Semi-Homemade Japanese Kare Pan (Curry Bread) image

This is my interpretation of a kind of street food I had when I visited Japan. They are crunchy balls of bread filled with Japanese brown curry. I couldn't get enough of them and neither will you.

1 large potato, cut into 1/2-inch pieces
1 cup frozen peas
2 tablespoons butter
1 pound ground beef sirloin
salt and ground black pepper to taste
1 onion, diced small
2 ½ cups water, or as needed
3 cubes Japanese curry roux, or more to taste
oil for frying
1 (11 ounce) can refrigerated French bread dough
1 egg
panko bread crumbs

Steps:

  • Bring a large pot of water to a boil. Add potatoes; cook until mostly tender, about 5 minutes. Add peas; continue cooking until potatoes are soft, 5 to 10 minutes. Drain.
  • Melt butter in a large skillet over medium heat. Season ground beef with salt and pepper and add to the skillet with onion; cook and stir until beef is browned and onion is translucent, about 5 minutes.
  • Pour 2 1/2 cups water over beef mixture; bring to a boil. Reduce heat to medium and stir in potatoes and peas. Simmer, skimming scum off the surface, until flavors combine, about 15 minutes. Remove from heat and let cool, about 5 minutes. Add curry roux cubes; stir until dissolved.
  • Let curry mixture cool, about 20 minutes. Cover with plastic wrap and refrigerate until thickened, 8 hours to overnight.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Cut dough into 1/2-inch slices and roll out each slice to a 3-inch circle. Place a teaspoon of chilled curry into the center of each circle. Pull up sides of the circle over curry and pinch edges together to form a round ball.
  • Beat egg in a small bowl. Place panko bread crumbs in a shallow dish. Dip each ball of dough into the beaten egg. Press into bread crumbs to coat, shaking off excess.
  • Fry in the hot oil until evenly browned on all sides, 3 to 5 minutes.

  • Heat a large pan or pot over medium high. Add some oil. Once hot, add in the onions and sauté until tender. Place the bell peppers and cook for a few minutes. Add in the carrots and potatoes. Pour in the water and the curry cubes.
  • Mix all the dry ingredients together in a large bowl. While mixing, add in the warm milk. Mix until you have small pieces of dough and then feel free to mix with your hands to well combine. Add in the oil and them mix well. Keep kneading for 8-10 minutes, making sure to scrape the flour from the sides of the bowl, until you have a smooth ball of dough that no longer sticks to your hands.
  • Divide the dough into half. Roll out 2 logs and then divide each one into 4 to get 8 pieces in total. Each piece will be around 40-45 grams.
  • Mix the cornstarch and milk together until the starch has diluted to make your ‘egg’ wash. Make sure to mix this well before brushing since the cornstarch and sit at the bottom.

  • Before starting, you want your curry to be thick and slightly pasty, not saucy. If you followed my Japanese curry recipe, you want to thicken it up a little bit. I recommend doing this the night before. This will just make the process go by smoother the next day as you make the dough and assembly.

  • In a large bowl, whisk together bread flour (150 g), cake flour (50 g), kosher salt (3 g), and sugar (15 g).
  • In a deep frying pot (I like using my 2.75QT Staub), heat the 4 cups (960 ml) oil to 320ºF (160ºC). Place 2-3 pieces of the curry bread into the oil, seam side down. After a few seconds, flip it around so the seam side is now up. You may need to hold it with a pair of tongs. Keep turning them while they deep fry, until they cook to a golden brown, about 2-3 minutes. Drain the oil well and transfer to the wire rack or some paper towels to drain while it cools. Serve hot or at room temperature.
