COCONUT CURRY ONO AND SHRIMP

3 cloves garlic
1 carrot, shredded
1 celery stalk, minced
1 ghost pepper or other hot pepper
1/2 red onion, julienned
1/2 yellow onion, julienned
1/4 red cabbage, julienned
1/2 bunch fresh cilantro, minced
One 12-ounce can coconut milk
1 cup chicken broth
5 tablespoons curry powder
1 tablespoon Thai seasoning
3 teaspoons vegetable oil
12 ounces ono (wahoo), cut into strips
12 jumbo shrimp (21 to 25 per pound)
1 tablespoon minced garlic
1 carrot, shredded
1 celery stalk, minced
1/2 red onion, julienned
1/2 yellow onion, julienned
1/4 red cabbage julienned
4 cups cooked rice
1 tomato, diced
3 green onions, minced

Steps:

  • For the curry sauce: Cook the garlic, carrot, celery, pepper, onions, cabbage and cilantro in a large saucepan, covered, over medium-low heat, stirring occasionally, until soft. Add the coconut milk, chicken broth, curry powder and Thai seasoning and bring to a boil. Turn down to a simmer and cook, 5 minutes. Blend with an immersion blender until smooth.
  • For the ono and shrimp: Heat oil in a saute pan. Add ono, shrimp and garlic and cook for about 1 minute. Add veggies and toss. Add prepared curry to saute pan and bring to boil. Serve over rice. Top with tomato and green onion.

The shrimp are heavily coated with shredded coconut before being deep-fried and served with a pineapple cocktail sauce.   • Roll the shrimp in flour seasoned with salt, then dip in the beaten egg.
  • Roll the shrimp in the coconut, covering thoroughly.
  • Deep-fry the shrimp in oil heated to about 350 degrees until browned and cooked through, about 3 to 4 minutes.
  • Drain on paper towels.
  • Mix the cocktail sauce with the crushed pineapple.
  • Serve the shrimp with the sauce on the side.

This is my most requested recipe to bring to get-togethers and there's always someone who hasn't had them who asks for the recipe. You can make it days ahead of time and have it out of the oven in just a few minutes when you need it. Add more chipotle peppers if you like it spicier. This recipe makes a lot, but it actually freezes well. I usually freeze half of it and have it another time. If you're making it for a party, though, bring it all because it will be gone!

1 (14.5 ounce) package tortilla chips, or to taste
2 pounds shredded Monterey Jack cheese
1 ½ pounds large peeled and deveined cooked shrimp, tails removed and shrimp quartered
1 cup mayonnaise
4 chipotle peppers in adobo sauce, chopped
½ cup chopped fresh cilantro
¼ cup dried minced onion (such as McCormick® Coarse Grind Blend White and Green Onions)
1 ½ tablespoons ground cumin
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Spread tortilla chips onto the prepared baking sheet.
  • Mix Monterey Jack cheese, shrimp, mayonnaise, chipotle peppers in adobo sauce, cilantro, minced onion, cumin, and black pepper together in a bowl. Spoon mixture onto the tortilla chips.
  • Bake in the preheated oven for 3 minutes. Turn on the broiler and broil nachos until lightly browned, 3 to 4 minutes. Allow nachos to sit at room temperature for about 2 minutes before serving.
