GRILLED TUNA ROLLS
Steps:
- Heat a charcoal grill with hot coals. Brush the grill with oil.
- Brush both sides of the tuna with olive oil and sprinkle generously with salt and pepper. Cook the tuna over the hot coals for about 2 1/2 minutes on each side. Remove to a plate. The tuna should be seared on the outside and raw inside. Allow to cool and cut into cubes.
- (If you don't want to heat a grill, you can sear the tuna in a dry saute pan over high heat. Heat the pan for 2 minutes, add the tuna steaks and cook for 1 1/2 to 2 minutes on each side until seared on the outside and still raw inside.)
- For the dressing, whisk together 2 tablespoons of olive oil, the lime zest, lime juice, wasabi powder, soy sauce, hot sauce, 2 teaspoons kosher salt, and 1 teaspoon pepper in a small bowl. Toss the avocado in the dressing and then add the tuna, red onion, scallion, and sesame seeds. Line the rolls with arugula leaves, fill with the tuna mixture, and serve.

- You will need a bamboo sushi mat to make this recipe.
- Cook following the manufacturer's instructions. Spread rice into a container and allow to cool. Sprinkle the sushi vinegar over the rice and stir until thoroughly mixed.
- Drain tuna, mash with fork and stir in mayonnaise. Place a sheet of nori, shiny side down on the bamboo mat. Place some of the rice on the sheet, press down with clean wet fingers to a depth of 1cm, leaving a 3cm gap at one end.
- Arrange a 2cm wide strip of tuna about 3cm in from the other end. Place one or two strips of cucumber and avocado on top of the tuna, overhanging the nori at both ends. Start rolling up from the end with fillings. Lift the bamboo mat and roll tightly. Wet the strip at the end and push gently to seal the edges. Slice into two or three pieces using a sharp, wet knife. Place on a serving platter, cover with plastic wrap and refrigerate for 30-60 minutes to allow the nori to soften.
- Serve with soy sauce and pickled ginger.

- Heat oil in a nonstick pan over high heat. Pat fish dry. Cook fish until golden brown on outside but still quite rare in center, 1 1/2 to 2 minutes per side. Remove from pan; let cool slightly. Meanwhile, toast nori sheets, 1 at a time, using tongs, over a medium-high flame until they begin to shrivel and are fragrant.
- Mix together lemon juice, soy sauce, and Sriracha. Slice avocado. Divide rice among 4 plates, and drizzle with half the sauce. Arrange avocado and cucumber on top of rice. Break tuna into chunks, and divide among plates. Drizzle with remaining sauce, and top with cilantro. Break nori into pieces, and serve on the side.

- Combine all the ingredients except the tuna and avocados in a bowl, and stir. This is your vinaigrette.
- Divide the tuna into four six ounce blocks, and season with salt and pepper.
- Coat a skillet with olive oil on medium-high heat, and heat.
- Put the tuna steaks in the hot oil, and sear on each side for 1 minute to form a crust with the salt and pepper.
- Pour half the vinaigrette into the pan, and coat the fish.
- Remove the fish from the pan. Top the fish with sliced avocado, and drizzle the rest of the vinaigrette over it all.

SEARED TUNA STEAK WITH AVOCADO SALSA
This recipe is from Eddie V's Edgewater Grill in Scottsdale, Arizona. It is the original recipe; however, I make a few slight changes to the recipe (to accomodate my personal tastes) when I make it. First, I add a little soy sauce to the vinaigrette to bring out the flavors a little more. Second, I only use 2 Tbsp. of olive oil (instead of the recommended 4 Tbsp.) because I like a chunkier vinaigrette. Third, I chop the cilantro and sprinkle it on top of the fish and salsa. Either way, it is a great recipe and worth having at least once!

- Combine red pepper, serrano pepper, red onion, vinegar, olive oil, chili sauce and kosher salt to make the vinaigrette.

- In a large bowl, add the tuna and avocado. Use a fork to smash the avocado and tuna together.
- Add the carrots, celery, red onion, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir to combine.
- Lay a tortilla flat on a plate. Lay a lettuce leaf on the tortilla. Scoop ¼ of the tuna mixture into the center of the lettuce and spread down the middle. Top with cherry tomatoes and carefully roll the the tortilla to create a wrap. Repeat with the remaining ingredients.
