This spicy Asian sausage and noodle salad is equally good for lunch or a potluck. -Denese Johnson, Chico, Texas

3 packages (3 ounces each) shrimp ramen noodles
6 cups hot water
1 pound bulk spicy pork sausage
3/4 cup Asian toasted sesame salad dressing
3/4 cup sliced green onions (about 6 medium), divided
1/2 cup chopped fresh cilantro
1/2 teaspoon grated lime zest
3 tablespoons lime juice
3 cups fresh snow peas, halved diagonally (about 8 ounces)
1-1/2 cups julienned carrots
4 tablespoons chopped dry roasted peanuts, divided

Steps:

  • Break ramen noodles into quarters and place in a large bowl; reserve one seasoning packet. Cover noodles with hot water; let stand until softened, about 5 minutes., Drain noodles; rinse with cold water. Drain well and return to bowl., In a large skillet, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes. Drain on paper towels., Mix salad dressing, 1/2 cup green onions, cilantro, lime zest, lime juice and contents of reserved seasoning packet; add to noodles. Toss with snow peas, carrots, 3 tablespoons peanuts and sausage. Sprinkle with the remaining green onions and peanuts.

¼ cup soy sauce
¼ cup rice wine vinegar
½ cup water
3 Tbs. toasted sesame oil
1 Tbs. honey
1 Tbs. minced fresh ginger
2 pkgs. ramen noodles (, flavor packets reserved for another use)
3 cups cole slaw mix
1 cup sliced radishes
¼ cup sliced scallions
¼ cup cilantro leaves

Steps:

  • Whisk soy sauce, vinegar, water, sesame oil, honey and minced ginger together until blended.
  • Combine dressing and uncooked ramen noodles and toss to coat. Let stand until ramen have begun to soften and absorb most of the dressing, at least 1 hour, stirring occasionally.
  • Toss softened noodles, cole slaw mix, radishes, scallion and cilantro.
  • Serve immediately or refrigerate until ready to serve.

2 (3 ounce) packages chicken-flavored ramen noodles, broken into pieces, seasoning packets reserved
½ cup raw sunflower seeds
½ cup slivered almonds
1 (16 ounce) package coleslaw mix
3 green onions, chopped
½ cup olive oil
3 tablespoons white vinegar
1 tablespoon white sugar
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread ramen noodles, sunflower seeds, and almonds onto a baking sheet.
  • Bake noodles, sunflower seeds, and almonds in the preheated oven until fragrant and toasted, 10 to 15 minutes. Cool to room temperature.
  • Combine coleslaw mix and green onions in a large bowl. Pour cooled noodle mixture over the top.
  • Whisk olive oil, reserved ramen seasoning packets, vinegar, sugar, and black pepper together in a bowl until dressing is smooth. Pour dressing over coleslaw and toss to coat.

1 (3 ounce) package chicken-flavored ramen noodles, reserve seasoning packet for dressing
1/2 bunch green onion, chopped
1/2 cup chopped celery
1 (2 ounce) package slivered almonds or 1/2 cup peanuts
1/2 cup oil
1/3 cup rice vinegar
2 tablespoons sugar

Steps:

  • Mix all salad ingredients except noodles in a large bowl.
  • Mix the dressing ingredients thoroughly.
  • Break up the (uncooked) noodles into chunks and add last.

1 teaspoon pepper

1/2 head green cabbage (finely grated or sliced)
1/2 head purple cabbage (finely grated or sliced)
3 green onions, sliced

1 tablespoon plus 1/2 cup olive oil, divided
1/2 cup slivered almonds
1/2 cup sunflower kernels
2 packages (14 ounces each) coleslaw mix
12 green onions, chopped (about 1-1/2 cups)
1 medium sweet red pepper, chopped
1/3 cup cider vinegar
1/4 cup sugar
1/8 teaspoon pepper
2 packages (3 ounces each) chicken ramen noodles

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium heat. Add almonds and sunflower kernels; cook until toasted, about 4 minutes. Cool., In a large bowl, combine coleslaw mix, onions and red pepper. In a small bowl, whisk vinegar, sugar, pepper, contents of ramen seasoning packets and remaining oil. 80g pack instant noodles (look for an Asian brand with a flavour like sesame)
2 spring onions , finely chopped
½ head pak choi
1 egg
1 tsp sesame seeds
chilli sauce , to serve

Steps:

  • Cook the noodles with the sachet of flavouring provided (or use stock instead of the sachet, if you have it). Add the spring onions and pak choi for the final min.
  • Meanwhile, simmer the egg for 6 mins from boiling, run it under cold water to stop it cooking, then peel it. Toast the sesame seeds in a frying pan.
  • Tip the noodles and greens into a deep bowl, halve the boiled egg and place on top. Sprinkle with sesame seeds, then drizzle with the sauce or sesame oil provided with the noodles, and chilli sauce, if using.
