This sesame-orange beef and veggie stir-fry is a flavorful weeknight dinner that's sure to please the whole family.

- Remove 1 tablespoon zest and 1/4 cup juice from 1 orange. Peel and section remaining 2 oranges.
- Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
- Stir together zest, orange juice, broth, soy sauce, chili-garlic sauce, marmalade, sesame oil, and salt in a small bowl. Whisk in cornstarch.
- Coat a wok or large nonstick skillet with cooking spray. Heat over medium-high heat. Stir-fry beef until browned, 2 to 3 minutes. Transfer to a bowl. Add vegetable oil and carrot to the wok; stir-fry for 3 to 4 minutes. Add green onions and bell pepper; stir-fry for 2 to 3 minutes more. Add garlic and ginger; stir-fry for 30 seconds more.
- Return beef to the wok. Stir cornstarch mixture, then add to the wok. Cook, stirring, until thickened and bubbling. Add orange sections; cook, stirring, for 1 minute more.
- Divide rice among 4 plates; top with beef mixture and sprinkle with sesame seeds.

- Cut beef with the grain into 2-inch-wide strips. Cut each strip across the grain into 1/4-inch-thick slices. Combine the beef, cornstarch, 1½ tsp. soy sauce, and 1 tsp. sherry in a medium bowl; stir until the cornstarch is no longer visible. Add 1 tsp. oil and stir until the beef is lightly coated.
- Combine hoisin sauce, ketchup, chile-garlic sauce (or Sriracha) to taste, and the remaining 1½ tsp. soy sauce and 1 Tbsp. sherry in a small bowl. Set aside.
- Heat a 14-inch flat-bottomed carbon-steel wok (or a 12-inch stainless-steel skillet) over high heat until a drop of water vaporizes within 1 to 2 seconds of contact. Swirl in the remaining 1 Tbsp. oil. Add ginger and stir-fry until fragrant, about 10 seconds. Push the ginger to the sides of the pan and add the beef in an even layer. Cook, undisturbed, until the beef begins to brown, about 1 minute. Add onion and, using a metal spatula, stir-fry until the beef is lightly browned but not cooked through, 30 seconds to 1 minute more. Transfer the beef and onion mixture to a plate.
- Add green and red peppers and broth to the pan. Cover and cook over high heat until the peppers are bright green and red and almost all the liquid has been absorbed, about 1 minute. Return the beef and onion and any accumulated juices to the pan. Add the reserved sauce and stir-fry until the beef is just cooked through and the peppers are tender-crisp, 30 seconds to 1 minute. Remove the ginger, if desired.

ORANGE BEEF
A classic from Hunan, chun pei ngau yuk translates as "old beef," very old, or as we say in China, so old it gathers dust. The main reason for this is that this dish is most often cooked with old, dried, hard orange peel, and it is fine that way. I prefer fresh orange peel.

- Marinate the beef with baking soda in the refrigerator for 8 hours or, preferably, overnight. After marinating, wash thoroughly, twice, with cold water. Drain and dry with paper towels. Place the beef in a bowl, add the egg white, and mix well until the beef is coated. Add the wine, white pepper, 1 tablespoon peanut oil, and cornstarch, mixing with your hand each time and ingredient is added. Allow to rest for 1 hour, refrigerated. There should be no residue.
- In a bowl, combine the sauce ingredients and set aside.
- Heat a wok over high heat for 1 minute. Add the 3 1/2 cups peanut oil and heat to 400 degrees F. Place the beef strips, one at a time, in the oil and cook for 1 1/2 minutes, loosening the beef with a spatula. Remove with a strainer and drain. Heat the oil again to 425 degrees F. Place the beef strips again in the oil and cook for 2 minutes, until the beef becomes crisp. Remove and allow to drain.
- Drain off all but 1 tablespoon oil from the wok and heat over high heat for 20 seconds. Add the dried chilies, stir, and cook until darkened. Add the ginger and garlic and stir briefly. Add the fresh chili and orange peel and stir briefly. Add the scallions, and mix well. Add the beef and cook, stirring, for 45 seconds. Make a well in the center of the mixture, stir the sauce mixture, and pour in. Mix well until the sauce is absorbed and the beef acquires a shiny coating. Remove to a serving dish and serve, garnished with the orange slices.
SESAME BEEF
Strips of round steak and chopped scallions are marinated with soy sauce and garlic, then quickly stir fried with sesame seeds. Add a little sesame oil to the marinade if you like that flavor. Serve with rice.

- Place beef in a ziploc bag. Combine orange juice, soy sauce, ginger, garlic powder and cayenne pepper. Reserve half of the marinade; pour remaining marinade over steak. Marinate in refrigerator for 15 minutes.
- While meat is marinating, toast sesame seeds in a dry skillet over medium-high heat, stirring frequently, until seeds are golden-brown and fragrant. Pour seeds out of the hot pan to avoid overtoasting. Set aside.
- Heat oil in a large skillet over high heat. Add beef and 3 teaspoons toasted sesame seeds; saute about 3 minutes or until beef is browned. Remove from skillet; keep warm. Add vegetables to skillet; cook, stirring, until crisp-tender, about 3 to 5 minutes.
- Combine reserved marinade with cornstarch and sugar. Add to skillet; bring to a boil. Return beef to skillet. Stir and heat through. Top with remaining 1 teaspoon toasted sesame seeds. Serve over rice, if desired.

- In a large bowl (or ziplock bag) add beef slices and cornstarch and mix to thoroughly coat beef. Set aside.
- Wash orange thoroughly. Use a microplane or grater to zest about 2 tsp orange zest. (Alternatively use a vegetable peeler to cut a large strip of orange peel and use a pairing knife to cut strip into very thin slices). Set zest aside.
- Cut orange in half and squeeze juice into a cup (you’ll need ¼ cup orange juice total). In a medium bowl mix ¼ cup orange juice, soy sauce, rice vinegar, brown sugar, ginger, garlic and red pepper flakes. Whisk to combine.
- Add sesame oil to a large skillet over medium-high heat. Once oil is hot, add beef strips making sure to leave space around each strip (so beef browns and doesn’t “steam”). Allow beef to cook for approx. 2 minutes untouched. Flip beef over (with tongs) and allow to cook an additional 2 minutes. It may be necessary to work in batches if skillet is not large enough to cook all of the beef strips at one time.
