SWEET ONION POTATOES AU GRATIN



Sweet Onion Potatoes Au Gratin image

2 tablespoons butter
1 large or 2 medium sweet onions, such as Vidalia, thinly sliced
Salt and freshly ground black pepper
1/2 teaspoon ground thyme
1 bay leaf, fresh or dried
2 pounds baby Yukon gold potatoes or fingerling potatoes
1/2 to 2/3 cup heavy cream
1/2 cup grated Parmigiano-Reggiano
1/2 pound brick Gruyere or Swiss cheese, shredded

Steps:

  • Heat a small skillet with the butter over medium heat. Add the onions, season with salt ground thyme, bay leaf and cook until very soft and sweet and lightly caramelized, 20 minutes. Season with salt and pepper, to taste, and discard the bay leaf.
  • While the onions cook, put the potatoes in a medium pot and cover with water. Bring to a boil, then salt the water and cook to tender, 12 to 15 minutes. Drain and return the potatoes to the hot pot. Mash the potatoes with the cream and Parmesan and season with salt and pepper, to taste.
  • Preheat the broiler.
  • Arrange the mashed potatoes in individual gratin dishes or 1 shallow casserole. Top the potatoes with the onions and Gruyere cheese. Put them on a sheet pan and brown under a hot broiler until bubbly, about 2 minutes. Remove from the oven and serve hot.

8 tablespoons unsalted butter, wrapper reserved
5 large Spanish onions, sliced about 1/4 inch thick
Kosher salt and freshly ground black pepper
About 3/4 cup beef stock
2 tablespoons sherry
2 teaspoons Dijon mustard
3 pounds Yukon gold potatoes
Kosher salt and freshly ground black pepper
1 pound Gruyere, shredded
8 ounces mozzarella, shredded
1 1/4 cups heavy cream
1 1/4 cups beef stock
One 4 1/2-ounce bag premade croutons, lightly crushed
One 3 1/2-ounce bag French fried onions

Steps:

  • For the caramelized onions: In a large saucepan over medium-high heat, melt the butter. Once melted and bubbling, add a large handful of the onions and cook until translucent, 1 to 2 minutes. Repeat until all the onions have been added. Season with a pinch of salt and black pepper. Reduce the heat to low and cook, stirring occasionally, until the onions turn medium brown, about 30 minutes. If the onions start to get too dark, add 1 to 2 tablespoons of beef stock as necessary. Add the sherry to deglaze the pan. Add the mustard and stir to coat. Season with salt and pepper. Remove from the heat and set aside.
  • For the potato gratin: Preheat the oven to 400 degrees F.
  • Using a mandoline or a sharp knife, cut the potatoes into thin slices. Do your best to keep the potatoes in a stack--this will make it easier to layer them in the pan. Set the potatoes aside.
  • Use the reserved butter wrapper to lightly grease the bottom and sides of a large (12-inch) cast-iron skillet. Discard the wrapper.
  • Arrange a thin shingled layer of potatoes in concentric circles around the skillet. Season the potatoes with salt and pepper, then arrange an even layer of caramelized onions on top of the potatoes. Season with salt and pepper.
  • In a medium bowl, combine the Gruyere and mozzarella and reserve half for later use. Sprinkle on a layer of the remaining cheese mixture over the onions. Repeat the layers until all the ingredients (not including the reserved cheese) have been used. Press down firmly on the layers to flatten.
  • In a large bowl or measuring cup, combine the heavy cream and beef stock and pour over the gratin. Cover the skillet with foil and place on a sheet pan. Bake the potatoes, covered, until the top and edges have begun to brown and the potatoes are tender, 1 hour 15 to 1 hour 30 minutes. You can test by inserting a knife into the potatoes; if it goes in and comes out without resistance, then the potatoes are done.
  • Remove the skillet from the oven, remove the foil and turn the broiler on high. Combine the croutons and French fried onions. Cover the gratin with a layer of the crouton mixture followed by the remaining cheese. Broil until golden brown and bubbly, 5 to 8 minutes. Serve and enjoy!

