1 pound ground beef
1 cup salsa
½ cup chopped onion
½ cup mayonnaise
2 tablespoons chili powder
1 teaspoon ground cumin
2 cups crushed tortilla chips, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Layer about half of each of the Cheddar and Monterey Jack cheeses over the tortilla chip layer. Repeat layers with remaining ingredients, ending with Monterey Jack cheese. Cover dish with aluminum foil.
Bake in preheated oven until the cheese is melted in the middle, about 30 minutes.

This is my mother-in-law's recipe, and one of my husband's favorite meals! It is a warm and delicious comfort food casserole. Note: Using the blue package of Herb Seasoned Pepperidge Farm stuffing is a MUST! It sets up the whole flavor of the meal. If you are trying to clear out the cupboard or are unable to get the blue package, then you'll need to use two of the standard sized boxes (8 oz.) of stuffing, preferably herb seasoned.

Ingredients

1 (16 ounce) package Pepperidge Farm stuffing (herb seasoned-blue package, see note above)
1/2-1 cup butter
2 (10 3/4 ounce) cans cream soup (celery, mushroom, chicken)
1 (5 ounce) can evaporated milk
1/2 small onion, chopped
4 cups cooked chicken, chopped (rotisserie chicken works great!)
1 (15 ounce) can sweet peas or 2 cups frozen peas

Steps:

Preheat oven to 350 degrees F.
In large pot, melt butter over medium-high heat.
Add dry stuffing, stir to coat evenly with butter.
Layer 1/2 stuffing on bottom of an ungreased 9 x 13 baking dish.
In large bowl, combine evaporated milk, cream soups, and onion.
Gently fold in peas and chicken.
Pour chicken/soup mixture over stuffing in baking dish.
Top with remaining stuffing.
Bake for 45 minutes, or until bubbling in the middle.
Serve and enjoy!

2-1/2 pounds ground beef
2 envelopes taco seasoning
2/3 cup water
1 can (16 ounces) kidney beans, rinsed and drained
1 cup shredded Monterey Jack or pepper jack cheese
2 large eggs, lightly beaten
1 cup 2% milk
1-1/2 cups biscuit/baking mix
1 cup sour cream
1 cup shredded cheddar cheese
2 cups shredded lettuce
1 medium tomato, diced
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat and simmer for 5 minutes. Stir in beans., Spoon meat mixture into a greased 8-in. square baking dish. Sprinkle with Monterey Jack cheese. In a large bowl, combine the eggs, milk and biscuit mix until moistened. Pour over cheese. , Bake, uncovered, at 400° for 20-25 minutes or until lightly browned and a knife inserted in the center comes out clean. Spread with sour cream. Top with cheddar cheese, lettuce, tomato and olives.

2 cloves garlic, finely chopped
1 cup water
½ cup ORTEGA® Thick & Smooth Taco Sauce
1 (4 ounce) can ORTEGA® Diced Green Chiles
1 (2.25 ounce) can sliced ripe olives, drained, divided
1 (1.25 ounce) package ORTEGA® Taco Seasoning mix
1 package (12) ORTEGA® Taco Shells, broken, divided
2 cups SARGENTO® ChefStyle Shredded Mild Cheddar Cheese, divided
Chopped tomatoes (optional)
Sliced green onions (optional)

Steps:

PREHEAT oven to 375 degrees F.
COOK beef, onion and garlic until beef is browned; drain. Stir in water, taco sauce, chiles, 1/4 cup olives and seasoning mix. Cook over low heat for 3 to 4 minutes.
LAYER half of broken shells on bottom of greased 12 x 8-inch baking dish. Cover with half of meat sauce; sprinkle with 1 cup cheese. Repeat with remaining taco shells, meat sauce and cheese. Bake for 20 to 25 minutes or until bubbly and cheese is melted. Top with remaining olives, tomatoes and green onions.
