These cookie bars are simply heavenly. Easy to make and delicious.

1 cup butterscotch chips
¼ cup butter
2 eggs
½ teaspoon vanilla extract
¾ cup all-purpose flour
1 teaspoon baking powder
¾ teaspoon salt
1 cup brown sugar
1 cup semi-sweet chocolate chips
½ cup chopped walnuts
½ cup raisins

Steps:

  • Place butterscotch chips and butter into a glass bowl. Heat in the microwave for about 3 minutes, stirring at 30 second intervals until smooth. Set aside to cool until firm.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, beat the butterscotch chip mixture with eggs and vanilla until well blended. Combine the flour, baking powder, and salt; stir into the batter until evenly mixed. Mix in the brown sugar, chocolate chips, walnuts, and raisins. Spread the batter evenly in the prepared pan.
  • Bake for 25 minutes in the preheated oven, just until the bars begin to pull away from the sides of the pan. Cut into squares while warm.

1/2 cup butter
2 cups brown sugar
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 teaspoon vanilla extract
1 cup walnuts, broken

Steps:

  • Sift dry ingredients.
  • Melt butter and add brown sugar. Stir over low heat, until sugar has melted. Remove from heat and add dry ingredients. Add eggs and vanilla; stir in walnuts.
  • Spread in an ungreased 9" x 13" baking pan and bake at 300° for 25-30 minutes.

2/3 cup blanched almond, finely chopped
1 cup all-purpose flour
1/2 cup margarine
3/4 cup icing sugar
2 tablespoons icing sugar
1 (8 ounce) package cream cheese, softened
2 cups whipping cream
1 teaspoon vanilla extract
2 (113 g) packages instant butterscotch pudding mix or 2 (113 g) packages vegetarian instant butterscotch pudding mix
3 cups milk

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, with a pastry blender, combine the flour, margarine, almonds and 1/4 cup icing sugar until crumbly.
  • With the fingers, press the mixture firmly into an ungreased 9" x 13" baking dish.
  • Bake the crust 15 to 20 minutes until golden brown.
  • Cool the crust in the dish on a wire rack.
  • While the crust is cooling, beat the whipping cream and vanilla extract in a small bowl until stiff peaks form.
  • In a medium bowl (you can use the same one as you used for mixing the crust), beat the cream cheese and 1/2 cup icing sugar until light and fluffy.
  • With a rubber spatula, fold in 1 cup whipped cream into the cream cheese mixture; spread over the cooled crust.
  • Reserve the remaining whipped cream for the topping.
  • In a large bowl, with a wire whisk, prepare the pudding mixes as the label directs, but prepare both packages together and use only 3 cups milk.
  • Spread the pudding over the cream cheese layer.
  • Fold the remaining 2 tablespoons of icing sugar into the reserved whipped cream; spread over the pudding.
  • Refrigerate until firm, about 4 hours.

1-1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1-1/2 cups packed brown sugar
1/2 cup butter, cubed
1/2 cup chunky peanut butter
2 large eggs, room temperature, lightly beaten
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a small bowl, whisk flour, baking powder and salt., In a large saucepan, combine brown sugar, butter and peanut butter; bring to a boil, stirring to blend. Remove from heat; cool slightly, about 10 minutes., Stir in eggs and vanilla. Stir in flour mixture. Transfer to a greased 9-in. square baking pan. Bake until golden brown and a toothpick inserted in center comes out clean (do not overbake), 20-25 minutes. Cool completely in pan on a wire rack. Cut into squares. Store in an airtight container.

2 cups dark brown sugar, packed
3/4 cup heavy cream
6 Tbs. butter
1/2 tsp. maple flavoring
1 1/2 cups powdered sugar SIFTED

Steps:

  • Combine dark brown sugar, cream and butter in large heavy saucepan. Heat and stir until boiling. Reduce heat and boil to 237ish on glass thermometer/239.9 on digital. Stir carefully occasionally without scraping sides. Remove from heat. Pour into mixing bowl. Do not scrape. Add maple and powdered sugar in three portions. Stir until slightly thickened When slightly thickened pour into pan. When cool remove with foil. place on parchment or waxed paper. Turn over and "foot" with chocolate. Chille on hour. Flip over when chocolate is set. Measure carefully and cut into 1 inch squares. Dip in tempered chocolate. Check making artisan chocolates for help.
