A garlicky spiced brine lends depth to these pickled carrot slices, and a final sprinkling of fresh dill adds spark.

1/2 cup white wine vinegar
1/2 cup sugar
1 tablespoon salt
4 cloves
1 bay leaf
1/2 teaspoon caraway seed
1/2 teaspoon coriander seed
6 garlic cloves, sliced
6 small dried red hot peppers
1 pound medium carrots, peeled, in 1/4-inch diagonal slices
2 tablespoons freshly snipped dill, for garnish

Steps:

  • In stainless steel pot, make brine: combine vinegar, sugar, salt, cloves, bay leaf, caraway, coriander, garlic and hot peppers. Add 2 cups water and bring to a boil.
  • Reduce heat to a brisk simmer and add carrots. Cook for 3 to 4 minutes, until still quite firm. Remove carrots and spread out to cool on platter or baking sheet. Let brine come to room temperature. Put carrots in glass or plastic container, and pour brine over them. Let marinate several hours, refrigerated. May be prepared ahead and refrigerated for up to 4 days. Serve sprinkled with fresh dill.

2 pounds carrots, cut lengthwise into 1/4-in.-thick strips
1-1/2 cups sugar
1-1/2 cups water
1-1/2 cups cider vinegar
1/4 cup mustard seed
3 cinnamon sticks (3 inches)
3 whole cloves

Steps:

  • Place carrots in a large saucepan; add enough water to cover. Bring to a boil. Cook, covered, until crisp-tender, 3-5 minutes. Drain. Transfer to a large bowl. In another large saucepan, combine remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Pour mixture over carrots. Refrigerate, covered, overnight to allow flavors to blend., Transfer mixture to jars. Cover and refrigerate up to 1 month.

2 pounds yellow carrots, peeled and tops trimmed to 1 inch (cut in half lengthwise if large)
4 cups white vinegar
12 garlic cloves, peeled
2/3 cup salt
1/4 cup sugar
8 green cardamom pods
6 bay leaves
2 chiles de arbol
1 tablespoon coriander seeds
5 thyme sprigs

Steps:

  • Cook carrots in a large pot of boiling water until fork-tender, about 10 minutes. Drain, and transfer to a large bowl. Bring vinegar, garlic, salt, sugar, cardamom pods, bay leaves, chiles, coriander seeds, thyme, and 8 cups water to a boil. Reduce heat, and simmer until sugar and salt are dissolved. Pour over carrots. Cover, and refrigerate for 3 days.

1/4 cup olive oil
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon dried basil
1/8 teaspoon pepper
1 1/2 tablespoons vinegar (any kind)
1/2 garlic clove, crushed
1 tablespoon minced onions or 1 tablespoon chives
1 tablespoon chopped green onion
1 tablespoon lemon juice

Steps:

  • Cut carrots into strips.
  • Cook in 1 inch of boiling water with 2 teaspoons salt until crisp-tender (about 10 minutes).
  • Drain Well.
  • COmbine remaining ingredients.
  • Pour over carrots and refrigerate at least 1 hour or over night.
  • Serve cold.

3 dried chiles de arból
1/2 cup apple cider vinegar

Steps:

  • Cook carrots in a pot of boiling salted water until crisp-tender, 2 to 3 minutes; drain and place in a heatproof shallow container.
  • In a small saucepan, combine shallot, chiles, apple-cider vinegar, 1/4 cup water, sugar, cumin, and salt. Bring to a boil, stirring until sugar and salt have dissolved.
  • Pour brine over carrots to cover. Let cool completely, then cover and refrigerate at least 4 hours and up to 5 days. Remove from brine to serve.