SHERRY VINEGAR-GLAZED ONIONS



Sherry Vinegar-Glazed Onions image

Traditional creamed onions and buttery glazed onions are perfectly nice, but the sparky tang of vinegar makes this version of the classic much more appealing. The sweet-and-sour flavors are a great foil for the rich, starchy dishes on a Thanksgiving table. Any leftovers can be chopped up to make a lively addition to winter stews and chunky soups.

2 tablespoons neutral oil, like canola or grapeseed
1 pound small peeled onions, about 1 inch in diameter, red or white or a combination (frozen onions are fine)
1/2 cup sherry vinegar or apple cider vinegar
Salt and ground black pepper to taste
Honey or maple syrup to taste
Finely minced parsley, for serving (optional)

Steps:

  • In a wide skillet with a lid, heat oil over medium heat until bubbling. Add onions and sauté over medium-low heat for about 10 minutes, gently rolling the onions about so they will brown as evenly as possible.
  • Pour in vinegar and 1/4 cup water. Season with salt and a few grinds of pepper. Cover and simmer very gently until onions are perfectly tender but retain their shape. Start testing with a thin sharp knife after 15 minutes; depending on size, the onions may cook in 15 to 25 minutes. (Frozen onions will cook faster.) Taste one to make sure it is completely tender all the way through; do not undercook.
  • Using a slotted spoon, transfer onions to a serving bowl. (Onions may be prepared up to this point 2 days ahead. Reserve onions and cooking liquid separately. Reheat onions in reserved liquid, adding water as needed, then transfer them to a bowl.)
  • Raise heat and boil liquid to reduce it to a thick glaze. Taste and add salt, pepper and sweetener to taste. Stir in parsley and serve hot or warm.

3/4 pound onions, thinly sliced

Steps:

  • Combine Yukon Gold potatoes and sliced onions in heavy large saucepan. Add enough water to cover. Bring water to boil. Reduce heat and simmer until potatoes are almost tender, about 3 minutes. Drain potato-onion mixture well.
  • Arrange half of potato-onion mixture in 11x7-inch glass baking dish. Sprinkle with salt and pepper. Sprinkle mixture with 1/3 cup Gruy&ère cheese, then 2 tablespoons Parmesan cheese. Arrange remaining potato-onion mixture atop cheeses. Pour cream over. Sprinkle with salt and pepper, then remaining 2/3 cup Gruy&ère cheese and 6 tablespoons Parmesan cheese. (Can be prepared 8 hours ahead. Cover and refrigerate.) Preheat oven to 400°F. Bake gratin uncovered until cream thickens, about 25 minutes. Remove from oven. Preheat broiler. Broil gratin until top is golden, about 2 minutes.

About as good as it gets! This is the version of French Onion Soup that people seek when they go to restaurants. I have been making it for 30 years and it never fails to please. It makes an exquisite presentation, too!

4 tablespoons butter
1 teaspoon salt
2 large red onions, thinly sliced
2 large sweet onions, thinly sliced
1 (48 fluid ounce) can chicken broth
1 (14 ounce) can beef broth
½ cup red wine
1 tablespoon Worcestershire sauce
2 sprigs fresh parsley
1 sprig fresh thyme leaves
1 bay leaf
1 tablespoon balsamic vinegar
salt and freshly ground black pepper to taste
4 thick slices French or Italian bread
8 slices Gruyere or Swiss cheese slices, room temperature
½ cup shredded Asiago or mozzarella cheese, room temperature
4 pinches paprika

Steps:

