COCONUT RICE
The rice in this dish is cooked in a mixture of both coconut milk and water which gives it that slightly sweet and nutty flavor. Coconut milk is also jam-packed with nutrients and can help to lower cholesterol.

Steps:
- Saute 2 tablespoons minced ginger in a saucepan with butter. Add 1 cup rinsed basmati rice, 1 cup coconut milk, 1 cup water and a pinch of salt. Bring to a boil, then reduce heat; cover and simmer until the liquid is absorbed, 15 minutes. Let stand 10 minutes off the heat; fluff with a fork. Garnish with cilantro and cashews.
COCONUT JASMINE RICE
This is one of my favorite rice recipes. It goes great with just about anything! Try a ginger chicken main dish with it!

- Stir coconut milk, water, sugar, and salt together in a saucepan over medium heat until sugar dissolves. Add rice; bring to a boil, cover the saucepan, reduce heat to low, and simmer until rice is tender and liquid is absorbed, 18 to 20 minutes.

SESAME COCONUT RICE
A moist, delicious rice dish made flavorful with the addition of Sambar powder, Indian seasoning for red lentils. The toasted sesame seeds add a tasty nuttiness to the dish. I used basmati rice for this, but jasmine works well, also and is more nutritious.

Steps:
- Cook rice and allow to cool.
- Roast sesame seeds over low heat until light brown in color.
- Coarsely grind peanuts and sesame seeds (I use a coffee grinder for spices).
- Heat ghee over medium-high heat.
- Add chana dal and mustard seeds.
- When they crackle, add chilis, curry leaves, hing, turmeric, and sambhar powder.
- Cook 1 minute.
- Add lemon and rice, sauté 2-3 minutes.
- Add salt, coconuts, and peanuts & sesame seeds.
- Stir well and serve hot.
- 1/2 cup water may be added to increase moisture in rice, to taste.

CHEESY COCONUT RICE

- Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- In a saucepan set on the direct heat side of the grill, melt the butter. Add the garlic, onions and a pinch of salt. Cook until the onions are slightly translucent, 2 to 3 minutes, then add the ginger and jalapeños. Cook, stirring occasionally, until the vegetables are softened and aromatic, another 2 minutes.
- Stir in the rice and continue to toast until very fragrant, about another 3 minutes. Add the chicken stock, coconut milk, shredded coconut and nutmeg, season with salt and pepper and bring to a boil. Stir, move the pot to the indirect heat side of the grill and cover with a lid.
- Close the grill and simmer until the rice is cooked through and the liquid has been absorbed, 15 to 18 minutes.
- Remove from the heat and fluff with a fork. Add the scallions, farmer's cheese and lime zest and, using a fork, gently fold in. Serve.
SPICED COCONUT RICE
A creamy, lightly spiced rice that is so easy to make. Top with some green onions or chives for color and serve next to chicken or lamb.

- Heat coconut oil in a medium saucepan over medium-high heat. Add onion and garlic and saute until onion turns clear, 1 to 2 minutes. Add rice, curry powder, cinnamon, nutmeg, and cayenne pepper and stir constantly for 1 minute.
- Add coconut milk, chicken broth, and toasted coconut; bring to a boil. Reduce heat, cover, and simmer until all liquid is absorbed, about 20 minutes.

- Rinse rice in several changes of cold water, until the water runs clear.
- Put rice in a saucepan and mix with coconut milk, salt and sugar. Bring to a simmer, cover and cook over low heat for 15 minutes. Stir, cover again and cook 7 minutes more. If rice is dry, sprinkle with 3 to 4 tablespoons water and cook 3 minutes more.

- Drain the rice and transfer it to a saucepan over medium-high heat. Add the coconut milk, water, salt, and toasted sesame oil. Bring to a boil, and then dial the heat back to a simmer, covered, for 35-45 minutes, until the liquids have been absorbed. Fluff with a fork and remove the pan from the heat. Let the rice sit, covered, for another 10 minutes.
- Sprinkle with the toasted sesame seeds, shower with lemon zest, drizzle with the sesame-chili oil, and fluff again with a fork. Drizzle with more chile oil if you like, and finish with lots of lemon zest.
