HOT-AND-SOUR SHRIMP NOODLE SOUP



Hot-and-Sour Shrimp Noodle Soup image

Kosher salt
1 tablespoon unrefined coconut oil
3 tablespoons red curry paste
4 teaspoons fish sauce
2 teaspoons packed light brown sugar
3 cups low-sodium chicken broth
1 cup cherry tomatoes
2 heads baby bok choy
1 cup fresh cilantro
12 ounces dried flat rice noodles
2 tablespoons fresh lime juice
3/4 pound peeled and deveined medium shrimp

Steps:

  • Bring a large pot of salted water to a boil. Heat the coconut oil in a large saucepan over medium heat. Stir in the curry paste, fish sauce and brown sugar and cook, stirring, until the mixture darkens and starts sticking to the pan, about 1 minute. Add the chicken broth and 3 cups water. Bring to a boil, then reduce the heat and simmer 5 minutes.
  • Meanwhile, halve the cherry tomatoes. Cut the bok choy into 1-inch pieces and chop half the cilantro.
  • Add the rice noodles to the pot of boiling water and cook as the label directs. Drain the noodles and divide among bowls.
  • Add the lime juice to the broth mixture; season with salt. Stir in the tomatoes and cook until softened, about 1 minute. Add the shrimp, bok choy and chopped cilantro. Cook until the shrimp is opaque, 1 1/2 to 2 minutes. Ladle the soup over the noodles and top with the remaining cilantro.

2 cups frozen peas
2 cups frozen carrot slices
2 tablespoons toasted sesame oil
2 tablespoons soy sauce
2 tablespoons Szechuan stir-fry sauce (recommended: San-J)
10 ounces fresh yaki-soba or ramen noodles
1 pound cooked medium shrimp

Steps:

  • To a large pot over medium-high heat, add all ingredients except noodles and shrimp. Bring to boil; reduce to simmer for 6 minutes. Add noodles and return to simmer for 2 minutes. Add shrimp and return to simmer until shrimp are heated through, about 1 to 2 minutes.
  • Using tongs, divide noodles into serving bowls, add shrimp and ladle in stock.

4 star anise pods
3 dried chiles de árbol

2 (6-inch) pieces lemongrass, tough outer layer removed, lightly smashed

Steps:

  • Make the broth:
  • Toast cloves, cardamom, star anise, chiles, cinnamon, and peppercorns in a large pot over medium heat, tossing often, until fragrant, about 2 minutes. Add cilantro, shallots, garlic, lemongrass, ginger, broth, and fish sauce and bring to a boil. Reduce heat; simmer until flavors meld, 1-1 1/2 hours. Strain into a large bowl, pressing on solids. Return broth to pot; season with salt and pepper.
  • Make the paste:

1 1/2 lbs skinless chicken pieces
1 large onion, finely chopped
4 cups water
2 lbs cooked large shrimp, shelled
1/2 lb mushroom, sliced
1 cup cellophane noodle (thin rice noodles ok substitute)
1 teaspoon soy sauce
2 tablespoons oil
4 green onions, finely sliced
3 cloves garlic, crushed
1/2 teaspoon ground coriander
salt (to taste)

Steps:

  • Place chicken, onion, water and salt in a saucepan and bring to a boil; reduce heat and simmer for approx 20 minutes, or until meat is tender.
  • Remove chicken from pot and allow to cool, then remove the meat from the bones.
  • Cut the meat into long thin slivers, and discard bones.
  • Place chicken back in the pot along with the shrimp and mushrooms; bring to a boil and simmer gently, for about 5 minutes.
  • Add the noodles and the soy sauce and cook 5 minutes more.
  • Meanwhile, heat the oil in a small skillet and cook green onions, garlic, and ground coriander for approx 3-4 minutes; add to soup just prior to serving, mixing well.

1/4 teaspoon lemon-pepper seasoning
2 cans (14-1/2 ounces each) chicken broth

  • In a large saucepan, saute onions and mushrooms in oil. Add the garlic; cook 1 minute longer. Stir in the shrimp, rosemary and lemon-pepper. 2 teaspoons gingerroot, minced
2 teaspoons garlic, minced
6 cups chicken stock (or beef)
2 tablespoons soy sauce
6 ounces udon noodles, fresh
2 cups bok choy, sliced
1/2 cup snow peas, sliced
4 ounces shrimp, peeled and devined, chopped
1 cup bean sprouts
2 large green onions, chopped
2 teaspoons sesame oil
3 tablespoons parsley, chopped

Steps:

  • In a large wok or large saucepan sprayed with cooking spray, cook chicken over medium high heat for 4 minutes or until meat is barely cooked.
  • Add gingerroot and garlic and cook for 1 more minute. Set aside.
  • In a large saucepan, bring stock and soy sauce to a boil. Add udon noodles; redturn to a boil. Reduce heat to medium high; cook for 4 minutes or until noodles are tender.
  • Add bok choy, snow peas and shrimp; cook for 2 minutes or until shrimp are pink and snow peas are tender crisp.
