SESAME SHRIMP NOODLES

Sesame Shrimp Noodles image

I found this recipe in a Cooking Light magazine. The original recipe called for you to bake this dish, but I like it just as is. Very flavorful and everyone raved over it. I have made this quite a few times now, and it keeps getting better and better because I know how spicy or salty to make it. This is a dish that you can fine tune and add to it whatever you want. (peanuts, water chestnuts, broccoli, etc.)

Provided by ArtofAimee

Categories     Asian

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 16

8 ounces uncooked spaghetti or 8 ounces linguine, broken in half
1 lb shrimp or 6 chicken thighs
1 tablespoon dark sesame oil
1 red bell pepper, sliced
1 orange bell pepper
8 ounces mushrooms, slice (or 16 ounces)
3 garlic cloves, minced
1/4 cup low sodium soy sauce
1 cup reduced-sodium fat-free chicken broth
1 tablespoon cornstarch
2 tablespoons sherry wine
1 tablespoon rice vinegar
1 teaspoon crushed red pepper flakes (we used around 1-1 1/2 tablespoons)
3/4 cup sliced green onion
2 tablespoons sesame seeds
all purpose seasoning (for your shrimp)

Steps:

  • Cook pasta.
  • While pasta cooks, in a skillet (deep enough to hold liquid and pasta later on) put a little olive oil and throw in your bell peppers and mushrooms. Cook this down to your liking, and set them aside on a plate.
  • Add some more olive oil to your skillet and throw your shrimp and garlic inches Season your shrimp how you like them, I like to add a little Tony's Chachere's creole seasoning but you can do a basic all purpose seasoning on them. After cooked, set this aside.
  • In the same pan add the soy sauce, broth, red peppers, mushrooms, cornstarch (make sure you mix the cornstarch and sherry together with a fork in a separate bowl before adding) Keep stirring till mixture starts to thicken and bubble. I added an extra half tablespoon because I wanted my sauce a little thicker. Keep stirring constantly to make sure it doesn't burn.
  • Once thickened add vinegar and crushed red pepper.
  • Take off heat, add pasta, shrimp, sesame seeds. Toss well to combine all ingredients.

SESAME SHRIMP AND NOODLES

Sesame Shrimp and Noodles image

Traditional sesame shrimp are usually deep-fried; these are broiled with vegetables and tossed with pasta. Put the water on to boil before you prepare all the ingredients, then cook the shrimp and vegetables at the same time as the pasta.

PEANUT SAUCE OVER SHRIMP SKEWERS AND RICE NOODLES

Peanut Sauce Over Shrimp Skewers and Rice Noodles image

Inspired by the flavors of Southeast Asia, GZ makes his take on Vietnamese bun with rice vermicelli, grilled soy-lime shrimp and julienned carrots and daikon. In place of the usual tangy fish sauce dressing, he tops the noodle bowl with a richer peanut sauce. Store-bought peanut butter is a shortcut for the traditional whole roasted peanuts and palm sugar in the satay-style sauce. To add a fragrant citrus note, he adds a dab of lemongrass paste from the tube. This versatile sauce pairs well with chicken and pork, as well as shrimp, and is delicious mixed into the noodles.

Provided by Geoffrey Zakarian

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 24

1/2 cup coconut milk
3 tablespoons peanut butter
2 tablespoons sweet chile sauce
2 tablespoons lime juice
2 tablespoons rice vinegar
1 teaspoon lemongrass paste
1 1/2 teaspoons fish sauce
1/4 teaspoon freshly ground black pepper
Kosher salt
12 (U-10) shrimp, peeled and deveined, tails on
Kosher salt and freshly ground black pepper
2 teaspoons soy sauce
Zest and juice of 1 lime
Extra-virgin olive oil, as needed
8 ounces rice vermicelli, cooked
1 tablespoon sesame oil
2 teaspoons black sesame seeds, plus additional for garnish
2 teaspoons white sesame seeds, plus additional for garnish
1 cup julienned carrots
1 cup fresh cilantro leaves
1 cup seeded and diced, unpeeled English cucumber
1 cup julienned daikon
1/2 cup thinly sliced scallions
Lime wedges, for serving

