1 - ounce dried morels, soaked for 30 minutes in 3 cups very hot water
6 boneless, skinless chicken breasts
Kosher salt
Freshly ground black pepper
All-purpose flour, for dredging
1 ¿4 cup clarified butter
1 ¿3 cup chopped shallots (2 large)
1 tablespoon minced garlic (3 cloves)
1 cup Madeira wine
1 cup (8 ounces) creme fraiche
1 cup heavy cream
2 tablespoons freshly squeezed lemon juice

Steps:

  • Preheat the oven to 375 degrees F.
  • Lift the morels carefully from the hot water in order to leave any grit behind in the liquid. Rinse a few times to be sure all the grittiness is gone. Discard the liquid and dry the morels lightly with paper towels. Set aside.
  • Sprinkle the chicken breasts with salt and pepper. Dredge them in flour and shake off the excess. Heat half the clarified butter in a large saute pan and cook the chicken in 2 batches over medium-low heat until browned on both sides, 8 to 10 minutes. Remove to an ovenproof casserole.
  • Add the rest of the clarified butter to the pan along with the shallots, drained morels, and garlic. Saute over medium heat for 2 minutes, tossing and stirring constantly. Pour the Madeira into the pan and reduce the liquid by half over high heat, 2 to 4 minutes. Add the creme fraiche, cream, lemon juice, 1 teaspoon salt, and 3¿4 teaspoon pepper. Boil until the mixture starts to thicken, 5 to 10 minutes. Pour the sauce over the chicken and bake for 12 minutes, or until the chicken is heated through. To make ahead, refrigerate the chicken and sauce in the casserole and reheat slowly on top of the stove.

Morels, edible wild mushrooms that are prized for their smoky, nutty flavor, will need thorough washing, since they are riddled with nooks and crannies. The wild variety is usually available from April through June. Cultivated morels, on the other hand, are available throughout the year.

1/4 cup Chicken Stock to Make 1 1/2 Quarts, or low-sodium canned
1 tablespoon white wine
Kosher salt and freshly ground black pepper

Steps:

  • Melt the butter in a large pan over medium heat. Add the garlic and cook until soft and golden.
  • Add the morels and cook, stirring, until they begin to exude their juices, about 2 to 3 minutes.
  • Add the stock and wine and cook 2 minutes more until heated through. Season with salt and pepper and serve.

1 4-pound free-range organic chicken, backbone removed, cut into 8 pieces

1/2 cup minced shallots
1 pound fresh morel mushrooms
1 cup dry white wine
1 cup low-salt chicken stock
1/2 cup heavy whipping cream

Steps:

  • Melt 2 tablespoons chicken fat in a large heavy skillet over medium-high heat. Season chicken generously with salt and pepper. Add chicken to skillet and cook, turning once, until golden brown, about 6 minutes per side. Transfer chicken to a plate. Reduce heat to medium. Add remaining chicken fat to skillet. Add shallots and sauté until soft, about 2 minutes. Add mushrooms and sauté until they begin to release liquid, about 1 minute. Using a slotted spoon, transfer mushrooms to a plate. Add wine to skillet and boil until reduced by half, about 2 minutes. Add stock; bring to a boil. Return chicken to skillet, cover with lid slightly ajar, reduce heat to medium-low, and simmer until chicken is cooked through, about 20 minutes.
  • Transfer chicken to a platter. Return mushrooms to skillet; add cream. Simmer, uncovered, until sauce thickens slightly, about 5 minutes. Season to taste with salt and pepper. Pour sauce over chicken and serve.

1 teaspoon porcini powder

2 tablespoons extra-virgin olive oil, divided

1 garlic clove, minced
Pinch of minced fresh rosemary
1/2 cup low-salt chicken broth
1 tablespoon Marsala
2 tablespoons truffle butter
1 tablespoon unsalted butter

Steps:

  • Season chicken with porcini powder, salt, and pepper. Heat 1 tablespoon oil in a medium nonstick skillet over medium heat. Sauté chicken until golden and almost cooked through, about 3 minutes. Transfer to a plate.
  • Heat remaining 1 tablespoon oil in same skillet; add mushrooms, beans, garlic, and rosemary and cook, stirring frequently, until mushrooms are golden brown. Stir in chicken broth, Marsala, and chicken strips; simmer until reduced by half, 3-4 minutes. Stir in truffle butter and unsalted butter.
  • Serve chicken and sauce over orzo or steamed rice.

1 cup dried morels, about 1 1/4 ounces
8 skinless, boneless halved chicken breasts, about 1/4 pound each
Salt to taste if desired
Freshly ground pepper to taste
4 tablespoons butter
3 tablespoons finely chopped shallots
1/2 cup dry white wine
1/2 cup heavy cream
1/3 cup rich chicken broth

Steps:

  • Put morels in mixing bowl and add warm water to cover. Let stand 30 minutes or longer. Drain.
  • Put each chicken breast half on flat surface, trim off all remnants of fat and sprinkle with salt and pepper.
  • Heat 1 tablespoon of butter in small heavy skillet and add 1 tablespoon of shallots. Cook, stirring, until wilted. Add drained morels, salt and pepper. Cook, stirring, about 1 minute and add 1/2 of wine. Cook until liquid is reduced by half. Add cream and cook 2 minutes.
  • Heat 2 tablespoons of butter in skillet large enough to hold chicken in one layer. Add chicken pieces and cook over moderately high heat. As chicken pieces cook, stir gently without turning about 3 minutes or until nicely browned. Turn and continue cooking about 5 minutes.
  • Transfer chicken to warm serving dish, arranging neatly. Add remaining shallots to skillet and stir briefly. Add remaining wine and stir to dissolve brown particles that cling to bottom of pan. Cook down until not quite evaporated. Add chicken broth and cook 1 minute.
  • Heat morels in cream and spoon around chicken.
  • Swirl remaining tablespoon of butter into sauce with chicken broth and spoon over chicken pieces.

3/4 cup chicken broth
1 ounce dried wild mushrooms, thoroughly rinsed under running water,and drained (such as cepes, morels, etc, all one kind or a mix)
1/2 lb fresh cultivated mushroom, wiped clean with damp paper towel (button)
5 tablespoons unsalted butter
1/4 cup finely-chopped shallot (or 3 green onions, finely-chopped, plus 1 T minced garlic)
salt and pepper, to taste
1/3 cup medium port wine
1/3 cup heavy cream
6 boneless skinless chicken breast halves

Steps:

  • In a small saucepan, bring broth to a boil; pour over the wild mushrooms in a small bowl and let stand for about 2 hours.
  • Thinly slice cleaned mushroom caps, discarding stems.
  • In a skillet over medium to medium-to-low heat, melt butter and gently saute shallots or onion/garlic mixture for about 5 minutes (do not brown).
  • Drain liquid from wild mushrooms and reserve.
  • Finely chop the wild mushrooms and add them and the fresh mushrooms to the skillet with the shallots (or onion/garlic mixture) and saute over medium heat, stirring occasionally, for about 7- 10 minutes.
  • Preheat oven to 325 degrees Fahrenheit.
  • Add the reserved mushroom liquid, Port, and cream to the skillet and simmer for about 5 minutes, or until slightly thickened.
  • Pour mushroom mixture into a shallow baking dish and arrange chicken breast halves in a single layer on top of the mushrooms.
  • Sprinkle chicken with salt and pepper and cover the dish tightly with aluminum foil.
  • Bake in the middle level of the oven for about 25- 30 minutes, until chicken is done.
