Serve this help-yourself platter while you get on with the rest of supper. In summer, add a few sliced fresh figs

1 loaf sourdough bread
olive oil , for drizzling
18 slices serrano ham
200g best-quality feta cheese
40 black Greek olives , such as Kalamata
handful rocket leaves
1 tbsp good-quality honey

Steps:

  • The crostini should be made no more than 15 mins in advance. Slice the bread about ½in thick and brush on some olive oil. Heat a griddle pan and grill the bread in batches until the outsides are crisp and attractively marked by the grill, and the insides are still soft.
  • Drape the ham over the largest platter you have - don't lay it flat, allow it to billow slightly. Break the feta by hand into irregular chunks about the size of a walnut, then dot over the ham. Randomly place the olives on the ham and carefully place the rocket leaves across the platter. Just before your guests tuck in, carefully drizzle over a little olive oil followed by the honey. Put the crostini on a separate platter or in a bowl, and serve alongside the salad at the table.

12 slices French bread, sliced on the diagonal into 1/2-inch thick slices
Olive oil
12 thinly sliced pieces Serrano ham
12 thinly sliced pieces Manchego cheese
Whole grain mustard

Steps:

  • Preheat grill. Brush each slice of bread on one side with olive oil and grill, oil-side down until lightly golden brown. Turn over and divide cheese among bread slices. Top each slice of cheese with the slices of ham and grill until the cheese begins to melt. Serve with the mustard.

1 (1-pound) piece manchego cheese
1/2 pound thinly sliced serrano ham
Extra-virgin olive oil, for drizzling
Freshly ground black pepper

Steps:

  • Slice manchego into thin pieces, about the same size as the ham.
  • Cut both the serrano and manchego into desired sized pieces.
  • Alternating the serrano and manchego, arrange the slices attractively around the platter. Can be assembled up to this point a day ahead and refrigerated overnight. Bring to room temperature before serving.
  • Drizzle with extra-virgin olive oil and garnish with pepper, if desired.
  • Serve family style, giving each guest an appetizer plate and fork.

This is a fantastic weekend appetizer. This can be prepared up to two days ahead, covered, and refrigerated until ready to use, actually it tastes even better if prepared ahead of time. The recipe may be doubled if desired. Prep time includes baking the crostini.

1 loaf baguette-style French bread (unsliced)
4 ounces sun-dried tomatoes packed in oil
1/4 cup chopped kalamata olives or 1/4 cup ripe olives
1 -2 cloves fresh minced garlic (or to taste)
1 (3 ounce) package cream cheese, softened
4 ounces feta cheese, crumbled
2 tablespoons milk
shredded fresh basil (to garnish)

Steps:

  • To make crostini: partially freeze the unsliced bread loaf.
  • Cut into 40 (1-inch-thick) slices.
  • Arrange on a cookie sheets.
  • Drain the tomatoes, reserving oil.
  • Lightly brush one side of each slice with the reserved tomato oil or olive oil.
  • Bake in a 300 degree oven for 6 minutes; turn over the slices; bake for another 6 minutes more, or until golden brown.
  • Finely chop the drained tomatoes; stir in the olives and the minced garlic; set aside.
  • In a small bowl, beat the cream cheese until softened.
  • Beat in the feta cheese and milk until smooth.
  • Spread the feta/cream cheese mixture on top of the oiled side of the baked crostini.
  • Top with a small dollop of tomato mixture.
  • Garnish the crostini with shredded fresh basil.

24 slices baguette, 1/4 to 1/3 inch thick
2 medium ripe tomatoes, halved
Extra-virgin olive oil
24 slices (paper-thin) serrano ham
Very finely chopped flat-leaf parsley, for garnish

Steps:

  • Heat broiler. To make crostini: Arrange baguette slices on a baking sheet in a single layer. Broil for 1 1/2 minutes (the broiling time varies from oven to oven so watch carefully as bread darkens). Turn over slices, and toast until golden, about 1 minute more. Transfer to a rack to cool.
  • Rub crostini with tomato halves to infuse them with flavor and juices; discard tomatos. Drizzle crostini with olive oil. Top each crostini with a slice of ham. Brush with olive oil. Arrange on a serving platter, and sprinkle with parsley.

Steps:

  • In a small bowl, combine the first six ingredients; stir in mozzarella cheese and parsley. Cut baguette into 24 slices; place on an ungreased baking sheet. Spread with olive mixture., Broil 3-4 in. from the heat for 2-3 minutes or until edges are lightly browned and cheese is melted.
