SEITAN AND KABOCHA VEGGIE STIR FRY

Healthy, tasty, and satisfying! This can be made with various veggies, I liked this combo. You could also serve this over rice or Tofu Shiritaki Noodles.

3 ounces seitan, sliced into strips
2 ounces coleslaw mix or 2 ounces bean sprouts
5 ounces kabocha squash, washed and diced, skin on
2 ounces snow peas, halved
2 ounces red bell peppers, chopped into large pieces
2 green onions, chopped
1 -2 garlic clove, minced
1 tablespoon soy sauce, divided
1/4-1/2 teaspoon orange zest
1/2-1 Splenda quick packs (optional) or 1/2-1 other artificial sweetener (optional)
1/2 teaspoon pureed ginger
2 tablespoons low-fat sesame ginger salad dressing (I use Trader Joe's Sesame Soy Ginger Vinaigrette)

Steps:

  • In a steamer or stovetop steamer basket, soften the kabocha, snow peas, and bell pepper until just tender. Set aside.
  • Coat a small skillet with cooking spray and heat over medium. Add the garlic and let it become fragrant, 1 minute. Add the cabbage and ½ tablespoon soy sauce, stir frying until it softens a bit, 1 minute or so. Remove and keep warm.
  • To the same skillet, add the seitan strips and stir fry until lightly browned, about 3-5 minutes. (You may need another coat of cooking spray.) Add the steamed vegetables, orange zest, the white parts of the chopped onions, and remaining soy sauce to the skillet and continue to stir fry until warm and vegetables are softened to your liking.
  • Reduce heat on the skillet to low. If needed, heat the cabbage quick in the microwave and put it in the serving bowl. Add the Vinaigrette and the optional sweetener to the skillet, and stir until heated through. Serve over the cabbage, top with remaining green onions.

1 red bell pepper, cored, seeded, and julienned
1 yellow bell pepper, cored, seeded, and julienned
1/2 cup thinly sliced red onion
1 cup half-moon sliced yellow squash
1 cup small broccoli florets
1 baby eggplant, cut into chunks
8 ounces firm tofu, cut into large chunks
1 clove garlic, minced
1/2 cup teriyaki sauce (check the label: no more than 2 grams sugar per serving)
2 cups sliced bok choy
1 cup fresh mung bean sprouts
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1/2 cup snow peas
2 tablespoons sesame oil

Steps:

  • Start by preparing and cutting all the vegetables and measuring your ingredients so that they are ready to go. Once you begin stir-frying, it goes very quickly.
  • In a wok or large skillet, heat canola oil over high heat until almost smoking. Add the peppers and onion while stirring constantly. While continuing to stir, add successively the squash, broccoli, eggplant, tofu, garlic, and teriyaki sauce. Cook, stirring, constantly for 2 minutes. Add the bok choy, sprouts, pepper, and salt and cook, stirring, until crisp-tender, about 2 minutes more.
  • Stir in snow peas and sesame oil and remove from heat. Serve immediately.

1/4 cup soy paste
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon peanut butter
2 teaspoons Vietnamese garlic chili sauce
2 1/2 cups water
1 cup brown rice
1 teaspoon salt
1 tablespoon butter
1 pound carrots, peeled and sliced julienne
4 heads broccoli, broken into florets
2 stalks celery, diced
1 tablespoon grapeseed oil
1 medium onion, medium diced
1/2 pound snow peas
1 large red bell pepper, stem and seeds removed and medium diced
1 fresh pineapple, peeled, core removed, bottom half sliced crosswise into 1/4-inch thick slices and the rest medium diced
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • In a small bowl, combine soy paste, soy sauce, sesame oil, peanut butter, and garlic chili sauce and set aside briefly.
  • For the rice, bring 2 1/2 cups water to a boil in a saucepot and add rice, salt and butter. Return to a boil and reduce heat to low. Cover and let simmer 20 minutes. Remove from heat and let stand covered for 5 minutes.
  • In a wok heat 2 or 3 cups water to boiling and blanch carrots, broccoli, and celery for 2 minutes. Drain and set aside briefly, then rinse and dry wok.
  • In the same wok, heat grapeseed oil over medium-high heat and saute onion until translucent. Add blanched carrots, broccoli, and celery, as well as snow peas, bell pepper and diced pineapple (reserving the pineapple slices). Stir in mixture of soy/sesame/peanut butter/chili sauce. Cook vegetables until tender stirring frequently.
  • Lay slices of pineapple on serving plates. Top with rice and then top with stir-fried vegetables. Sprinkle with parsley leaves.

