- Combine fresh lemon juice, raw sugar, basil, whole strawberries, and salt in a pint glass. Muddle ingredients with a muddler or the handle of a wooden spoon until sugar dissolves. Add ice cubes and soda water and stir until chilled. Strain into a 12-ounce glass filled with ice cubes and garnish with a strawberry slice.

- For the glaze: In a saucepan, over medium heat, add olive oil, and heat, then add onion, garlic and Europe's Best Country Strawberries and cook, stirring occasionally for 5-6 minutes, or until strawberries are just softened. Add vinegar, honey, salt and pepper and cook for 2 minutes. Purée in blender or food processor.
- For the Steak: In a small bowl, combine the mustard, garlic, pepper and salt. Rub over steak. Grill steak for 4-5 minutes pr side for medium-rare, or longer until desired doneness. Let stand for 5 minutes. Carve steak thinly, across the grain. Arrange on a serving platter. Spoon over sauce. Garnish with basil.
- Boneless rib steaks can be substituted for sirloin steaks.

- Rinse basil leaves squeeze excess water from them. This will "bruise" them which will allow the flavors to release when combined with the berries. Combine berries, lemon juice, sugar, basil leaves and water in a medium saucepan on medium-high heat. Once the mixture begins to boil, stir frequently and reduce heat to medium-low. Simmer for 5 minutes, remove from heat and place the pan in an icebath. Store in a glass container for use with icecream, sponge or pound cake or to liven up your lemonade.
