These are served in every restaurant in the Middle East. You can easily make them at home and make them taste just as good, if not better. Don't substitute sour cream for the yogurt, as the yogurt is a meat tenderizer.

¼ cup lemon juice
¼ cup vegetable oil
¾ cup plain yogurt
4 cloves garlic, minced
2 teaspoons tomato paste
1 ½ teaspoons salt
1 teaspoon dried oregano

¼ teaspoon ground allspice
¼ teaspoon ground cinnamon
⅛ teaspoon ground cardamom
2 pounds skinless, boneless chicken breast halves - cut into 2 inch pieces
2 onions, cut into large chunks
1 large green bell pepper, cut into large chunks
1 cup chopped fresh flat-leaf parsley

Steps:

  • Whisk together the lemon juice, vegetable oil, plain yogurt, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom in a large bowl; add the chicken and toss to coat. Transfer the chicken mixture into a large plastic bag; refrigerate at least 4 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Sprinkle the parsley over the skewers.

Shish Taouk is a traditional Middle Eastern chicken shish kebab. The yogurt marinade includes garlic, paprika, fresh herbs, ginger and lemon juice. The common theme with Shish taouk is that it is made of chicken and the marinade includes lemon and yogurt. Sometimes tomato paste is added, mostly for color enhancement.

1.5 cups of plain yogurt
1 Tbs paprika
8-10 cloves of garlic, minced fine
2 sprigs of fresh oregano
1/2 tsp minced fresh ginger
juice of 2 lemons
2 Tbs olive oil
1/2 tsp salt
2 lb of boneless, skinless chicken thighs, cut into 1 inch chunks

Steps:

  • Place first 8 ingredients in a large bowl, stir.
  • Add chicken, cover and place in fridge to marinate for 3 hours or overnight.
  • Skewer chicken on large skewers. Line a rimmed baking sheet with aluminum foil and place racks on top. Place skewed chicken on racks.
  • Broil in oven about 4 inches under heating element, about 8 minutes, turn. Continue broiling for about 4 more minutes. Chicken should have some charring and cooked through. Alternatively you may grill these on a gas or charcoal grill.

½ cup plain whole milk yogurt
¼ cup lemon juice
¼ cup olive oil
6 garlic cloves (crushed)
1 tablespoon tomato paste
1 teaspoon paprika
¾ teaspoon cinnamon
½ teaspoon oregano
½ teaspoon ground ginger
1 teaspoon salt
¼ teaspoon black pepper

Steps:

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.
  • Serve with pita bread, lettuce and garlic sauce, if desired.

2 lbs boneless chicken breast (cut into cubes/Kabab chunks)
1 cup lemon juice
slice lemon (optional)
15 cloves garlic (crushed)
6 tablespoons plain yogurt
6 tablespoons olive oil
2 tablespoons red vinegar (or apple cider vinegar)
1 teaspoon white pepper (ground)
1/3 teaspoon ground ginger
1/2 teaspoon ground thyme (or ground oregano)
1/3 teaspoon paprika
1 teaspoon salt (or to taste)
1 teaspoon tomato paste
4 teaspoons Garlic Paste (Lebanese style)
4 loafs pita bread
4 tomatoes (grilled)
2 cups French fries
8 salted pickles (Lebanese style cucumber pickles)

Steps:

  • Cut the chicken breasts into cubes of about 2 inches each. The cubes shouldn't be too small otherwise they'll dry quickly on the grill.
  • Place chicken cubes in a bowl, add all marinade ingredients and rub with hands until all ingredients assimilated well.
  • Let marinate in a covered container in the fridge for at least 4 hours, preferably overnight.
  • Skewer the chicken right before grilling.
  • Grill on a BBQ on medium heat for 12-15 minutes maximum turning frequently. Overcooking can dry the chicken.
  • Alternatively, you can lay the skewers on the edges of a deep Pyrex dish and bake in the oven at 400F for 15 mins.
  • Once cooked, remove the chicken cubes and place in a pot while covering the lid tightly. Let rest for 5 minutes to help the chicken self-steam and turn juicier and softer.
  • Spread 1 teaspoon of Lebanese garlic paste along the center/diameter of a pita bread.
  • Add 4-5 chicken kabobs.
  • Garnish with salted cucumber pickles, French fries, grilled tomatoes or peppers (optional)., Roll and enjoy. You could also toast the wrap roll through a panini grill for 2-3 minutes.

1 Tbsp ketchup
1 Tbsp tomato paste
1 tsp salt
1/4 tsp ground white pepper
1/8 tsp ground ginger
5 clove garlic, crushed
3 small onions, peeled and cut into chunks
3/4 c lemon juice
1/2 c olive oil

Steps:

  • 1. Mix all ingredients and let marinate in refrigerator for 24 hours.
  • 2. Thread onto skewers, alternating chicken and onion pieces. Grill over hot coals, turning several times, until tender. Takes about 8 minutes total. Serve hot.

