Cream of Wheat (Semolina) Porridge image

I have always loved eating semolina porridge since I was a child. This is my favorite recipe for making a delicious, creamy meal. Hope you enjoy!

2 cups milk
1 cup water
1 ½ teaspoons butter
¼ teaspoon salt
⅓ cup semolina flour
1 tablespoon white sugar

Steps:

  • Combine milk, water, butter, and salt in a saucepan over medium-high heat. Bring to a boil, stirring gently. Remove from heat. Pour in semolina flour in a steady stream, whisking constantly to prevent lumps.
  • Place saucepan back over medium heat; whisk until porridge comes to a boil, about 2 minutes. Reduce heat to low and cover; cook until porridge thickens, about 20 minutes. Remove saucepan from heat; stir in sugar.
  • Let porridge stand for 3 to 5 minutes before serving.

1 1/2 cups semolina
1/2 cup granulated sugar
1 dash salt
cinnamon, for sprinkling

Steps:

  • In a saucepan, heat the milk on medium heat until hot.
  • Add the semolina, sugar and dash of salt and stir well.
  • Stir the semolina every few minutes to avoid creating lumps. The semolina is ready when the cereal leaves a pattern on the top for several seconds when you are stirring it (approximately 10 minutes).
  • Spoon the semolina into 8 oz pyrex dishes then sprinkle the top with cinnamon. The cereal will continue to firm up as it cools.
  • Cover and refrigerate when cool.

I remember helping my dad make this quite often. We found it by accident in a church cookbook. I remember some friends asking for the recipe and then theirs never turned out the same so they would invite my dad and I over to help cook the biscuits.

1 (1/2 ounce) package active dry yeast
2 cups all-purpose flour
1 teaspoon salt
3 tablespoons granulated sugar
3/4 cup warm water (Not Hot)
1/4 cup melted oleo

Steps:

  • Dissolve yeast in water (let set 5 minutes).
  • Sift flour,add sugar and salt; mix well, slowly. Add yeast water and melted oleo, mixing well.
  • Let rise 30 minutes.
  • Knead out on floured cloth. Cut into biscuits. Bake 30 minutes at 425°F.

2 -3 eggs, beaten
1 tablespoon butter
2 teaspoons baking powder

Steps:

  • Heat 2 cups of the milk to boiling point.
  • Add the meal slowly, stirring until thick.
  • Remove from heat and slowly add to the beaten eggs.
  • Add the butter and remaining milk.
  • Sprinkle baking powder and salt on top and stir.
  • Bake in a greased casserole dish for 55 minutes at 350°F.
  • When done, it should still be soft enough in the center that you need to serve it with a spoon, but brown on the outside edges.
  • ENJOY!
