apples.

4 apples - peeled, cored and cut into thin wedges
½ cup margarine, divided
¼ cup honey
¼ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon ground black pepper
2 cups dried bread crumbs
1 egg, beaten
4 (6 ounce) fillets sea bass

Steps:

  • Melt 1/4 cup of the margarine in a large skillet over medium-high heat. Fry the apples in margarine until tender. Stir in honey, reduce heat, and keep warm.
  • In a shallow bowl, mix together flour, salt, and pepper. Place bread crumbs in another shallow bowl, and egg in a third bowl.
  • Melt the remaining 1/4 cup margarine in a large skillet over medium heat. Dredge the fish in the seasoned flour, dip in egg, then coat with bread crumbs. Place the coated fillets in the hot skillet, and cook for about 3 to 4 minutes per side. The fillets should be nicely browned, and they should flake easily with a fork. Place fish on a serving dish, and spoon the apples with honey over the top of each fillet.

1/2 cup pineapple juice
1/2 cup orange juice
1/3 cup soy sauce
3 tablespoons finely chopped peeled fresh ginger
2 tablespoons oriental sesame oil
1/8 teaspoon cayenne pepper
4 (6 ounce) sea bass fillets
chopped green onion

Steps:

  • Mix first 6 ingredients in 8x8x2" glass baking dish.
  • Add fish; turn to coat.
  • Chill 2 hours, turning fish occasionally.
  • Place steamer rack in large skillet.
  • Arrange fish on rack.
  • Pour marinade into skillet under rack and bring to boil.
  • cover skillet and steam fish until just opaque in center, about 8 minutes.
  • Transfer fish to plates.
  • Remove steamer rack from skillet.
  • Boil marinade until reduced enough to coat spoon, about 6 minutes; spoon over fish.
  • Top with green onions.
  • Serves 4.

This is an easy recipe to pull together. If you're being really indulgent you'll want one fish each. But if you have a few side dishes, one fish per two people will be enough for a taste of this treat. We serve it with mashed potatoes (with some of the extra onions mixed in) and green peas.

2 whole sea bass, cleaned (about 350g each)
1 large white onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
5 -6 sprigs thyme
2 tablespoons honey
salt and pepper
olive oil, for drizzling

Steps:

  • Preheat the oven to 200 C (about 400 F).
  • Heat the olive oil in a frying pan and gently sauté the onions and garlic until soft, about 5-8 minutes.
  • Meanwhile, use a sharp knife to score the outside of the fish.
  • When the onions are soft, take them off the heat.
  • Pull the thyme leaves off the stem and mix in with the onions.
  • Season to taste and let cool.
  • Smear the honey on the inside of the sea bass, then fill with the onion mixture.
  • Use kitchen string to secure the fish.
  • Lay the fish in a baking tray and sprinkle over some salt and pepper.
  • If you have extra onions you can also set them in the tray.
  • Drizzle over the olive oil and bake on the top rack of your oven for 20-25 minutes.

2 tablespoons butter
2 1/2 tablespoons honey
1/8 teaspoon cinnamon
2 tart apples, peeled, cored and thinly sliced
1/4 cup flour
1/8 teaspoon salt
1/8-1/4 teaspoon white pepper
1/2 teaspoon thyme
1 egg, beaten
1 cup soft breadcrumbs
1 lb sea bass fillet
2 tablespoons olive oil

Steps:

  • In a large skillet, melt butter; add apple slices and cook over med-high heat until tender (about 5-7 minutes). Stir in honey and cinnamon and toss. Remove from skillet and keep warm.
  • In a shallow, bowl, mix together flour, salt, pepper and thyme.
  • Place beaten egg in another shallow bowl.
  • Place breadcrumbs in another shallow bowl.
  • Dredge fish fillets in seasoned flour, then dip into beaten egg, then dip into breadcrumbs.
  • In the empty skillet, heat the olive oil. Cook prepared fish fillets over medium-high heat for about 4 minutes per side or until opaque and flake easily.
  • Place on serving platter and top with the warm honeyed apples.
