Self-saucing sticky toffee chocolate pudding image

Combine sticky toffee pudding sponge with a generous helping of chocolate chunks and chocolate sauce for the ultimate comforting dessert

200g pitted medjool dates
100g unsalted butter, softened, plus extra for the dish
75g demerara sugar
75g dark brown soft sugar
2 large eggs
250g plain flour
1 tsp bicarbonate of soda
1 tbsp baking powder
100g dark chocolate, roughly chopped
vanilla ice cream or custard, to serve
200ml double cream
75g unsalted butter, cubed
200g dark brown soft sugar
30g cocoa powder

Steps:

  • Put the dates in a bowl and pour in 300ml boiling water. Leave to soak for 30 mins. Meanwhile, make the sauce by tipping all the ingredients, a big pinch of salt and 300ml boiling water into a pan, then whisk over a medium heat and simmer for 2 mins. Pour into a jug and leave to cool slightly. Once the dates are soaked, use a hand blender to blitz the dates and water until you have smooth paste. Leave to cool slightly. Butter a deep 35 x 25cm dish.
  • Heat oven to 180C/160C fan/gas 4. Beat together the butter and sugar for 3 mins until smooth. Add the eggs, one at a time, beating between each addition. Fold in the flour, bicarb and baking powder along with a pinch of salt. Once combined, mix in the date purée, then fold in the dark chocolate. Pour the sponge batter into the prepared dish and spread out evenly using the back of a spoon. Pour the chocolate sauce evenly over the top of the batter.
  • Bake in the oven for 30-35 mins until risen, then leave to rest for 2 mins. Serve warm with a big scoop of ice cream or warm custard.

1 cup caster sugar
1 1/2 cups self raising flour (sifted)
90 g butter (melted and cooled)
1 teaspoon vanilla extract
2 tablespoons cocoa powder
1 egg (lightly beaten)
3/4 cup milk
1 cup light brown sugar
2 tablespoons cocoa powder (extra)
2 1/2 cups boiling water
1 tablespoon icing sugar (or as much as you need to serve)
6 scoops ice cream or 6 scoops cream, to serve

Steps:

  • Preheat slow cooker for 20 minutes on high.
  • Grease the slow cooker bowl (would recommend if using butter to put on wax paper or baking/parchment paper to do).
  • In a separate bowl, combine the first 7 ingredients mixing or whisking well together.
  • Sift brown sugar and extra cocoa powder over mixture.
  • Using a spoon, gently and evenly pour the boiling water over the mixture.
  • Cook on HIGH for 2 1/2 hours, or until centre is firm (I think cooking time could vary depending on the size of your crock pot/slow cooker - mine is a 6L oval shaped cooker and this is the time they recommend).
  • Serve with sifted icing sugar and ice cream or cream.

This is a Margaret Fulton recipe and has been a family favourite for nearly 30 years. The original called for walnuts (I have never used) so have made that a footnote in the directions. Serve with whipped cream and/or ice cream. A comfort dessert.

3 ounces self raising flour
2 tablespoons cocoa powder
1 1/2 teaspoons instant coffee powder
1 pinch salt
4 ounces butter or 4 ounces margarine
4 ounces caster sugar
2 eggs
1/2 teaspoon vanilla essence
1 -2 tablespoon milk
2/3 cup brown sugar (firmly packed)
1 tablespoon cocoa
1 1/2 cups water (hot)

Steps:

  • Preheat oven to 180°C.
  • Grease 6 cup oven-proof dish.
  • For the sauce mix together cocoa and brown sugar in a jug and pour in hot water and stir till sugar is dissolved.
  • For the pudding sift flour, cocoa, instant coffee powder and salt together.
  • Cream butter and sugar until light, gradually beat in eggs and vanilla.
  • Add a little flour, then some milk (alternate between the two keeping a soft consistency) finishing with the flour (don't worry if you don't use up all the milk.
  • Spoon mixture into well greased oven dish and spread evenly. If using sprinkle with 1 tablespoon of chopped walnuts.
  • Spoon sauce over the pudding mixture till you have a layer of sauce then pour the rest over the back of the spoon.
  • Bake for 35-40 minutes.
  • Serve with whipped cream and or ice cream and walnut halves if using.

  • Heat the oven to 180°C, fan 160°C, gas 4. Place the chopped dates in a small heatproof bowl, sprinkle with the bicarbonate of soda and pour over 100ml boiling water. Leave to soften for 10 minutes. Meanwhile, grease a deep 2-litre ovenproof baking dish with butter.
  • In a small saucepan, gently mix together all the sauce ingredients over a low heat. Once the sugar is dissolved, remove from the heat and leave to one side.
  • When the dates have softened, tip them into a food processor and blitz a couple of times, then add the remaining ingredients with a pinch of salt. Whiz to a thick batter consistency, scraping down the sides in between so everything is fully incorporated. There should still be some flecks of date showing. Pour into the prepared baking dish.
  • Pour the sauce slowly over the top of the pudding – it is easiest to pour into the corners of the dish. Bake for 30-35 minutes. Check with a skewer, being careful not to poke all the way through to the sauce. The sponge will be risen and firm, and the sauce bubbling underneath. Serve with pouring cream or ice cream.