  • Melt butter in a large pot over medium-high heat. Stir in salt, red onions and sweet onions. Cook 35 minutes, stirring frequently, until onions are caramelized and almost syrupy.
  • Mix chicken broth, beef broth, red wine and Worcestershire sauce into pot. Bundle the parsley, thyme, and bay leaf with twine and place in pot. Simmer over medium heat for 20 minutes, stirring occasionally. Remove and discard the herbs. Reduce the heat to low, mix in vinegar and season with salt and pepper. Cover and keep over low heat to stay hot while you prepare the bread.
  • Preheat oven broiler. Arrange bread slices on a baking sheet and broil 3 minutes, turning once, until well toasted on both sides. Remove from heat; do not turn off broiler.
  • Arrange 4 large oven safe bowls or crocks on a rimmed baking sheet. Fill each bowl 2/3 full with hot soup. Top each bowl with 1 slice toasted bread, 2 slices Gruyere cheese and 1/4 of the Asiago or mozzarella cheese. Sprinkle a little bit of paprika over the top of each one.
  • Broil 5 minutes, or until bubbly and golden brown. As it softens, the cheese will cascade over the sides of the crock and form a beautifully melted crusty seal. Serve immediately!

5 medium potatoes, peeled, sliced thin
4 minced garlic cloves
1 tsp salt
1/2 tsp pepper
Dash nutmeg
1 tsp dried thyme
3 Tbsp chopped fresh parsley
1/2 cup whipping cream
Dash paprika

Steps:

  • Preheat oven to 350°F. Spray a shallow baking dish with cooking spray. In large skillet, melt butter, saute onions until soft.
  • In baking dish, arrange in layers the sliced potatoes and onions. Sprinkle with garlic and seasonings in between layers.
  • Bake, uncovered for 40 minutes. Add whipping cream over all in baking dish. Sprinkle with paprika. Increase oven temp to 400°F. Bake for another 15 min or until potatoes are soft and gratin is slightly browned on top.

4 large potatoes, boiled, peeled and sliced
6 large onions, peeled and sliced
3/4 lb cheddar cheese, grated
3 tablespoons butter
1 cup milk
paprika, to taste
parsley, chopped
salt and pepper, to taste

Steps:

  • Saute onions in the butter, on medium heat. until limp, but not brown.
  • In a medium baking dish, alternate layers of potatoes, onions and cheese, making sure that the cheese is at the top and final layer.
  • Add the milk, salt and pepper. Cover with chopped parsley and sprinkle with paprika. Bake uncovered at 325 F for 30 minutes, or until heated through.
  • Serve warm.

1 small onion, minced
1 clove garlic, minced
1 lb russet potato, peeled and thinly sliced (no more than 1/8" thick)
1/2 cup vegetable broth
1/4 cup white wine
1/4 cup sherry wine
3/4 teaspoon dried thyme
salt and pepper
grated parmesan cheese or manchego cheese, to top (optional)

Steps:

  • Preheat oven to 375 degrees F.
  • In a skillet, saute onion and garlic in butter until soft, about 10 to 15 minutes.
  • Add potatoes, broth, wine, sherry, thyme and salt and pepper to taste.
  • Cook, covered, for 10 minutes.
  • Transfer the mixture into an 8x8 baking dish, or round pie dish.
  • Bake until potatoes are golden, soft and most of the liquid has been absorbed, about 50 minutes.
  • If you wish, sprinkle potatoes with a little grated Parmesan or Manchego cheese and return to oven until cheese is melted and lightly browned.

1 can (12 oz.) fat-free evaporated milk
3/4 cup light cream
1 tsp smoked paprika
1-1/2 cups Kraft Shredded Reduced-Fat Swiss Cheese
1 tsp dried Italian herbs

Steps:

  • In large pot, melt 2 Tbsp. butter over medium heat. Add onions and 1/4 tsp. salt, cook, stirring occasionally, until onions are a deep golden brown. Remove, reserve.
  • In same pot, melt remaining butter over med heat. Add potatoes, cook, stirring until coated in butter. Add milk, cream, paprika and remaining salt. Bring to a simmer, cook, stirring occasionally, until potatoes have softened and liquid has thickened, 10-12 min.
  • Preheat oven to 350°F. Coat a shallow 2-quart baking dish with cooking spray. Transfer half of potatoes and liquid to baking dish. Top with onions and 3/4 cup cheese. Arrange remaining potatoes over cheese. Pour in remaining liquid. Cover, bake 20 min. Uncover, bake until potatoes are tender and golden, about 30 minutes. Sprinkle with remaining cheese during the last 2 min. Let stand for 10 min. Garnish with Italian herbs.