Steps:

  • To make the sauce: Combine the coconut milk, peanut butter, chile sauce, lime juice, vinegar, lemongrass paste, fish sauce and black pepper. Season with a pinch of salt. Add water to thin as needed. Whisk to combine and set aside.
  • For the noodles: Heat a griddle pan on medium-high heat or preheat a broiler to high. Skewer 3 shrimp with two parallel skewers to make 4 skewers with 3 shrimp each. Sprinkle the shrimp with salt and pepper. In a small bowl, combine the soy with the lime juice and zest; reserve half in a separate small bowl. Brush or drizzle one of the portions of soy-lime over the shrimp. Cook on the griddle until lightly browned, about 3 minutes per side. Brush the shrimp with the remaining soy-lime. Add a touch of olive oil to the shrimp after flipping to avoid sticking.
  • Toss the noodles in a bowl with the sesame oil and the black and white sesame seeds. Arrange the rice noodles at the bottom of a serving bowl. Drizzle some of the peanut sauce on top. Top with the carrots, cilantro, cucumbers, daikon and scallions. Add the shrimp skewers to the bowl. Serve warm with a lime wedge and extra peanut sauce on the side.

SESAME THAI NOODLES WITH SHRIMP

Sesame Thai Noodles With Shrimp image

This is a great Thai flavor, although it may not be traditional, but to me it still adds all the same flavors of the lime, garlic, and heat from the red pepper. This is NOT a saucy dish but lighter in calories... but still has tons of flavor. If you don't want to use shrimp for this you could easily substitute chicken. The sesame noodles to me are key, it really makes the difference, but you could use vermicelli or spaghetti if need be. I found my sesame noodles right in my local grocer.

Provided by SarasotaCook

Categories     Spaghetti

Time 50m

Yield 4 Hearty Portions, 4 serving(s)

Number Of Ingredients 19

10 ounces sesame noodles (try to get sesame noodles if possible, they really make the dish)
2 cups shrimp (I used large, peeled and tails off)
1 tablespoon olive oil
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 teaspoon lime juice
1 red pepper, cut in thin strips
1/2 cup grated radish, as a garnish
1 teaspoon olive oil
1 1/2 cups cilantro, chopped fine
3/4 cup chicken broth
4 tablespoons lime juice (use fresh)
4 tablespoons soy sauce
2 tablespoons fresh ginger
4 teaspoons sugar
2 teaspoons sesame oil, dark
2 teaspoons vegetable oil
1 teaspoon red pepper flakes
2 tablespoons garlic

Steps:

  • Shrimp -- In a large baggie, mix the olive oil, salt, pepper, lime juice and shrimp and marinate for about 1-2 hours, no more.
  • Sauce -- To a food processor, add all the ingredients and puree until well blended. This can also be done in a blender. Just set to the side.
  • Pasta -- make the pasta according to directions. Use plenty of salt in the water and boil the pasta. Once done, drain well, return to the pot to dry out slightly not over heat and just cover on the side to keep warm.
  • Shrimp -- as the pasta cooks, cook the shrimp. A medium saute pan on medium heat add the olive oil and then cook the shrimp 1-2 minutes per side until pink and the shrimp begin to curl. It doesn't take long.
  • Salad -- Add the cooked shrimp to the pasta, and then the sauce. Toss well and garnish with the fresh radishes and maybe sound ground black pepper.
  • A light version of Thai flavors without all the calories. Enjoy!

SPICY SESAME SHRIMP & NOODLE SALAD

Spicy Sesame Shrimp & Noodle Salad image

One of our favorite Korean dishes has always been a Korean Cold Sesame Noodles that my Mom made for us. It was supposed to be served at room temperature, but I like it warm. The shrimp-noodle salad recipe was a result of memories of my Mom's Korean background, and my love of fresh vegetables, packed full of flavor. The gochujang (hot chili paste) is a more savory kind of heat, that really blends beautifully with sesame, soy sauce and garlic. -Karen Bowlden, Boise, Idaho
