- Pre-heat oven to 350°F (180°C). Heat the oil in a large skillet, then cook beef over medium high heat for 7-10 minutes. Add the onion, carrot and garlic, stir and cook for another 5 minutes. Add the Worcestershire sauce, tomato paste and herbs, cook for 2 minutes more, stirring constantly. Pour in the wine and broth; reduce at a simmer until reduced to a scant 1/2 cup (125 mL) liquid in the pan. Stir in the peas.
- Meanwhile, prepare both bags of mashed potatoes according to package instructions.
- Spoon the beef mixture into a 9 x 13 (3 L) casserole dish. Spread the mashed potatoes on top of the beef mixture with a spatula, starting from the outside and working in. Rough up the mashed potatoes with a fork and sprinkle with the Parmesan cheese.
- Bake until bubbling and golden, about 20 minutes. Let cool slightly before serving.

- Preheat oven to 375 degrees F. Brown meat in large skillet. Meanwhile, mix potatoes, cream cheese, 1/2 cup of the shredded cheese and the garlic until well blended.
- Drain meat. Return to skillet; stir in vegetables and gravy. Spoon into 9-inch square baking dish; cover with potato mixture and remaining 1/2 cup shredded cheese.

ZIPPY SHEPHERD'S PIE
Gather the family round with this quick and easy shepherd's pie recipe. The meat mixture can be made ahead and frozen. You can also substitute instant potatoes for the real thing if you're in a hurry. I especially love to use white cheddar in this recipe!

Steps:
- Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes; drain, and return to pan.
- While potatoes are boiling, heat oil in a large skillet. Cook ground beef with onion, red pepper, and garlic until beef is evenly brown. Stir in beef broth, ketchup, soy sauce, Worcestershire sauce, and curry powder. Bring to a boil, and simmer 3 to 4 minutes. Mix cornstarch with a little water to form a paste, then stir into skillet with tomatoes, peas and carrots. Cook until thickened; season with salt and pepper. Spoon into a casserole dish.
- Preheat oven on broiler setting. Add milk and butter to cooked potatoes, and whip until smooth and creamy. Spoon over meat mixture. Sprinkle top with shredded cheese.
- Place under broiler for 3 to 5 minutes, or until cheese is melted and speckled with brown.

SHEPHERD'S PIE FOR LARGE GROUPS
Steps:
- Boil the potatoes. Boil the corn. Then chop up the onion. Add hamburger and onion in a pan and cook on medium heat until hamburger is done. Then add the seasonings to your liking. Then add the cream of chicken soup and the milk and let simmer for 5 minutes, on the lowest setting on your stove.
- While your mixture is simmering mash your potatoes and add butter, milk, and cream cheese. Add as much butter and milk as you prefer, more butter and milk makes your potatoes creamier. Add a teaspoon of all the seasonings to the potatoes. Drain corn.
- Place meat at the bottom of the 13 by 9 pan. Then spread the corn over the meat, evenly. Then add a thin layer of cheddar cheese over the corn. Then spread the potatoes over the corn making the layer thick so you don't disturb the corn, you will probably have left over potatoes. Now add another layer of cheddar cheese, thickness all depends on how cheesy you like it!
- Now bake for 30 minutes on 350 degrees F. And enjoy your shepherd's pie!

SHEPHERD PIE FOR A CROWD
This is a new recipe I've come up with using what I like from several other recipes. I serve 12 routinely and usually 3-4 extra, especially with a salad. I have this when I have leftover mashed potatoes. You can also use high quality dried mashed or frozen bags. I use french cut or small frozen green beans. Use whatever vegies your family likes.

Steps:
- In a dutch oven,lightly brown hamburger until grease is released. Drain.
- Return it to pot.
- Add onion and garlic and saute with hamburger until onions soften.
- Add spices, tomato sauce, paste, wine and Worcestershire sauce.
- Simmer for 15- 20 minutes.
- Pour into large lasagna pan.
- Sprinkle with frozen green beans.
- cover with mashed potatoes that have been thinned with milk enough to spread easily.
- Sprinkle with cheddar cheese.
- Bake 45 minutes at 350.
- If you like, turn on broiler for 5 minutes until cheese gets brown and crunchy.
- (Watch closely -- some of my kids don't like this.).

ROUND 2 RECIPE - SHEPHERDS PIE
Steps:
- Preheat the oven to 350 degrees F.
- Bring a large pot of salted water to a boil over medium heat. Add the potatoes, reduce the heat and simmer until the potatoes are cooked through and tender. Drain, return to pot and mash with a potato masher.
- In a small pot over low heat, add the butter and milk and heat until hot. Mix the butter and milk mixture to the mashed potatoes and season with salt and pepper, to taste. (For very creamy potatoes use a hand mixer to incorporate the milk and butter mixture. Only mix for about 45 seconds to prevent potatoes from getting gummy.) Set aside.
- Evenly divide the beef stew into 4 (11-ounce) ramekins. Top with the mashed potatoes and bake until the stew is bubbling and potatoes are slightly browned on top, about 30 minutes.
- In a 6-quart slow cooker combine the celery, carrots, potatoes, onions, thyme and beef. In a large bowl, stir together all the remaining ingredients and pour over the beef and vegetables in the slow cooker. Cover and cook on high for 5 hours. Transfer to a serving bowl and serve with Beer Biscuits.
- Beer Biscuits:
- Preheat oven to 375 degrees F.
- In a large mixing bowl, mix all ingredients with a whisk until just combined. Using 2 spoons divide dough into 4 even mounds and put on a baking sheet. Bake for 8 to 10 minutes until golden brown.
- All-Purpose Baking Mix:
- In a large bowl combine the flour, baking powder and salt. Cut in the shortening with a pastry knife or fork until the mixture is well blended. Use in recipes that call for Bisquick or all-purpose mix.
CHUNKY SHEPHERDS PIE
This recipe is a sort of hybrid between beef stew and shepherds (or cottage) pie. It's great for cold winter nights!

Steps:
- 1. Boil peeled and chopped potatoes.
- 2. Melt 4 tablespoons of butter in a medium saucepan.
- 3. Saute onions in butter (10 minutes over medium heat). Add all other vegetables. Cover, lower heat.
- 4. Melt 1 tablespoon of butter in a large saucepan.
- 5. Brown pre-cut pieces of meat on each side.
- 6. Add vegetables to meat and saute.
- 7. Add salt, pepper and worcestershire sauce.
- 8. Add beef broth and cook uncovered on low for 10 minutes.
- 9. Mash potatoes with remaining butter and milk. You can add milk gradually to make potatoes as creamy as you'd like.
- 10. Place beef and vegetables in bottom of baking dish. Add potatoes on top. Create peaks with the mashed potatoes (they will brown nicely).
- 11. Cook at 400 degrees for 30-40 minutes until bubbly and browned.
