Ordinary crab cakes are fine, but my family prefers this version featuring scallops and shrimp as well as crab.

Number Of Ingredients 11

1/2 pound uncooked scallops
1/4 pound uncooked medium shrimp, peeled and deveined
1/2 cup heavy whipping cream
1 large egg yolk
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
5 cans (6 ounces each) lump crabmeat, drained
2 tablespoons minced chives
1/4 cup canola oil
Seafood cocktail sauce, optional

Steps:

  • Place scallops and shrimp in a food processor; cover and pulse until chopped. Add the cream, egg yolk, mustard, salt and cayenne; cover and process until pureed. Transfer to a large bowl; fold in crab and chives. Refrigerate for at least 30 minutes., With floured hands, shape mixture by 2 tablespoonfuls into 1/2-in.-thick patties. In a large skillet over medium-high heat, cook seafood cakes in oil in batches for 3-4 minutes on each side or until golden brown. Serve with seafood sauce if desired.

10 egg whites, beaten stiff
1 teaspoon real vanilla

Steps:

  • Grease cake pan.
  • Line with waxed paper.
  • Mix, sift flour, sugar, and baking powder 3 times.
  • Add gradually to the egg whites, stirring after each addition.
  • Mix in the vanilla.
  • Pour into the pan.
  • Bake in oven at 350° for 35 - 45 minutes.

6 egg whites
2 cups sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vinegar
1 teaspoon vanilla extract
unsweetened fresh strawberries or raspberries
sweetened whipped cream

Steps:

  • Butter a 9-inch spring form pan, and place into a warm oven to evenly coat entire surface; cool (can be refrigerated to cool down).
  • Beat room temperature eggs and salt for 15 minutes using high speed of mixer, or until very stiff.
  • Gradually add sugar and when all is added, beat at high speed for another 15 minutes, or until mixture retains its shape.
  • Add vanilla, vinegar, and baking powder.
  • Mix well, and pour into spring form.
  • Bake 1 hour at 250 degrees F.
  • When the cake has cooled, slice off the crusty top and put unsweetened fruit (strawberries or raspberries) along with sweetened whipped cream and replace crust as carefully as you can.

2 egg whites
1 ½ cups dark brown sugar
⅓ cup water
1 teaspoon vanilla extract

Steps:

  • Stir the unbeaten egg whites, sugar and water together in the top of a double boiler. Cook over briskly boiling water, beating with a rotary beater for 7 minutes or until frosting looks fluffy and holds a soft, gentle shape.
  • Remove from boiling water, add vanilla extract and continue beating until frosting holds definite peaks.
  • Spread between layers of cake and then frost the sides and top.

1 pound white sugar
½ pint water
4 tablespoons distilled white vinegar
3 tablespoons light corn syrup
½ teaspoon baking soda
12 ounces semi-sweet chocolate chips
2 tablespoons shortening
1 (1 ounce) square unsweetened chocolate

Steps:

  • Butter or oil an 8 inch square baking pan; set aside.
  • Put sugar, vinegar, syrup, and water in a heavy 4 quart saucepan (cast iron if you have it). Gently heat the mixture, stirring with a wooden spoon, until sugar has dissolved and syrup has melted. Bring to a boil, cover and boil for 3 minutes, then remove lid and boil until temperature reaches 285 degrees F (140 degrees C) on a candy thermometer. Remove from heat and stir in the baking soda, mixing well to allow bubbles to subside a little.
  • Pour hot mixture into prepared pan and leave until just beginning to set. Mark into squares with a lightly oiled knife. Leave to set completely. Cut or break into pieces.
  • Combine chocolate chips, shortening, and baking chocolate in a 2-quart glass bowl. Microwave on High for 2 minutes to melt. Stir with a wooden spoon. Dip candy pieces into chocolate, covering completely. Let cool on waxed paper.
  • Wrap individually in waxed paper, twisting the ends together, and store in an airtight container.