1 small onion, diced
1 clove garlic, minced
½ cup sliced carrots
½ cup purple cauliflower, chopped

¾ cup water
1 cup cherry tomatoes, halved
salt and freshly ground black pepper to taste
1 tablespoon fresh basil, chopped, or to taste

Steps:

  • Heat oil a large skillet over medium heat and cook onion until soft and translucent, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds. Add veggies in the following order with approximately 2 minutes of sauteing between each addition: carrots, cauliflower, broccoli, and mushrooms last. Pour in soy sauce and mix until all vegetables are well coated with sauce. Cook for 2 minutes.
  • Pour in water and add tomatoes, salt, and pepper. Bring to a boil, reduce heat, and bring to a simmer. Cook until all vegetables are fork-tender, but not too soft, 3 to 5 minutes. Add basil towards the end.
  • Serve warm on a bed of rice sprinkled with sesame seeds.

It's always a shame to let precious vegetables go to waste. Once they pass their prime, they can form the foundation for a tasty stir-fry. Wrap mature greens like kale, Swiss chard and spinach in a damp towel and refrigerate them and they will keep for about seven days. Once they start to become limp, they may no longer shine raw in salads but they are perfect for stir-frying. This recipe works with what you've got, building an easy stir-fry with any combination of toasted nuts, crunchy vegetables and sturdy greens.

2 tablespoons canola oil or other neutral oil
1 heaping cup whole, skin-on almonds, pistachios or cashews
Kosher salt
4 to 6 celery stalks, fennel stalks or bok choy, sliced on the bias
1 to 2 cups other crunchy vegetables, such as snap peas, snow peas, green beans, carrots or radishes, trimmed and sliced or chopped if large
1 tablespoons sesame seeds (optional)

Steps:

  • In a large wok, skillet or cast-iron pan, heat the canola oil over medium-high until shimmering. Add the almonds, season with salt and cook, tossing, until toasted and crisp, 3 to 4 minutes. Add the celery and crunchy vegetables and toss until slightly softened, 1 to 2 minutes.
  • Sprinkle with sesame seeds, if using, and toss until toasted, 1 to 2 minutes. Add the sturdy greens, toss until coated in oil, then add the vinegar, scraping the bottom of the wok to release any browned bits. Cover and cook until greens are lightly wilted, about 1 minute.
  • Season with sesame oil and salt to taste. Divide the rice among four bowls and spoon the stir-fry over the top. Scatter the herbs and drizzle with soy sauce and Sriracha, if using.

KABOCHA SQUASH AND PORK STIR-FRY

Add scallions, garlic, chile, and ginger and cook, stirring often, just until softened, about 2 minutes. Add squash, lime juice, fish sauce, and sugar; toss to combine.

400g can black beans , drained and rinsed
75g dark brown soft sugar
3 garlic cloves
2 tbsp soy sauce
1 tsp Chinese five-spice powder
2 tbsp rice vinegar
1 tbsp smooth peanut butter
1 red chilli , finely chopped
350g marinated seitan pieces
1 tbsp cornflour
2-3 tbsp vegetable oil
1 red pepper , sliced
300g pak choi , chopped
2 spring onions , sliced
cooked rice noodles or rice, to serve

Steps:

  • Start by making the sauce, tip half the beans into the bowl of a food processor with the rest of the ingredients and add 50ml water. Season, then blend until smooth. Pour into a saucepan and heat gently for about 5 mins or until thick and glossy.
  • Drain the seitan and pat dry with kitchen paper. Toss the seitan pieces in a bowl with the cornflour and set aside. Heat your wok to a high temperature, add a little oil, then the seitan - you might need to do this in batches. Stir-fry for around 5 mins until golden brown at the edges. Remove the seitan from the wok using a slotted spoon and set aside on a plate.
  • If the wok is dry at this stage, add 1 tsp vegetable oil. Throw in the chopped peppers, the rest of the beans, pak choi and spring onion. Cook for 3-4 mins, then return the seitan to the pan, stir in the sauce and bring to the boil for 1 min. Serve with cooked rice or noodles.
