SHRIMP AND CILANTRO RAMEN WITH LEMON
Steps:
- Bring a small saucepan of water to a rolling boil, add ramen noodles, cover and remove from heat.
- On a separate burner, heat oil in a small sauté pan over medium high heat. When oil begins to shimmer, add frozen shrimp, turning once at about 3 minutes, then cook until just done. (About another 2 minutes.) Remove shrimp from pan, reserving liquid. (There will be quite a bit, since the shrimp were still frozen.)
- Add lemon juice, salt and pepper to sauté pan, reduce heat to a simmer and reduce by 1/2.
- Drain noodles and plate, add shrimp back to sauce and toss until heated well, pour shrimp and sauce over noodles, sprinkle with cilantro.
- Serve warm and enjoy.

- Thaw shrimp, if frozen, then peel and devein shrimp. In a medium bowl combine lemon juice, chili powder, cumin and pepper. Add shrimp and toss to coat. Let shrimp stand for 20 minutes, stirring occassionaly.
- Meanwhile, bring water to boil in a large saucepan. Break noodles into bite-sized pieces. Stir 1 seasoning packet and the broken noodles in the water. Discard remaining seasoning packet. Return to boiling and cook for 1 minute.
- Add the shrimp and cook 1 to 2 minutes longer, or until shrimp turns pink. Stir in salsa, beans and corn and heat through.
- To serve, top each serving with cilantro if desired.
