1 tablespoon olive oil
1 onion, finely minced
500 g beef mince
500 g pasta sauce
1 1/2 cups arborio rice
1 1/2 cups water
1 cup frozen peas
1/2 cup basil leaves
salt and pepper
grated cheese, to serve

Steps:

  • Heat oil in large saucepan.
  • Add onion, cook, stirring till soft.
  • Add beef mince, cook stirring until changed in colour.
  • Add sauce, rice and water, bring to boil.
  • Pour rice mixture into large ovenproof dish.
  • Cover dish with double layer of foil.
  • Cook in moderate oven 180 C for 30 minutes until rice is tender.
  • Steam peas till tender and add to risotto with basil.
  • Season with salt and pepper.
  • Serve topped with cheese.

Broken Spaghetti Risotto image

This pasta dish is not really risotto; it only refers to the similar technique used in that famous Italian dish. Like the grains of Arborio rice, pieces of broken pasta are tossed in hot butter or oil before the liquid is added, but here we're going even further, and toasting it to a gorgeous nut-brown. This gives the dish its signature look, as well as adds a subtle nutty flavor.

1 tablespoon olive oil
8 ounces uncooked spaghetti, broken into 1 inch pieces
2 cloves garlic, minced
1 ½ cups chicken broth
½ teaspoon red pepper flakes, or to taste
salt to taste
2 tablespoons freshly grated Parmigiano-Reggiano cheese, or to taste
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Heat oil in a saucepan over medium heat; add spaghetti and toast, stirring constantly, until golden brown, 3 to 5 minutes.
  • Stir garlic into spaghetti pieces and cook for 30 seconds.
  • Pour in 1/2 cup broth and increase heat to medium high. Stir spaghetti and broth until all the liquid is absorbed, 2 to 3 minutes. Repeat this process until all of the stock is absorbed and noodles are desired tenderness, about 10 minutes.
  • Reduce heat to low. Season spaghetti with salt and red pepper flakes to taste. Remove from heat.
  • Stir Parmigiano-Reggiano cheese and parsley into spaghetti and serve.

  • Heat the oven to 220C/200C fan/gas 7. In a large wide hob-safe casserole, heat a glug of oil, then add the onion, garlic, carrots and peppers. Cook on a medium-high heat, stirring regularly, for 10 minutes. The vegetables should start to soften and colour a little. Season with salt and pepper, then add the tomato purée and rice. Stir over the heat for 2-3 minutes until the rice starts to turn translucent.
  • Turn up the heat to high and add the red wine. Let the wine bubble and reduce, stirring all the time. Once the wine has reduced by about half, add the mince and break up into the rice and vegetables.
  • Lower the heat to low-medium, stir in the chopped tomatoes, Lea & Perrins and half the stock, then bring to a gentle simmer. Slowly add the remainder of the stock and the milk, little by little, stirring all the time as the risotto thickens. This should take 40-50 minutes.
  • Once the rice is just al dente (firm to the bite), scatter the grated cheese in an even layer over the rice. Transfer to the oven and bake for 10-15 minutes until the cheese has melted and turned golden and the risotto is bubbling.
