BLACK BEAN AND SOY VEGGIE BURGERS

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Blend shelled edamame, black beans, vegetable broth, ricotta cheese, egg whites, and garlic in a blender or food processor until smooth; transfer to a bowl.
- Stir wheat bran, oats, turmeric, chili powder, cloves, oregano, basil, Italian seasoning, and salt into bean mixture; form into 7 patties and place on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip and continue baking until patties are lightly browned and cooked through, about 20 more minutes.

- In food processor, combine soybeans, tamari, oil, cayenne and garlic. Process until smooth, then transfer to large mixing bowl. Stir in remaining ingredients (except additional oil) in order listed, mixing well with each addition. In large skillet, heat thin layer of oil or cooking spray over medium-high heat. Scoop out about a peach-size amount of bean mixture and shape into a patty (wet hands as necessary so they don't stick) and place each patty into hot oil. Brown on one side, then turn and brown other side 2 to 3 minutes. Repeat with remaining mixture.

SUMMER VEGGIE SOY BEAN BURGERS

- For mix mash the soy beans and add the breadcrumbs, flour, egg white, BBQ sauce, and ketchup. Then mix in all of the spices. Add in the carrots, sunflower seeds, celery, onion, and garlic one at a time mixing throughout the mix. Let sit for at least an hour in the fridge. Mix can be frozen and stored for up too a week. When ready to cook pre-heat your charcoal of gas barbeque. Form into burgers roughly 1/2 inch thick and 4 inches in diameter. Cook on undirect heat for for 5 minutes on each side. Then on direct heat until browned on both sides About 5 minutes each side. Serve on a toasted whole wheat bun with lettuce, tomato, and a slice of red onion.

Steps:
- Preheat oven to 325°. Spread beans evenly on a parchment-lined rimmed baking pan. Bake until beans start to split open, 6-8 minutes. , Meanwhile, in a large dry nonstick skillet over medium heat, cook and stir walnuts, cumin, fennel and smoked paprika until fragrant, 2-3 minutes. Remove from pan and cool. In the same skillet skillet, heat oil from sun-dried tomatoes over medium heat. Add carrot, shallot and sun-dried tomatoes; cook and stir until tender, about 5 minutes. Add garlic; cook 1 minute longer. Remove from the heat; cool slightly. , Transfer carrot mixture to a food processor. Add beans, walnut mixture, oats, chia seeds, soy sauce and garlic salt. Pulse until combined. Shape into four 4-in. patties., In the same skillet over medium heat, cook patties in olive oil until browned, 3-4 minutes on each side. If desired, baste with barbecue sauce and serve on buns with toppings of your choice.

- Put toasted sesame seeds, rice, soybeans, flour, salt, 2 teaspoons soy sauce, and the eggs into a large bowl; season with pepper. Using your hands, gently combine mixture. Shape into 4 patties.
- Heat oil in a large nonstick skillet over medium heat. Cook patties, flipping once, until beginning to brown and cooked through, 5 to 6 minutes per side.
- Stir remaining teaspoon soy sauce with mayonnaise. Serve patties on buns with lettuce and mayonnaise mixture.
