BOK CHOY STIR-FRY

Bok Choy Stir-Fry image

This is a wonderful side dish for an Asian style entree. Bok choy has a wonderful, crisp texture that is reminiscent of celery. You can easily add shrimp or chicken to make a main dish, but I recommend doubling the sauce if you do so. Simple and yummy:)

Categories     World Cuisine Recipes     Asian

Time 25m

Yield 4

Number Of Ingredients 11

2 heads baby bok choy
2 tablespoons vegetable oil
1 tablespoon grated fresh ginger root
½ pound uncooked medium shrimp, peeled and deveined

1 cup sliced zucchini
2 tablespoons soy sauce
2 tablespoons sweet vermouth
2 tablespoons brown sugar

SPICY CAULIFLOWER, BOK CHOY, AND SHRIMP STIR-FRY WITH COCONUT

Spicy Cauliflower, Bok Choy, and Shrimp Stir-Fry with Coconut image

A stir-fry is great for a quick weeknight dinner -- to make the meal even speedier, cut the cauliflower and bok choy ahead of time, devein and peel the shrimp, and have it all ready to go in the refrigerator. You could serve this dish over brown rice, but the starchlike texture of the cauliflower makes it more than able to stand alone.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Shrimp Recipes

Time 25m

Number Of Ingredients 10

1 tablespoon safflower oil
1/4 large head cauliflower, cut into 1/2-inch-thick slices
1/2 large head bok choy, trimmed and sliced into 1-inch strips (about 8 ounces)
1/2 pound large shrimp, peeled and deveined
3 large garlic cloves, finely chopped
1/2 teaspoon sambal oelek or other Asian chili sauce, or to taste
1 tablespoon agave syrup
2 teaspoons fish sauce
1/2 cup fresh basil leaves, plus more for garnish
3 tablespoons unsweetened flaked coconut, toasted

Steps:

  • Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add cauliflower, and reduce heat to medium. Cook until golden brown, about 4 minutes. Add bok choy, and cover. Cook, stirring occasionally, until vegetables are tender, about 8 minutes. Transfer vegetables to a plate, and loosely tent with foil.
  • Heat 1 teaspoon oil in same skillet over medium-high heat. Add shrimp, and cook until they begin to turn opaque, about 2 minutes. Flip shrimp and, using a wooden spoon, push them to one side, and add remaining 1/2 teaspoon oil to exposed area. Add garlic, and cook, stirring, until very fragrant but not brown, about 1 minute.
  • Toss garlic with shrimp. Stir in sambal oelek, agave syrup, and fish sauce. Add vegetables, and cook until heated through, about 30 seconds. Add basil, and serve immediately. Top with coconut flakes and more basil.

  • Sauce ... Add the soy and oyster sauce, broth, and corn starch to a measuring cup; and, mix to combine; then, set to the side.
  • Shrimp ... If using frozen shrimp; make sure to thaw them in the refrigerator, in a colander, over a bowl covered. This way, they are not thawing in water. Once the shrimp are thawed, remove from the refrigerator; and, set on the counter to take the chill off. This goes for fresh shrimp too. You don't want to cook with cold seafood. Let the shrimp rest a good 15-20 minutes on the counter. Pat dry; then, season with salt and pepper.
  • Add half of both oils to a wok or deep saute pan (non-stick preferred); and, bring to high heat. Add the shrimp, and saute until they have a nice sear on both sides. Once the shrimp are just turning pink and starting to curl; transfer to a plate - this only takes a couple of minutes. You will finish them at the end of the stir fry.
  • Vegetables ... Add the remaining oil and turn down the heat to medium high. Then, add the onion, bok choy, and red pepper flakes; and, cook 3-4 minutes. Next, add the zucchini, 1/2 of the scallions, ginger, and garlic; and saute another couple of minutes, stirring often, until all the vegetables are tender (another 2-3 minutes). I like the vegetables crisp tender in this dish.

  • Start by making the cauliflower rice. Place the florets in the bowl of a food processor and pulse a few times until they become small granules. (Don’t overdo it, people. You don’t want cauliflower mush.) Heat 1 tablespoon of the oil in a large skillet over medium heat. When hot, add the cauliflower rice and cook for 3-4 minutes just until tender. Season with salt and pepper to taste. Cover and set aside.
  • In a small bowl, whisk the chicken or vegetable stock, soy sauce, cornstarch, mirin, and honey (if using). Set aside.
  • In your largest pan, heat the remaining 2 tablespoons of oil over medium-high heat. When hot, add the bok choy stalks and shiitakes, spreading into a single layer. (It will seem like a LOT of bok choy and mushrooms, but they’ll cook down.) Cook without moving until the vegetables are starting to brown on the bottom, 2 to 3 minutes. Stir and cook for 2-3 minutes more until softened slightly.
  • Add the garlic, ginger, crushed red pepper, and the bok choy leaves and stir to combine. Cook until fragrant, about 1 minute.