2 lb chicken breast, cut into 1-1 ½ inch pieces
1 lemon, juiced (roughly ¼ c)
6 garlic cloves, minced
¼ c plain yogurt, or Greek yogurt
2 Tb olive oil
1 tsp ground thyme
1 tsp paprika
1 tsp salt
2 tsp tomato paste
¼ tsp ground black pepper
6-7 wooden skewers, soaked in water for 10 minutes

Steps:

  • In a small bowl, mix all the marinade ingredients together.
  • Place the cubed chicken into a flat, sealable container and pour the marinade over the chicken. Mix the chicken with the marinade to be sure all the pieces are well-coated.
  • Cover the container and let marinate in the refrigerator for at least 4 hours, up to overnight.
  • Preheat your grill to a medium heat, roughly 350F. (You should be able to hold your hand about 3 inches from the cooking grate for 6-7 seconds.)
  • Thread the chicken pieces onto the soaked skewers, pressing the pieces up against each other.
  • Grill the chicken skewers for 8-10 minutes a side, until the chicken is firm and golden.
  • Serve the shish tawook with pita bread (get our pita bread recipe here) and sliced tomatoes or with rice and grilled vegetables.

This is my sister-in-law's recipe for Chicken Shish-tawuk ( I would love to know the correct spelling for this.

4 boneless skinless chicken breasts
1/4 cup flour
3 lemons
1 tablespoon tomato paste
2 tablespoons plain yogurt
1 tablespoon yellow mustard
2 minced garlic cloves
1 pinch salt
1 pinch black pepper
1 pinch cinnamon
1/2 teaspoon allspice (I use 7 Spice)
1/2 teaspoon Season-All salt
bamboo skewer, soaked in water

Steps:

  • Wash chicken breasts with cool water, then cut them into equal sized cubes.
  • In a mixing bowl, squeeze the juice of 1/2 lemon over chicken cubes and coat them with the flour and a pinch of salt. Cut two lemons and put the pieces in the bowl with the chicken.
  • Cover and refrigerate for 15 minutes.
  • During that 15 minutes, in a mixing bowl, mix tomato paste, yogurt, mustard, garlic cloves, salt, black pepper, cinnamon, 7 spice/allspice, season-all and the juice of 1/2 lemon together.
  • Rinse flour and lemon mixture off of the chicken cubes and discard the lemons.
  • Coat the chicken with the spice mixture, cover bowl with saran wrap and refrigerate for at least 3 hours.
  • I like to eat this meal with fattoush salad and baba ghannouj, and use the marinating time to prepare those things.
  • Preheat the oven to 350 degrees.
  • Fry the chicken cubes until they are almost completely cooked. Allow them to cool to the touch.
  • When they have cooled, put about 6 cubes on each skewer.
  • Mix the remaining sauce with 3T of water in the bottom of a Pyrex baking dish and balance the chicken skewers over the top.
  • Bake the chicken for about 15 minutes until the sauce thickens and the chicken is thoroughly cooked.
  • Serve with pita bread and/or rice.

1 lb good quality chicken breast, cut into 1/2 inch cubes (They're easier to cube if you cut them while still a little frozen)
1 garlic clove, peeled and crushed, is what the recipe i have calls for, but I used 1 tablespoon of minced garlic fr
3/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon black pepper
1/4 teaspoon allspice
2 tablespoons best quality olive oil
3 tablespoons lemon juice, but I used Lime juice

Steps:

  • In non-reactive container (glass, good ceramic or stainless steel) combine the cubed chicken, garlic, salt, cinnamon, black pepper, allspice, oil and lemon juice, mix well, cover (you can use saran wrap).
  • *Note* You should marinate the chicken for several hours in the refrigerator to get the best taste out of the chicken.
  • Thirty minutes before grilling remove from refrigerator, allowing it to reach room temperature.
  • Thread onto skewers *note*.
  • If using wooden skewers, be sure to soak them in cold water for at least 20 minutes prior to using.
  • Grill over medium charcoal fire, basting and turning several times, until delicately browned.
  • The recipe also says you can also grill in the oven, but if you've got a charcoal grill, it works much nicer.
  • But if you dont have a charcoal grill; pre-heat the grill. Place chicken on skewers over an oven sheet and cook until browned (6-8 minutes), turning skewers and basting occasionally with the marinade to keep moist.
  • I serve this with baked pita,hummus, Kibbee, and a nice green salad with feta cheese dressing.
