Seafood marinade the Cajun way is all about seasoning with garlic, cumin, chilis and pepper. I toss in fresh rosemary and thyme to enhance these tasty shrimp. -Dwayne Veretto, Roswell, New Mexico

3/4 cup canola oil
1 medium onion, finely chopped
2 tablespoons Cajun seasoning
6 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon minced fresh rosemary
1 teaspoon minced fresh thyme

Steps:

  • In a small bowl, mix all ingredients. Use to marinate seafood.

10 large red Thai chilies, seeded and chopped
6 cloves garlic, peeled and chopped
15 shallots, peeled and chopped
1 4-inch piece fresh turmeric, peeled and chopped, or 1 1/2 teaspoons ground turmeric
1 medium tomato, skinned and seeded
1 4-inch piece ginger, peeled and chopped
1 tablespoon coriander seeds
10 candlenuts
1 teaspoon dried shrimp paste
1/4 cup vegetable oil
2 stalks lemongrass, peeled and bruised
1 teaspoon palm sugar
2 tablespoons tamarind paste
1 1/2 teaspoons salt

Steps:

  • In a food processor, combine the chilies, garlic, shallots, turmeric, tomato, ginger, coriander, candlenuts and shrimp paste. Process until the ingredients are well ground but not pureed.
  • In a medium-size saute pan, heat the oil over medium heat and add the chili mixture, lemongrass and palm sugar. Cook, stirring occasionally, for 10 minutes. Remove from the heat and cool to room temperature. Remove the lemongrass stalks and stir in the tamarind paste and salt. Use as a marinade for seafood and as a condiment. Store, covered, in the refrigerator for up to three weeks.

1 12-ounce bottle light-colored beer (preferably lager style)
3/4 cup fresh lime juice
6 garlic cloves, minced
1 teaspoon powdered chicken bouillon base (such as Knorr Swiss)
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon hot pepper sauce
1 teaspoon ground black pepper

Steps:

  • Whisk all ingredients in medium bowl to blend. Let marinade stand 1 hour before using. (Can be prepared 1 week ahead. Cover marinade and refrigerate. Rewhisk before using.)

1 teaspoon grated lemon peel

  • Combine all ingredients in a plastic food storage bag or marinade dish.
  • Add 4- 6 oz seafood fillets of your choice.
  • Refrigerate for at least 40 minutes.
  • Discard marinade and broil seafood for 3 to 4 minutes on on each side or until fish flakes easily with a fork.

3 tablespoons garlic, minced
2 teaspoons fresh thyme, chopped
1/4 cup fresh basil, chopped
3 tablespoons Greek oregano, chopped
1 lemon, zested
4 tablespoons lemon juice
1/4 cup ouzo
salt and pepper, to taste

Steps:

  • Heat the olive oil in small skillet over medium heat.
  • Add garlic and saute for 2-3 minutes to infuse the garlic flavor in the oil.
  • Remove from heat; cool.
  • Combine the garlic mixture and all other ingredients in a small bowl.
  • Marinate fish or shrimp in a zip lock bag for 3-4 hours.
