Semolina Muffins Recipe | Sooji Cupcakes image

Semolina Muffins is an ideal bake with Sooji or Fine Rava, It is made with healthy ingredients which is perfect for the kids or toodlers.

¼ cup + 2 tbsp Semolina / Sooji / Fine Rava
¼ cup + 2 tbsp Brown Sugar
¼ cup Curd - ¼ cup
Salt (a pinch)
¼ cup + 2 tbsp Milk
1 tsp Vanilla essence
1 tbsp Olive oil
¼ tsp Baking powder
¼ tsp Baking Soda
2 tbsp Nuts

Steps:

  • In a mixing bowl add in the Semolina, Brown sugar, and Curd.
  • Next add in the milk, Olive oil, and Salt.
  • Mix everything well with a whisk until everything is well combined and allow it to rest for 20 mins. Next, add in the vanilla essence and then add n the baking powder.
  • Next add the baking soda and then add in the chopped nuts. Mix well. Line a muffin tin with muffin liners.
  • Scoop in an equal amount of batter and fill the muffin liners to its 3/4th. Top the batter with some chopped nuts ,I used Pistachios. Preheat the oven at 180 Deg C for 10 mins and then bake it at 180 Deg for 25 mins. Allow it to cool completely and then store.

Number Of Ingredients 10

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup milk
⅓ cup vegetable oil
1 egg
¾ cup mini semi-sweet chocolate chips
3 tablespoons white sugar
2 tablespoons brown sugar

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
  • Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

1 cup yogurt
2 cups water
1 cup semolina (Rawa)
½ cup chickpea flour (Besan)
2 tsp oil
2 tsp salt
½ cup onions, finely chopped
1/3 cup carrots, grated
¼ cup green peas
1/3 cup bell pepper, finely chopped
2 tbsp crushed red pepper flakes
1 tbsp Italian seasoning
¼ tsp baking soda
Grated cheese as needed

Steps:

  • To a mixing bowl, add the yogurt and water. Whisk until smooth.
  • Add the semolina, chickpea flour and oil to the bowl.
  • Mix well with the yogurt mixture and let it stand for 15 minutes.
  • The batter should not be too thick or too thin. You should be able to coat a spoon evenly with it.
  • Add salt and the onions, carrots, bell pepper and green peas. Mix everything well together.
  • Add the crushed red pepper flakes, Italian seasoning and baking soda. Mix well.
  • Fill the Idlito silicone kitchen molds with the batter. Top with cheese.
  • Preheat the oven to 400 degrees F. Place the molds in the oven and bake it for 25 minutes.

1/2 cup packed brown sugar
1 cup milk
1 cup water
1 large egg
1 tsp vanilla extract
2 Tbsp canola oil

Steps:

  • Spray 12 cup muffin pan with cooking spray or line with muffin cups. Preheat oven to 375 F. Add the first four ingredients in a large bowl. In a medium bowl. Add the remaining ingredient into another bowl. Add the wet ingredients into the dry. The mixture will be watery, do not be bothered by this,the semoline will soak up the water as it cooks. Stir as you pour into the muffin pans as the semoline tend to settle in the bottom. Bake for 15 minutes or until a tooth pick comes out clean.
